These egg free Cornmeal Pancakes are tender and sweet with flavors of cornbread. Super easy to whip up with ingredients you likely already have in your pantry, they are a nice change of pace from traditional pancakes. Top with butter and syrup - or add honey and fresh berries!

Number Of Ingredients 8

1 1/3 cups all purpose flour ((lightly spooned into measuring cup, and leveled off with a knife))
1 cup cornmeal
3 Tbsp sugar
1 1/2 Tbsp baking powder
1/2 tsp salt
2 cups milk or DF milk
1/3 cup vegetable or canola oil
1 tsp vanilla extract (optional, but recommended)

Steps:

  • Heat electric skillet to 350F.
  • Whisk together all dry ingredients in large bowl.
  • Add all wet ingredients to dry ingredients (if batter is too thick, add 1 Tbsp of milk at a time until thinned to desired consistency - use a liquid measuring cup for liquids, for best results). Whisk or stir with large spoon until moistened. Batter will be slightly lumpy. Allow batter to rest for 2-3 minutes to thicken.
  • Pour batter onto heated skillet to desired size. Cook until golden brown on first side, then carefully flip and cook until second side is golden brown.
  • Remove from skillet. Add toppings of choice, and enjoy!

1/3 cup flour
3/4 teaspoon baking soda
1 1/8 cups cornmeal
1 egg, beaten
1 1/8 cups 1% fat buttermilk (or 1 1/8 cups skim milk plus lemon juice)
1 teaspoon vanilla

Steps:

  • Combine flour, baking soda and cornmeal.
  • Add egg, buttermilk and vanilla.
  • Stir until just mixed.
  • Pour by 1/4 cup into a hot pan.
  • Cook until bubbles appear, flip.
  • Makes about 10 pancakes.
  • I put 1 serving as one pancake.
  • Note: This recipe is very versatile; If you like sweeter pancakes, add 1 tbsp of sugar; These are also good with 1 cup of blueberries, or try any other kind of fruit; Cinnamon may also be added for extra flavour.

2/3 cup cornmeal
2 tablespoons sugar

Steps:

  • Combine the first five ingredients. In another bowl, whisk eggs, milk and oil; stir into dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles on top begin to pop; cook until second side is golden brown. Serve with syrup.

I poached this recipe from cooks.com (it was submitted by Dawn Linke, so props to her). I'm mainly posting it here since this is the recipe site I use the most and I want to add it to my cookbook, and I was most happy with this recipe vs. other eggless pancake recipes I've tried, so I figured it was worth sharing. :)

1 cup all-purpose flour
1 teaspoon sugar
1 teaspoon cinnamon
2 teaspoons baking powder
1 cup whole milk
1 tablespoon vegetable oil
1 tablespoon water
1 teaspoon vanilla extract
2 tablespoons butter

Steps:

  • Combine dry ingredients and mix slightly.
  • Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.
  • Melt the butter. When fully melted, add the butter to the batter.
  • Take pan to stove and stir butter into batter.
  • When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.
  • Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.
  • Note: This recipe also works well with whole wheat flour. Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat.

Cormeal gives an excellent flavour to pancakes, although it makes them kinda hard to spread. Since these pancakes don't have sugar, they can be made either "sweet" or "savory" depending on what you have them with. They also taste great served hot right off the griddle!

2 cups cornmeal
2 tablespoons unsalted butter
1 teaspoon salt (If using salted butter, reduce the amount of salt, or omit it altogether)
1 cup skim milk
1/3 cup water (you might need more)

Steps:

  • Cream the cornmeal, salt, and butter together.
  • Add the milk and enough water to make a moist but firm batter.
  • Drop, using about 1/4 cup of batter, onto a hot greased griddle, and flatten using the back of a spoon wetted with water.
  • This can be a tad tricky, but wetting the spoon helps a lot!
  • When brown, turn and cook the other side.
  • Serve hot with maple syrup, honey, or butter.

No eggs? No problem! You can still get the moisture and structure eggs provide pancakes by using buttermilk. The acid in the buttermilk keeps the pancakes tender and helps maintain a fluffy texture. A bit of extra butter in the batter also helps to keep the pancakes moist. They're all the better with a smear of butter and drizzle of maple syrup.

