2 pounds parsnips and/or carrots, peeled and cut into 1/2-inch pieces
2 pounds sweet potatoes, peeled and cut into 1-inch pieces
½ cup reduced-sodium chicken broth
¼ cup whipping cream
5 tablespoons butter, chopped and divided
¾ teaspoon salt, divided
½ cup packed brown sugar
¼ cup all-purpose flour
1 teaspoon dried rosemary, crushed
½ cup pecans, chopped
2 tablespoons maple syrup

Steps:

  • Preheat oven to 400 degrees F. Line a 2-quart rectangular baking dish with Reynolds Wrap® Pan Lining Paper, parchment side up. No need to grease dish.
  • Add parsnips and/or carrots to a large microwave-safe bowl. Add 1/4 cup water and cover with wax paper. Microwave on high for 5 minutes. Uncover and add sweet potatoes. Cover and microwave 15 minutes more or until tender, stirring once. Drain and return vegetables to bowl.
  • Pour broth and cream into the bowl with vegetables. Use a potato masher to mash to desired consistency. Stir in 3 tablespoons butter and 1/2 teaspoon salt. Transfer to prepared baking dish.
  • Combine brown sugar, flour, rosemary, and 1/4 teaspoon salt in a medium bowl. Using a pastry blender, two forks, or your fingers, cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in pecans and maple syrup and sprinkle over sweet potato-mixture.
  • Bake 20 to 25 minutes or until pecan mixture is just starting to brown.

The filling gets a pumpkin pie-like treatment, with brown sugar and vanilla for a deep caramel flavor and butter and eggs for richness. This recipe is bound to become a holiday staple.

3 to 4 large sweet potatoes (about 1 3/4 pounds), peeled and cubed

Steps:

  • For the sweet potatoes: Add 1 3/4 pounds peeled and cubed sweet potatoes to a large pot of salted water. Bring to a boil over high heat, then lower the heat to a simmer and cook until the potatoes are very tender, 15 to 20 minutes. Drain and cool. Mash the sweet potatoes.
  • For the filling: Preheat the oven to 350 degrees F. Butter a 2-quart baking dish.
  • Whisk together the butter, mashed sweet potatoes, milk, brown sugar, vanilla, salt and eggs in a large bowl. Transfer to the prepared baking dish.
  • For the topping: Combine the flour, brown sugar, butter and salt in a medium bowl until moist and the mixture clumps together. Stir in the pecans. Spread the mixture over the top of the sweet potatoes in an even layer. Bake until mostly set in the center and golden on top, 25 to 30 minutes. Serve hot.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13-inch baking dish.
  • Combine sweet potatoes with 2 tablespoons olive oil, 1 teaspoon kosher salt, garlic powder, and 1/2 teaspoon black pepper on a large baking sheet in a single, even layer; toss to coat well.
  • Bake in the preheated oven until slightly browned, about 30 minutes.

3 pounds potatoes, peeled and cut into 1/2-inch cubes
3 medium carrots, shredded
3 celery ribs, trimmed and diced
1 medium onion, diced
2 cups shredded sharp cheddar cheese, divided
1/2 cup butter, cubed
4 ounces cream cheese, softened
1/4 cup plus 1 tablespoon minced fresh parsley, divided
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup chopped ripe olives

Steps:

  • Preheat oven to 350°. Place potatoes, carrots, celery and onion in a Dutch oven; add water to cover. Cook, covered, until vegetables are almost tender, 8-10 minutes. Drain. Return to Dutch oven; toss with 1-3/4 cups cheddar cheese, butter, cream cheese, 1/4 cup parsley, salt and pepper., Transfer to a greased 13x9-in. baking dish. Top with olives and remaining cheese. Better yet, if you have left-over sweet potatoes from Thanksgiving, freeze them, and make this cake for Christmas. The whipped sweet potatoes I use already have some butter and sugar, so I only use 1 3/4 cups of sugar in the batter, but adjust the sugar amount to your liking.

4 large sweet potatoes, peeled and quarterd
3/4 cup granulated sugar
1 1/2 cups butter, divided
2 eggs, beaten
1/2-1 cup crushed pineapple
1 teaspoon vanilla
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup milk
1/4 cup orange juice
1/4 cup Bourbon, up to 1/4 c
1/2 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1 cup shredded coconut

Steps:

  • Boil sweet potatoes until you can easily stick a fork in them,
  • Drain the potatoes and mash , I personally prefer to whip them with a hand mixer.
  • Add granulated sugar, 1/2 cup of the butter, eggs, vanilla, spices, milk, oj and bourbon if desired, and mix well.
  • Spread in a 9 x 13 baking dish.
  • For the topping: melt the remaining butter, add brown sugar, flour, pecans, and coconut.
  • Mix well.
  • Spread over the top of the sweet potatoes and bake at 350 degrees for approximately 30 minute If the coconut starts to get too brown, cover it with foil.

One of my family's favorite variations is cinnamon or allspice in place of the ginger, with a splash of brandy, finely minced orange zest, a few tablespoons peach preserves, and a sprinkling of Sweet & Spicy Pecans, recipe #117774.
