Quick and healthy Korean Beef Bowl - ready in 20 minutes and made with simple ingredients! Serve with rice and veggies for easy dinners or meal prep!

1 pound lean ground beef (I used 93% lean)
3 tablespoons low sodium soy sauce (plus additional to taste, divided)
1 1/4 cups minced scallions (both green and white parts (from about 1 small bundle), divided)
1 tablespoon minced garlic (about 3 cloves)
2 tablespoons rice vinegar
2 tablespoons honey
2 tablespoons minced or finely grated fresh ginger
¼ teaspoon red pepper flakes (plus additional to taste)
1 tablespoon sesame oil (plus additional to tase)
Cooked brown rice (quinoa, or cauliflower rice)
1 1/2 cups shredded carrots (see recipe notes to pickle them for an upgrade)
Thinly sliced seedless cucumbers (Persian-style or English/hot house)
Toasted sesame seeds

Steps:

  • Pickle the carrots and/or cucumbers if desired (see recipe notes-I highly recommend). In a large skillet, brown the beef over medium-high heat, breaking it into small pieces, until it is browned and cooked through, about 5 or so minutes. When the beef is about halfway finished cooking, add 1 tablespoon of the soy sauce and 2/3 of the scallions. Once the beef is completely browned, stir in the garlic and cook 30 seconds.
  • While the beef cooks, in a small bowl, stir together the rice vinegar, honey, ginger, red pepper flakes, and remaining soy sauce. Pour over the browned beef. Stir and cook for 2 minutes. Remove from the heat, then stir in the sesame oil. Sprinkle the remaining green onion over the top. Taste and add extra soy sauce or red pepper flakes as desired (I added a bit more of each).
  • Serve the beef hot, over rice, topped generously with the carrots, cucumber, and sesame seeds.

A mildly spicy stir-fry. Serve over hot rice. As suggested by several reviewers, the sauce can be doubled. Just double the marinade ingredients and the water and cornstarch.

1/2 lb boneless beef sirloin or 1/2 lb top round beef
1/4 cup green onion, thinly sliced
1/4 cup soy sauce
2 garlic cloves, minced
2 tablespoons sesame oil
1 tablespoon sesame seeds, crushed
1/2 teaspoon dried red pepper flakes
1 tablespoon sugar
1/2 teaspoon pepper (to taste)
1/3 cup cold water
1 tablespoon cornstarch
2 tablespoons cooking oil
1 cup carrot, peeled and julienned
1 cup broccoli floret, sliced
1 cup cauliflower floret, sliced

Steps:

  • Slice beef across the grain into bite-size strips. (If beef is partially frozen it is easier to slice).
  • Combine green onions, soy sauce, garlic, sesame oil, sesame seed, red pepper flakes, sugar and pepper; add meat and marinate 30 minutes at room temperature.
  • Drain meat, reserving marinade.
  • Dissolve cornstarch in water and add to reserved marinade, mixing well.
  • Preheat wok or large skillet over high heat; add 1 tablespoon oil, then add carrots and stir fry 3 minutes. Add broccoli and cauliflower slices and stir-fry 2 minutes (until vegetables are crisp-tender). Remove vegetables and keep warm.
  • Add remaining oil to pan.
  • Add half the beef to hot pan and stir-fry 2-3 minutes (until brown). Remove beef and stir-fry remaining meat. Return all meat to pan.
  • Stir marinade a little and pour into skillet or wok. Cook and stir until thickened and bubbly. Stir in the vegies. Cover and cook 1 minute.
  • Serve over hot rice.

Whip up a speedy beef, beansprout and spinach stir-fry seasoned with sweet mirin, garlic, sesame seeds and soy sauce

1 tbsp soy sauce
1 tbsp mirin or clear honey
2 tsp cornflour , mixed to a paste with 2 tbsp water
1 tbsp vegetable oil
300g beef frying steak, thinly sliced
1 garlic clove , thinly sliced
1 red chilli , finely chopped
3 spring onions , sliced into small pieces
300g pack beansprout
100g bag baby spinach
handful sesame seeds , toasted
cooked rice , to serve (optional)

Steps:

  • In a small bowl, mix together the soy, mirin or honey, and cornflour paste. Heat the oil in a wok or large frying pan. Season the beef and sear in batches, then remove to a plate and cover with foil to keep warm. Fry the garlic and chilli, then add the spring onions and beansprouts, and stir-fry for 2 mins.
  • Return the beef to the wok and add the spinach along with the sauce. Keep stir-frying for another 2-3 mins until the spinach has wilted. Serve sprinkled with the sesame seeds and some rice, if you like.

