SPINACH FETA BURGERS



Spinach Feta Burgers image

Here's a delicious alternative to ground beef burgers-and with only 15 g of fat and 29 g of protein-it's a healthy alternative too! Make it low-carb and enjoy them without the bun. Serve with your favourite tzatziki sauce or condiments.

10 oz frozen spinach, thawed and well-drained
1 lb lean ground chicken
1 egg, medium
½ cup feta cheese, crumbled
2 cloves garlic, minced
1 cup onions, diced
1 tsp oregano, dried
6 whole grain hamburger
2 tomatoes, medium, sliced
6 slices onions, sliced
1 ½ cups field or mixed salad greens

Steps:

  • Add ground chicken to large bowl. Mix in drained spinach, whole cracked egg, crumbled feta, minced garlic, diced onion and dried oregano. Mix well using clean hands. Form into six equal size patties (about ½ cup - 125 mL each). Chill for one hour to prevent sticking on the grill.
  • Preheat grill to medium-high. Place burgers on top rack, close lid and grill 15 minutes one side or until browned. Close lid and grill another 7-10 minutes or until a thermometer set in centre of burgers registers 165°F (74°C). Remove from grill.
  • Place hamburger buns cut side down on grill and toast lightly.
  • Slice tomato and onion and place on serving dish with salad greens.
  • To serve, spread salad greens over bottom of bun. Top with a feta chicken burger, sliced tomato and onion and other half bun. Serve with your favourite tzatziki sauce or condiments.

1 tsp Worcestershire sauce

Steps:

  • Combine chicken, bread crumbs, milk, chopped green onions, Worcestershire sauce and salt and pepper and form into patties.

  • In a large mixing bowl, add the shredded chicken breast, grated zucchini, baby spinach, and parmesan cheese, and mix well. Slowly add in the egg. Form 4-5 patties.
  • Coat a frying pan with oil and heat up on medium. When hot, add your chicken patties and cook for 4-5 minutes, before carefully flipping and cooking for a further 4-5 minutes.

4 cups shredded chicken (from 2 large chicken breasts, (16 oz by weight))
2 large eggs
1/3 cup mayonnaise
1/3 cup all-purpose flour
3 Tbsp fresh dill (finely chopped (or 1 Tbsp parsley))
3/4 tsp salt or to taste
1/8 tsp black pepper
1 tsp lemon zest (plus lemon wedges to serve)
1 1/3 cups mozzarella cheese (shredded)
2 Tbsp olive oil to saute (divided)
1 cup Panko bread crumbs

Steps:

  • In a large mixing bowl, whisk together: 2 eggs, 1/3 cup mayo, 1/3 cup flour, 3 Tbsp dill, 1/2 tsp salt, 1/8 tsp black pepper and 1 tsp lemon zest.
  • Add in shredded chicken and 1 1/3 cups shredded mozzarella then stir until chicken is well coated in batter.
  • Cover the bowl and refrigerate the mixture at least 30 minutes (this will help with forming patties). Use a trigger release ice cream scoop to divide into 12-15 cakes then form into 1/2-inch thick patties. Dip both sides in Panko crumbs.
  • Place a large non-stick skillet over medium heat. Add 1 Tbsp olive oil and half of the chicken patties. Sauté for 3-4 minutes per side until golden brown, adding more oil as needed. Repeat with remaining patties.
  • As soon as patties are off the heat, sprinkle with salt and squeeze fresh lemon juice over the patties. Serve warm.

1 tablespoon roasted garlic puree
1 tablespoon minced fresh tarragon
Salt and ground white pepper
1 tablespoon grapeseed oil
1 1/2 pounds ground chicken meat
6 ounces blue cheese
2 teaspoons salt
1 teaspoon ground white pepper
4 brioche buns
2 tablespoons unsalted butter
1 cup raw baby spinach leaves
4 tomato slices, thick cut

Steps:

  • For the tarragon aioli: In a bowl, whisk together the mayo, garlic puree and tarragon. Taste and season with salt and white pepper as desired.
  • For the chicken burgers: Preheat the oven to 350 degrees F. Over medium-high heat, warm a large ovenproof saute pan with the oil. Form the chicken into 4 equal patties, and then form a pocket in the center of each burger. Fill the center with a quarter of the blue cheese, and then fold the edges to seal the cheese in the burgers. Sprinkle the stuffed burgers with the salt and pepper and sear in the pan for 2 to 3 minutes per side. Transfer the pan to the oven and finish cooking until the internal temperature reaches 165 degrees F.
  • Toast the buns with the butter on a grill, and then layer the toasted bun bottom with some tarragon aioli, baby spinach leaves, a tomato slice, burger and top of bun. Repeat with the remaining ingredients.

