SUPER FAST LOW FAT PIZZA CRUST
This is a super fast pizza crust I fall back on when there is absolutely no time. It makes a thick doughy crust. I top it with a jar of spaghetti sauce, shredded mozzarella, and veggies for a quick and reasonably healthy meal the kids will eat! Modified from "500 Fat Free Recipes"

Steps:
- Preheat the oven to 425.
- Mix all ingredients.
- Spray a 9x13 inch baking pan (casserole size) with cooking spray or grease in your usual manner.
- Top with your favorite pizza sauce, cheese, and toppings.
- Bake for 25 minutes or until the crust is crispy and golden.

LOW-FAT FRUIT PIZZA
This is a recipe for fruit pizza that I have adapted into a low-fat version. By using low-fat ingredients and fruits that won't brown so you don't have to add a sugary glaze you reduce a lot of fat/calories without sacrificing all the wonderful flavors! (Do not recommend bananas, apples or pears as they will brown feel free to add more than what's listed below.) I tend to double the recipe and make it in a cookie sheet (as shown in the photo). Enjoy!

- Preheat over to 350°F
- Mix powdered sugar, flour and margarine in a large bowl and form into a ball. If mixture is sticky add more flour. Refrigerate uncovered for 30 minutes. (This is a good time to cut/wash your fruit.).
- Pat into 9x9 or 9" round shallow dish making sure that dough is reaching the edges of the pan. Bake for 10-15 minutes and let cool completely.
- Mix cream cheese, vanilla and sugar and beat till creamy. Spread over crust.
- Arrange fruit and refrigerate before serving. Note: if you're using fruits that will brown you'll want to brush the fruit w/orange marmalade. Should be eaten in 1-2 days.

- Sprinkle cornmeal onto a lightly greased 12-inch pizza pan; press pizza crust into pan.
- Bake at 450 degrees for 10-12 minutes or until lightly browned.
- Stir together beans and next 4 ingredients; mash with a fork or potato masher; stir in chiles; spread mixture over crust Combine salsa and pizza sauce; spread over bean mixture.
- Sprinkle with onion, bell pepper, cheese, and if desired, olives.
- Bake at 450 degrees for 12 to 15 minutes or until cheese melts.
- Sprinkle with tomato if desired.

- Start by gathering your supplies. Gather the dough—which is made with Italian-style Type 1 flour and has been allowed to rise—canned San Marzano tomatoes, sea salt, mozzarella cheese, high-quality extra-virgin olive oil, and the toppings.
- Prepare your workspace. Toss some flour on your work surface so the dough won't stick. Your dough has been rising for 24 to 36 hours, right? Great! Now plop the 8-ounce ball of dough down and get to work.
- Start forming your base. Press down with your fingertips to flatten it, leaving a thicker rim or cornicione (core-nee-CHO-neh), Italian for "cornice."
- Shoot for symmetry. Form a circle 12 inches in diameter. Stretch from the rim to avoid making the center too thin and tearing a hole in the dough.
- Spread the sauce. Spoon a ladle of tomato sauce (about 3 tablespoons) into the center of your dough. Using the rounded back of the spoon, carefully circle your pie to spread the sauce evenly out to the cornicione edge.
- Chunk the cheese. Don't slice the cheese. Instead, pull one-inch chunks off a fresh roll of local mozzarella cheese and arrange them evenly on top of the tomato sauce.
- Add a touch of EVOO. Drizzle a little extra-virgin olive oil over your creation. Not too much, though, or pools of oil will make your pie a bit soggy.
- Garnish with green. Finally, arrange fresh basil leaves over your Margherita pie, which should resemble the colors of the Italian flag. Fantastico!
- Make it hot. Preheat an oven to 500°F. Place the pizza on a parchment-lined baking sheet or a pizza stone and bake for 10 to 11 minutes until the crust is golden brown and looks like this.
- Pile on more toppings. You can turn your Margherita into a more elaborate and nutritious pizza using colorful toppings, starting with a large handful of my favorite, arugula leaves.
