BANANA-CINNAMON MUFFINS

Steps:
- Heat oven to 375°F. Grease bottoms only of 12 regular-size muffin cups with shortening or spray, or line with paper baking cups.
- In medium bowl, beat 2/3 cup sugar, the oil and eggs with wire whisk. Stir in bananas and vanilla. Stir in remaining muffin ingredients just until moistened. Divide batter evenly among muffin cups.
- Bake 17 to 21 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan to cooling rack.
- In small bowl, mix 1/4 cup sugar and 1/2 teaspoon cinnamon. Dip muffin tops into melted butter, then into cinnamon-sugar. Serve warm.

- Combine I Can't Believe It's Not Butter!® Spread, brown sugar and cinnamon in small bowl. Arrange banana on 2 bread slices; top with remaining bread. Evenly spread outside of sandwiches with Spread mixture.
- Cook sandwiches in 12-inch nonstick skillet over medium heat, turning once, 5 minutes or until golden brown.
- Also terrific with 1/4 cup sliced strawberries layered with bananas!
- For extra special twist, saute bananas in I Can't Believe It's Not Butter!® Spread first, then proceed as above!

FRIED PEANUT BUTTER AND BANANA SANDWICH
This is definitely comfort food! My kids and I love this sandwich. I love to eat it right out of the pan all hot and yummy! I love the texture of the crunchy peanut butter. The cinnamon sugar on the top makes all the difference! Enjoy!

- 1. In a small bowl mix together peanut butter, honey and cinnamon. Slice bananas into 1/4 thick slices. Spread the peanut butter mixture on four slices of bread and cover with banana slices.
- 2. In frying pan melt 2 tablespoons of butter - make sure butter does not burn. I cook mine in 2 batches so I divide the butter. The slice of bread that doesn't have the peanut butter mixture on it, I spread with margarine or spreadable butter and put the peanut butter and banana slice of bread, bread side down in the melted butter in the pan. Place the buttered slice of bread on top, butter side out.
- 3. Grill sandwiches in frying pan until each side is golden brown.
- 4. For topping, combine sugar cinnamon in shallow plate. Coat grilled sandwiches with mixture. Cut diagonally and serve hot.
CINNAMON BANANA BREAKFAST CAKES
I've noticed that several chefs have been asking for recipes for a breakfast that travels. This is a great glorified muffin. It is made like banana bread, topped with sliced bananas, brushed with butter, and then covered with a cinnamon and sugar mixture. Just grab one on your way out the door and enjoy or take a whole batch to work for everybody. You'll probably have to pass out the recipe for them too.

- Preheat the oven to 350°F
- Cream the butter and sugar together until light and fluffy.
- Add the eggs and continue beating.
- Add the bananas, vanilla, and buttermilk.
- In another bowl, mix the flour, baking powder, baking soda, and cinnamon together.
- Fold flour mixture into the butter-banana mixture.
- Spoon the batter into the muffin papers.
- Slice the bananas and arrange them on top of the dough. Use as many slices as desired. (Remember, the dough will expand in the oven while the banana slices will tend to become smaller).
- Brush the tops with the melted butter and then sprinkle them with the cinnamon-sugar mixture.
- Bake 20 to 25 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Cool on wire racks.