1 1/4 cups all-purpose flour (see Cook's Note)
8 teaspoons sugar
3/4 teaspoon baking powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
1 cup lowfat buttermilk
3 tablespoons unsalted butter, melted and cooled, plus more for brushing and serving
1/2 teaspoon pure vanilla extract
Maple syrup, for serving

Steps:

  • Whisk the flour, sugar, baking powder, salt and baking soda in a large bowl. Whisk the buttermilk, butter and vanilla in a medium bowl until incorporated. Whisk the buttermilk mixture into the flour mixture until just combined (it's OK if there are a few lumps).
  • Heat a large nonstick skillet over medium heat and lightly brush with butter. Pour 1/3 cup of the batter into the skillet for each pancake and cook until bubbles form on top and the bottom is lightly browned, 1 1/2 to 2 minutes. (If the pancakes are browning too quickly, reduce the heat to medium-low.) Flip and continue cooking until golden on the other side, 1 to 2 more minutes. Transfer to a plate. Repeat with the remaining batter, brushing the pan with more butter as needed. Serve with butter and syrup.

We love pancakes, oatmeal and fruit but can't eat eggs so after trying several eggless pancake recipes, I altered them and created this one. My daughter loves them and will eat 3 pancakes --- she's only 2. Thankfully they are healthy.

1 cup oat flour
2/3 cup whole wheat flour
1/4 teaspoon salt
1 tablespoon baking powder

1 cup rice milk
3/4 cup pulp free orange juice
1 banana, mashed
10 strawberries, mashed
1/2 pint blueberries

Steps:

  • If you can't find oatmeal flour, you can make your own by grinding up Quaker Oatmeal in your blender until it is a fine powder.
  • Don't have oatmeal either, you can use white flour as a substitute.
  • Mix first 5 dry ingredients together in a large mixing bowl.
  • Mash your banana and strawberries together in a separate bowl.
  • Add whole blueberries, milk and OJ to the banana mix and stir together.
  • Pour fruit mixture into the dry ingredients and stir until moist.
  • Add more milk or juice if you like a thinner batter.
  • Set batter aside for 10 minutes.
  • Preheat your griddle to 350°F.
  • Pour 1/4 cup batter on griddle and cook for approximately 3-4 minutes or until the bottom side is golden or the top of the pancake starts to bubble.
  • Flip and cook on other side until golden brown, approximately 3 minutes.
  • Serve with butter and syrup, honey or fresh fruit on top.

  • Combine sugar, 1/2 cup oil, and eggs in a bowl. Stir in flour, cornmeal, baking powder, baking soda, and salt. Stir in 1/2 cup milk. Add more milk, 1 tablespoon at a time, and stir to desired thickness.
  • Heat vegetable oil in a large skillet over medium-low heat. This recipe is a variation of Nimz's Buttermilk Pancakes Recipe (recipe #66241). My son has a severe egg allergy and I have been looking high and low for a pancake recipe. I learned that applesauce can be a substitute for eggs when egg only provides moisture to the recipe. 1/4 cup applesauce can take the place of one egg. So I decided to use a buttermilk pancake recipe to test this, since there are other ingredients to provided fluffiness (ie. buttermilk, baking soda, and baking powder) and it worked! My son has finally eaten a delicious pancake - one that does not taste like paste. Try and enjoy!

1/2 cup applesauce
2 cups buttermilk
4 tablespoons butter, melted
1/2 teaspoon vanilla extract

  • Put all wet ingredients in the bowl (first four ingredients), and stir with large spoon.
  • Next add all the dry ingredients (next five ingredients), and stir until well combined. Batter may still be a little lumpy.
  • Heat lightly greased griddle on med-high heat (I use butter to cook with but you can use vegetable oil or cooking spray).
  • Pour about a 1/3 cup of batter onto griddle for each pancake. You may use less or more, depending on your desired pancake size.
  • Cook until the pancake is covered with tiny little bubbles (4-5 min), then flip. Cook the other side for another 3-4 minutes. (The key is to make sure the batter has cooked all the way through. You may have to adjust your heat so as to not have burnt on the outside, runny on the inside disasters.).
  • Repeat with remaining batter.

  • Measure out almond milk in a large liquid measuring cup, then add melted butter (or substitute oil) and whisk to combine.
  • Add wet ingredients a little at a time to the dry ingredients and gently, slowly stir until just combined. You may not use all of the liquid - you're looking for a semi-thick batter (see photo). Small lumps are fine - try not to overmix. Let set for 10 minutes.
