CLASSIC CRISPY RICE TREATS



Classic Crispy Rice Treats image

Gooey marshmallows and crispy rice cereal come together in this recipe for the all-original favorite. We added a splash of vanilla extract and pinch of salt to give these sweet treats a palatable punch. Cut into squares, store between a few pieces of wax paper (to prevent any sticking) and enjoy for up to three days.

Nonstick cooking spray
4 tablespoons unsalted butter
One 10-ounce bag mini marshmallows
6 cups crispy rice cereal, such as Rice Krispies
1 teaspoon pure vanilla extract
Pinch kosher salt
Decorative toppings, optional (see Cook's Note)

Steps:

  • Line a 9-by-13-inch baking dish with aluminum foil, leaving a 2-inch overhang on each of the longer sides. Spray the foil lightly with cooking spray.
  • Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring occasionally, until melted and smooth, about 5 minutes. Remove from the heat and stir in the vanilla and salt.
  • Working quickly, add the rice cereal to the pot and stir with a rubber spatula until evenly coated. Transfer to the prepared baking dish and press into an even, compact layer. (Spray your hands with a little cooking spray to keep them from sticking when pressing the cereal mixture into the pan). Decorate with toppings if using (see Cook's Note).
  • Let sit at room temperature until firm, about 30 minutes. Cut into 24 squares. Store the cereal treats at room temperature in an airtight container for up to 3 days.

1/2 cup honey
1/2 cup natural chunky peanut butter
6 cups crispy brown rice cereal
2/3 cup chopped dried cherries (3 ounces)
cooking spray (for the pan)

Steps:

  • Combine honey and peanut butter in a large pot and heat over medium-low heat until melted, about 2-3 minutes. Add brown rice cereal and cherries and stir to combine until mixture is sticky. Press into a 9 by 13-inch pan sprayed with cooking spray. Let cool, then chill in refrigerator for 30 minutes. Per Serving:

Best rice crispy treats I ever had. Easy to make and kids love it. My DH isn't crazy about peanut butter and loves coffee so I use coffee granules instead peanut butter and what a great treat for adults!

4 tablespoons butter
10 ounces marshmallows
3/4 cup creamy peanut butter or 2 tablespoons instant coffee granules
6 cups Rice Krispies
6 ounces chocolate chips, melted for garnish

Steps:

  • Melt butter over low heat in a large pot.
  • Stir in marshmallows and cook until melted.
  • Stir in peanut butter or coffee granules if you don't like peanut butter.
  • Stir in rice krispies cereal mix until all combine.
  • Pour out onto a buttered baking dish 9"x13".
  • Smooth out the top by moistening your hands with a little water and using the palms of your hand to press gently.
  • Don't press down too hard or your treats will be too dense.
  • Set a side to cool.
  • Once they cool cut them into even squares and dip into melted chocolate or just drizzle chocolate over the top.

  • Add the Dates, Almond Butter, Vanilla Extract, and Salt to a Food Processor or Blender. Combine until a thick, even paste is formed – it will not be sticky to the touch.
  • Transfer the paste to a large bowl, then add 2 cups of Crispy Rice Cereal. Knead the Cereal into the paste using your hands. Once evenly incorporated, continue to add in Cereal in 1/2 cup to 1 cup increments. I needed around 4 cups of Cereal in total; this allowed all of the Cereal pieces to be coated with a thin layer of the paste, but not too much.
  • Line a 8×8″ pan with parchment paper, then press the Rice Crispy Mixture into it. Cover with another layer of Parchment Paper and “punch” the Cereal down until it is really compact and evenly spread.
  • Top with Melted Chocolate, if desired. Remove from the pan, use a sharp knife to cut into squares, and enjoy! Store in a container with a loose lid at room temperature for up to 6 days.