  • Soak bread in milk for about 10 minutes.

1 tablespoon canola oil
4 burger buns
Your favorite toppings: extra cheddar on top, lettuce, tomato, red onion, ketchup, mustard, pickles, jalapeños, bacon, avocado, guac, etc.

Steps:

  • Combine all ingredients (except oil) in a bowl and mix until combined. Don't overmix.
  • Form 4 patties, each about 1-inch thick. Try to ensure the cheddar chunks are evenly distributed. (Note: The mixture will be wet, but it holds together. It helps to wet your hands before forming the patties.)
  • Heat oil in a large skillet over medium-high heat.
  • Add burgers to the hot skillet and cook for 5 minutes. Flip over and cook another 5 minutes, until cooked through. These are very easy chicken & cheese burger patties. You can use either ground chicken or turkey meat. These grill up great outdoors on the BBQ or inside on the indoor grill. My husband and I love serving these on a bun coated with BBQ sauce & a handful of "French's" fried onions and we top them with a slice of american cheese too - they are perfect that way. PS: These are super to freeze, I make a fresh batch of either chicken or turkey & always freeze about 6 or so patties. I wrap them individually in Saran Wrap, then put all 6 either in a tupperware container or a large freezer zip-loc bag as in photo.

1.5 pound boneless, skinless chicken thighs OR 1.5 lbs pre ground chicken
3/4 cup cheddar cheese
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper

1/2 teaspoon garlic powder (optional)
Oil for cooking

Steps:

  • Steam broccoli until tender and then roughly chop into small pieces. Add the broccoli to a large mixing bowl. Let sit until cool enough to handle comfortably.
  • Cut the chicken thighs up in large chunks and add to a food processor. Make sure to only fill the food processor up about 1/3 of the way full so work in batches if needed. Pulse the chicken into a ground meat mixture then transfer to a large bowl. Or - just use pre ground chicken.
  • Add the chopped broccoli, shredded cheese, salt, pepper, paprika and garlic powder (if using) to the bowl and mix everything together with your hands until well combined.
  • Divide the chicken mixture into 5 pieces (about 6 oz each) then shape each section into a burger patty. Season each side with pepper.
  • Warm the oil in a large skillet. When the oil is hot add the patties to the pan and fry on each side, about 7-10 minutes each until cooked through. Internal temp should be 165°F/74°C.

This was a recipe I came up with when I started trying to lose weight with Sure Slim. It uses Cruskit crispbreads or crackers and follows the "rules" of the diet. Cruskits are those revolting puffed crispbreads that you buy thinking that you are being good but then don't eat. I found that they make an excellent binder for burgers.

400 g ground chicken
8 crackers
1 onion
3 garlic cloves
2 stalks celery
2 large mushrooms
1 zucchini
1 bunch coriander
1 tablespoon soy sauce

Steps:

  • Put the Cruskits in the food processor and grind to a fine breadcrumb consistency. Tip the crumbs into a bowl.
  • Put the rest of the ingredients except the chicken into the food processor and pulse until finely chopped.
  • Note: Resist the temptation to do the Cruskits and vegetables together. You'll end up with a gluggy mess that is difficult to get out of the food processor.
  • Add the chicken and vegetables to the crumbs and mix together quickly. The crumbs absorb the liquid and become sticky so the quicker you can work, the easier it is to combine everything evenly. I get into it with my hands.
  • Divide into 4 large patties or 8 small ones, about 1.5 to 2 cm thick. Grill for 7 minutes on each side.
  • Serve in a pita bread with lettuce and tomato or serve as a main dish with vegetables.
  • These patties can also be baked in a hot oven. I also make them into meatballs and bake them then freeze them. They can be added to stock and bok choy for a very quick meal.

  • Mix ground chicken with remaining jalapenos, remaining ½ cup cheddar, panko, egg, onion powder, sage and salt until combined. Shape into 4 ½-inch thick patties. Place on bbq over medium heat and cook, lid closed, for 5 min. Flip burgers and top with cream cheese mixture, cook until no pink remains in burger and cheese is melted over top, lid closed, about 5 min.
  • Serve burgers dressed as desired.
