4 Cornish hens
1 stick (8 tablespoons) unsalted butter, softened
Kosher salt and freshly ground black pepper
2 lemons, halved
1 yellow onion, quartered
2 heads garlic, halved
12 sprigs fresh thyme
8 carrots, peeled and cut into 1/2-inch pieces
4 potatoes, peeled and cut into 1/2-inch pieces
1 1/2 cups chicken broth

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat each Cornish hen with 2 tablespoons of the butter and sprinkle with salt and pepper. Into the cavity of each bird, insert a lemon half, an onion quarter, half a garlic head and 3 thyme sprigs. Set aside.
  • Spread the carrots and potatoes in an even layer in a 9-by-13-inch baking dish or roasting pan. Add the chicken broth and then the prepared Cornish hens. Roast until the juices run clear and the hens are golden brown, 45 minutes to 1 hour.

2 tablespoons butter
2 tablespoons shallots, minced
2 garlic cloves, minced
2 carrots, shredded
2 cups beef broth
1/2 cup cooking sherry
2 tablespoons lemon juice
1 lb mushroom, sliced
2 tablespoons cornstarch
salt and pepper

Steps:

  • Melt the butter in a medium saucepan over medium heat.
  • Add the shallots, garlic, and carrots.
  • Sauté for 5 minutes or until limp but not brown.
  • Add the broth, sherry, and lemon juice.
  • Heat until almost boiling.
  • Add the mushrooms and cook over low flame for 5 minutes.
  • Season with salt and pepper to taste.
  • Mix the cornstarch with 1/4 cup water and add to the sauce.
  • Stir until thickened.
  • Serve with your favorite steak or pot roasts.

6 -8 beef tenderloin steaks
2 tablespoons finely chopped shallots
3/4 cup dry cabernet sauvignon wine or 3/4 cup other red wine
1 bay leaf
1 pinch thyme
1/2 cup fresh mushrooms or 1/4 cup canned mushroom
1 3/4 cups strong beef broth

Steps:

  • Pan broil tenderloins in butter until a little underdone. Keep warm.
  • In same pan, saute shallots.
  • Add wine, bay leaf, and thyme; simmer until reduced to about 1/4 cup.
  • Remove bay leaf.
  • Strain Juice through sieve, rubbing shallots through; reserve.
  • Saute mushrooms in 2 tablespoons butter.
  • Stir in flour until smooth.
  • Add broth; cook and stir until boiling and thickened.
  • Add salt and pepper to taste; add wine mixture.
  • If too thick, thin with water; if too thin, cook longer.
  • Serve sauce over beef.

Italian Chicken With New Orleans Spaghetti Bordelaise image

This is one of Emeril Lagasse's recipes with a couple of my own variations. It has become one of DH's favorite meals. You may want to reduce the amount of butter or only add half the butter at first and then you can add the remaining if need be. Don't let the long list of ingredients fool you. It is very easy to make and not very time consuming as you can cook your spaghetti while the chicken is baking in the oven. You can even substitute breasts if you prefer white meat but the thighs come out so tender and juicy.

12 chicken thighs
salt
fresh ground black pepper
ground cayenne pepper
4 heads garlic, cloves separated and peeled (yes 4 heads)
1/2 cup olive oil
2 cups dry white wine
3 lemons, quartered
1 1/2 teaspoons dried basil
1 teaspoon dried oregano
2 bay leaves
1/2 cup chopped Italian parsley
1 lb angel hair pasta or 1 lb thin spaghetti
1/4 cup olive oil
8 cloves garlic, minced
1/2 cup chopped green onion
2 tablespoons dry white wine
3/4 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon ground cayenne pepper (or more to taste)
1/2 cup butter (8 Tbsp)
1/2 cup chopped Italian parsley
2 cups finely grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Season thighs with salt, black pepper and cayenne.
  • Peel 4 heads of garlic and crush half leaving the remaining cloves whole.
  • Heat 1/2 cup olive oil in a roasting pan large enough to hold the chicken in 1 layer, over 2 burners on medium-high heat.
  • Add chicken and brown on both sides, setting aside when brown.
  • Add crushed garlic and cook, stirring about 1 minute.
  • Remove from heat and add remaining ingredients, stirring to mix well.
  • Place chicken in roaster, cover tightly and cook for 1 hour.
  • Remove cover and roast until the chicken is brown and tender, about 30 minutes, basting occasionally.
  • Remove and set aside.
  • Spaghetti Bordelaise:.
  • In large pot bring salted water to a boil and cook spaghetti until al dente, about 10 minutes.
  • Drain well.
  • In medium saucepan heat oil over medium heat.
  • Add minced garlic and green onions and cook stirring until fragrant and starting to turn golden, about 2 minutes.
  • Add the wine, basil, oregano, thyme, salt, pepper and cayenne and cook 2 minutes.
  • Add the butter and parsley and cook for another 2 minutes.
  • Pour sauce over drained spaghetti, tossing to coat.
  • Place in large serving bowl and coat with Parmesean Cheese.
  • Place Spaghetti Bordelaise on plate and top with chicken thigh.

CHERRY TOMATOES BORDELAISE

The recipe is called "Bordelaise" because it is made from traditional flavors from that area. In this recipe the tomatoes are meant to be heated through, but not bursting.

1 quart cherry tomatoes

2 tablespoons butter
1 tablespoon shallot, minced
1 tablespoon fresh parsley, chopped

Steps:

  • Rinse and drain tomatoes.
  • Heat butter in a large skillet until hot, but do not brown. Add tomatoes, season with salt and pepper. Cook, shaking pan, to the tomatoes cook evenly without bursting. This will take about 2 minutes.
  • Add shallots and parsley and cook, still shaking pan, about 15 seconds.
