Steps:
- Combine 1/4 cup milk and cornstarch in small bowl, mixing until cornstarch is thoroughly dissolved.
- Combine applesauce, remaining 3/4 cup milk, chocolate chips and sugar in heavy saucepan over medium heat. Stir until chocolate is melted and mixture is smooth and simmering.
- Stir in cornstarch mixture. Cook, stirring constantly, 1-2 minutes. Remove from heat and cool. Cover and chill until ready to serve.

CHOCOLATE-APPLESAUCE CAKE

- Heat oven to 325 degrees. Brush a 9 1/2-inch kugel-hopf ring mold or Bundt pan with soft butter. Coat with 1/4 cup superfine sugar; tap out excess sugar; set mold aside.
- In the bowl of an electric mixer fitted with the paddle attachment, combine the butter and remaining 2 cups superfine sugar. Beat on medium speed, scraping down the sides with a rubber spatula, until mixture is light and fluffy, about 5 minutes. Add the eggs, and beat 2 to 3 minutes more. Fold in the applesauce, being careful not to overmix.
- In a large bawl, sift together the flour, cocoa powder, cinnamon, nutmeg, ginger, salt, and baking powder.
- Fold the flour mixture into applesauce mixture. Add the vanilla, Calvados, and chocolate pieces; mix until just combined. Pour batter into prepared pan; use a rubber spatula to clean bowl and smooth top.
- Bake until cake pulls away from sides of pan and is springy to the touch or until a cake tester inserted into center comes out clean, about 2 hours. Transfer to a wire tack to cool slightly; turn out cake; let cool completely.
- Sift confectioners' sugar over cooled cake. Pour cider glaze over top of cake, allowing to drip down sides. Garnish with apple chips and crystallized ginger. Serve cake with whipped cream, if desired.
CHOCOLATE APPLESAUCE CAKE III
This is an extremely moist cake that ranks right up there for all the chocoholics in my home. It does not need to be frosted because it is sprinkled with chocolate chips and walnuts before baking. Easy AND delicious!

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, cocoa, baking soda and salt in a bowl. Set aside.
- In a large bowl, cream the butter and sugar together until light and fluffy, using an electric mixer set on medium speed. Beat in the eggs one at a time. Blend in the vanilla extract. Beat in the flour mixture alternately with the applesauce.

- In a bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Combine dry ingredients; add to the creamed mixture alternately with applesauce. APPLE CHOCOLATE PUDDING
This is from a book called Celebrating Chocolate written by Beverley Sutherland Smith.This pudding is light, not too sweet and has a moist, almost sticky texture.It looks like a cake and can be served as one and slices beautifully once cooled. I also substituted flaked almonds instead of the walnuts and apricots can also be use in place of apples.Just divine served with the cream.

- Preheat oven to moderate - 180°C.
- Butter base and sides of a 20cm cake tin and line base with non-stick baking paper.
- Mix pie-pack fruit with 2 tablespoons of sugar and lemon juice and set aside.
- Cream butter and sugar until light and fluffy.
- Add egg and beat well.
- Sift flour, baking powder,bicarb and cinnamon over top and mix. This forms a very stiff mixture.
- Stir in fruit mixture (apple or apricot), chocolate, sultanas and nuts. Mix well.
- Tip mixture into prepared tin and bake in preheated oven for 50-60 minutes or until firm to touch on top.
- Leave to cool for 5 minutes before inverting on to a serving plate. Dust with sifted icing sugar.
- Serve with vanilla or brandy custard, ice-cream or lightly whipped cream sweetened with a few drops of vanilla and a little castor sugar.
- Note: I prefer this served warm, so with the left overs I zapped each individual slice in the microwave for about 15 seconds and it was just right.
- Note: I also used a 385g can of pie apples as this was all I had on hand and it was perfect.

CHOCOLATE APPLESAUCE BREAD
I got this from another recipe site, so I don't know the original source. It is nice and moist and has a good chocolately flavor. The original recipe said to put it in 2 1-lb. loaf pans, but they were so full that the middle was still gooey when the outside was done, so I'm suggesting 3 pans and a slightly shorter baking time.

- Beat margarine and sugar at medium speed until smooth and fluffy.
- Add eggs and beat for 1 minute.
- Blend in applesauce (Mixture will look curdled).
- Combine dry ingredients and mix well.
- Make a well in the center; add applesauce mixture and chips and stir just until combined and flour is evenly moistened.
- Spray one 9x5 loaf pan or 3 1-lb.
- pans with nonstick spray and spoon in batter.
- Bake at 350* for about 60 minutes for one loaf or about 35-40 minutes for 3.
- Cool in pan for 10 minutes, then remove from pan and cool on rack.

APPLESAUCE PUDDING
This is a recipe I came up with when trying to get my son to eat more fiber. He hated the store bought brands of applesauce and who could blame him. We like this served hot with a little butter and is a great addition to oatmeal, cream of wheat or spooned over vanilla ice cream. *Use whatever variety of apple that is your favorite.*

- * Cut your apples into wedges and transfer to a medium sauce pot.
- * Barely cover the apples with water and add the vanilla bean and cinnamon stick.
- * Cover the pot and bring to a boil. Then remove the cover and allow everything to simmer till apples appear to be falling apart.
- * Do not drain. Remove apples from heat and carefully take out the vanilla bean and cinnamon stick. Add the brown sugar and salt.
- * With a potato masher or fork mash up the apples until they obtain the desired consistency. Serve hot or cold.
- SUBSTITUTIONS:.
- Replace vanilla bean for 1 teaspoon of vanilla extract.
- Replace cinnamon stick for 1/2 teaspoon of ground cinnamon.

CHOCOLATE APPLESAUCE BUNDT CAKE
The original recipe makes 6 individual sized chocolate cakes which is fine for a dinner party, but for everyday snacking, I prefer to make this in a Bundt pan. It is a very moist, delicious cake that keeps well for several days.

- Preheat the oven to 325 degrees F.
- Grease and sugar a 10-cup Bundt pan.
- Beat the butter, oil and sugar with an electric mixer until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Beat in the vanilla.
- In a separate bowl, sift the flour, cocoa, baking soda, salt and cinnamon.
- Whisk the buttermilk and applesauce together.
- Add the flour to the butter mixture, alternating with the applesauce mixture, mixing well after each addition.
- Stir in the chocolate chips.
- Spoon the batter into the prepared pan and bake for 60 to 70 minutes, until a toothpick inserted comes out clean.
- Cool the cake in the pan for 15 minutes, then turn out onto a cooling rack to cool completely.
- For the glaze, heat the cream to just below a simmer and pour over the chopped chocolate.
- Let sit for one minute then stir to smooth out.
- Stir in the butter to melt in and thicken the glaze.
- Pour over the top of the cake and let drip down the sides.
- Garnish with the hazelnuts.
