BLACKBERRY MOCKTAIL (MOJITO-STYLE WITH MINT AND LIME)
This blackberry mocktail recipe is simple to make with fresh or frozen blackberries. Along with fresh mint and lime, it's a refreshing non-alcoholic mojito!

Steps:
- Place the lime juice, frozen pink lemonade concentrate, fresh blackberries and fresh mint leaves into a glass.
- Crush the blackberries and gently muddle mint leaves by lightly pressing down to release their flavor. Try not to tear the mint leaves. It may be easiest to crush the blackberries first, then add mint leaves and lightly muddle.
- Add a few ice cubes to the glass then top with coconut water.
- Top with club soda (or soda of choice).
- Optional to garnish with extra blackberries or mint leaves.
- Serve immediately and enjoy!

- Add the blackberries to a small sauce pan and mash them with a fork or potato masher until broken down into small bits.
- Add the sugar, water and lemonade and bring to a simmer.
- Simmer over low-medium heat for about 10 minutes.
- Strain the mixture to remove the bits of blackberry, add the juice from the lemon and refrigerate the liquid until cooled.
- Once cooled, pour the liquid evenly among 4 glasses filled with ice cubes.
- Add seltzer until glass is full.
- Garnish with lemon slices, mint and extra blackberries.

- Place the blackberries, simple syrup, and lemon juice into a cocktail shaker. Using a muddler (or the back of a wooden spoon), thoroughly mash the ingredients, allowing the blackberry juices to release.
- Add the rum and three ice cubes to the cocktail shaker. Tightly seal the lid onto the cocktail shaker and shake vigorously for 45-60 seconds.
- Strain the blackberry cocktail into a double old-fashioned glass. Top with additional ice. Garnish with a lemon slice and straw if you like. Serve immediately.

- Put the bay leaves in a saucepan, add 350ml water and the golden caster sugar, bring to the boil, then leave to cool completely. Remove and discard the bay leaves. Chop the lemon into chunks and put in a blender. Add the blackberries (fresh or defrosted) and the bay leaf infusion, blend until smooth, then strain through a sieve into a jug to remove any pith and pips. Serve in tumblers or wine glasses topped up with the sparkling water. Stuff lychees with green olives and skewer onto cocktail sticks to garnish the drink, if you like.