2 ¼ cups water
1 ½ cups uncooked jasmine rice, rinsed and drained
4 stalks scallions, white and green parts thinly sliced, divided
3 ⅓ tablespoons white wine vinegar
1 pinch salt
3 teaspoons olive oil, divided
2 medium zucchini, halved lengthwise and cut into half-moon slices
1 (8 ounce) package button mushrooms, thinly sliced
4 large carrots, shaved into strips using a vegetable peeler
salt and ground black pepper to taste
6 tablespoons soy sauce, divided
2 tablespoons sesame oil
2 tablespoons white sugar
4 cloves garlic, minced
2 (1 inch) pieces fresh ginger, peeled and minced, or more to taste
2 pounds ground beef
4 teaspoons Sriracha sauce

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to low, cover, and simmer until rice is tender and water has been absorbed, about 15 minutes. Remove from the heat and let sit, covered, for 10 minutes. Gently fluff with a spoon and keep warm.
  • While the rice is cooking, combine scallion whites, vinegar, and salt for the pickled scallions in a small bowl. Set aside to pickle while you start the stir-fry.
  • Heat 1/2 of the olive oil in a large skillet over medium-high heat. Add zucchini, mushrooms, and carrots; season with salt and pepper. Stir-fry until crisp-tender, 3 to 5 minutes.
  • Combine 1/2 of the soy sauce with sesame oil and sugar in a small bowl; whisk until well blended. Pour over vegetables in skillet and toss to coat. Remove vegetable mixture from the skillet and keep warm.
  • Heat remaining olive oil in the same skillet over medium-high heat. Add garlic and ginger and cook until fragrant, about 1 minute. Add beef; cook and stir in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in remaining soy sauce.
  • Ladle rice into bowls. Top with beef, vegetables, and pickled scallions. Sprinkle with scallion greens and drizzle Sriracha over top.

1/4-1/3 cup light soy sauce
1/4 cup sherry wine or 1/4 cup cooking wine
1 cup green onion, sliced
1 cup celery, sliced diagonally
1 tablespoon grated fresh ginger
1/2 cup carrot, cut into matchsticks
1 cup broccoli, sliced
1 tablespoon sesame oil
12 large mushrooms, sliced
1/4 cup vegetable oil
2 garlic cloves, minced
1 tablespoon cornstarch
1 1/2 cups water
water chestnut

Steps:

  • Toss beef in bowl with soy sauce and sherry.
  • Cover and marinate for 30 minutes.
  • Heat oil in wok, or wide frying pan.
  • Add garlic and ginger and saute over high heat.
  • Add drained beef (reserve marinade).
  • Stir fry until meat is brown.
  • Add scallions, celery, carrots, broccoli and mushrooms.
  • Cover and steam about 5 minutes.
  • Mix water, cornstarch, sesame oil and marinate in small bowl; pour into pan.
  • Heat to boiling.
  • Cook until thickened.
  • Serve over rice.

  • In an airtight container, whisk all of the marinade/sauce ingredients together. Spoon 1/3 cup of marinade/sauce into a freezer size Ziploc bag and whisk in 1 tablespoon sesame oil and 1 tablespoon cornstarch. Add beef and onions to freezer bag. Refrigerate both the meat/onions and the separate reserved sauce for 15 minutes up to overnight (the longer the better!).
  • When ready to cook, heat 1 tablespoon sesame oil in a very large skillet over high heat. Once very hot and rippling, remove meat and onions from the marinade with tongs and add to pan. You may need to work in two batches.
  • Break up any clumps in the meat and let cook for 1 minute, without stirring, then stir and cook until beef is browned and almost cooked through, about 1-2 minutes (it will cook more in the sauce). Don’t overcook or it won’t be as tender! Transfer beef to a large plate and cover. Wipe wok with a paper towel.
