SOUTHERN FRIED CABBAGE WITH SAUSAGE
This is a family favorite cabbage recipe. The cabbage is cooked down with tomatoes, seasonings and smoked sausage for a hearty and delicious meal-in-itself. Serve with cornbread.

Steps:
- Chop/slice the sausage, cabbage, and onion.
- In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
- In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
- Add remaining ingredients, and the sausage.
- Cover the skillet and cook for about 10 minutes.
- Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

Steps:
- Remove the first outer layer of leaves from the cabbage and discard.
- Rinse the head of cabbage well under cold running water.
- Carefully slice the cabbage in half, then into quarters.
- Slice each quarter again, the long way, then cut each wedge into bite sized pieces.
- Place your skillet over Medium heat on your stove top.
- Add the butter.
- Add the bacon grease.
- Add the cabbage.
- Stir the cabbage as it cooks down to fully coat the pieces in the butter.
- Add the salt.
- Add the black pepper.
- Add the sugar.
- Continue to stir and cook, uncovered, until the cabbage is tender.
- Serve while warm, topped with bacon bits if you desire.
- Enjoy!
ST. PATRICK'S DAY FRIED CABBAGE
This classic St. Patrick's Day side dish isn't truly fried, but still cooks in plenty of butter and bacon drippings. A dash of Worcestershire adds an extra savory note.

- Place the butter and the bacon in a large Dutch oven or pot with a lid over medium-high heat. Cook, stirring occasionally, until bacon is lightly browned and crisp, 7 to 8 minutes (lower the heat if the bacon begins to get too dark). Using a slotted spoon, remove the bacon to a paper-towel-lined plate and reserve (do not wipe out pot).
- Add the onion, garlic, and 1/2 teaspoon salt to the pot, stirring frequently with a wooden spoon and scraping up any browned bits from the bottom of the pan. Cook until the onion is very soft, about 8 minutes.
- With the heat at medium-high, add the cabbage, 1 teaspoon salt, and 1/4 teaspoon black pepper. Stir until the cabbage starts to soften, 5 minutes. Reduce heat to medium-low or low and cook, covered, until the cabbage is very tender, with a little bit of texture remaining in the thicker rib pieces, 12 to 15 minutes, stirring occasionally to make sure the bottom isn¿t getting too dark.
- Uncover the pot and increase heat to high. Add the Worcestershire sauce and stir for about a minute. There should be almost no liquid in the pot. Add more salt and pepper, if necessary, transfer to a serving bowl and top with the reserved bacon bits.

- add bacon to a large heated skillet. fry until almost crispy. add ham and sautee for about a minute or so
- add garlic, onion and bell pepper to the skillet. saute veggies until translucent. add cabbage in batches. mix the veggies real good and stir-fry the cabbage until it reduces in size. this will take about 10-12 minutes. add galangal, red pepper, cilantro and soy sauce. continue to stir fry for and additional 5-7 minutes or until desired doneness. enjoy!

- Heat oil in a large pot over medium heat. Add onion, green pepper, and garlic. Cook and stir until browned, about 5 minutes. Add pork, Creole seasoning, and salt. Cook until pork is browned, 5 to 7 minutes. Do not drain.
