2 cups elbow macaroni
¼ cup butter, divided
1 small onion, chopped
2 tablespoons all-purpose flour
1 ½ cups milk
1 teaspoon salt
1 teaspoon white pepper
1 teaspoon Worcestershire sauce
¼ teaspoon hot pepper sauce (such as Tabasco®)
1 teaspoon prepared yellow mustard
2 cups shredded Cheddar cheese
¼ cup grated Parmesan cheese
1 cup shredded Cheddar cheese
¼ cup grated Parmesan cheese
1 cup dry bread crumbs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch glass baking dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain and mix with half of the butter.
  • While the macaroni is boiling, melt the remaining butter in a saucepan over medium heat. Stir in the onions, and cook until the onions begin to soften, about 3 minutes. Stir in the flour, and cook 5 minutes longer. Add the milk and bring to a simmer, stirring frequently. Cook and stir until the milk has thickened, about 10 minutes. Once thick and smooth, stir in the salt, white pepper, Worcestershire sauce, hot pepper sauce, mustard, 2 cups of Cheddar cheese, and 1/4 cup of Parmesan cheese. Stir until the cheeses have melted, then stir in the macaroni until evenly coated. Scrape into the prepared baking dish, and smooth the top. Toss the remaining 1 cup Cheddar cheese and 1/4 cup Parmesan cheese with the dry bread crumbs in a mixing bowl. Sprinkle evenly over the top of the macaroni.
  • Bake in the preheated oven until the macaroni is hot and the crust is golden brown, about 30 minutes.

1 (16 ounce) package elbow macaroni
1 tablespoon olive oil
½ cup diced onion
1 tablespoon minced garlic
1 ½ pounds ground turkey
1 ½ cups barbeque sauce (such as KC Masterpiece® Original)
1 (8 ounce) bag frozen corn
1 tablespoon crushed red pepper flakes
2 (7.5 ounce) packages cornbread mix (such as Jiffy®)
⅔ cup milk
2 eggs
1 (12 ounce) package shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
  • While pasta boils, heat oil in a 3-quart pot over medium-high heat. Add onion and garlic and cook and stir until onion is translucent, 5 to 7 minutes. Add ground turkey and cook and stir until browned and crumbly, 5 to 7 minutes. Stir in barbeque sauce, corn, and red pepper flakes. Mix well, reduce heat, and let simmer for 5 minutes.
  • Meanwhile, mix cornbread mix, milk, and eggs together in a bowl. Set aside.
  • Combine macaroni, meat mixture, Cheddar cheese, salt, and pepper in a large bowl. Pour mixture into the prepared dish. Spoon cornbread batter on top.
  • Bake in the preheated oven until cornbread is light golden brown, 15 to 20 minutes. Remove from the oven and let cool slightly before serving.

Steps:

  • Heat oven to 375 degrees Fahrenheit.

2 cups milk, plus up to 1/2 cup more if needed
2 teaspoons powdered chicken soup base/chicken bouillon
1 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
2 cups shredded Colby-Jack blend
4 ounces cream cheese
2 cups shredded sharp Cheddar cheese (white or yellow)
1/2 recipe Andouille Dressing, recipe follows, chilled (1 springform pan)
Nonstick cooking spray, for the skillet and springform pans
1 cup milk
4 tablespoons (1/4 cup) unsalted butter, melted
2 large eggs
1 1/4 cups yellow cornmeal
1 cup all-purpose flour
1/2 cup turbinado sugar
1 tablespoon baking powder
Kosher salt
Canola oil, for coating the pan
12 ounces andouille sausage, finely diced
1 white onion, finely diced
1 green bell pepper, finely diced
1 stalk celery, finely diced
1 garlic clove, chopped
1 1/4 teaspoons ground sage
1 teaspoon powdered chicken soup base/chicken bouillon
1/4 teaspoon freshly ground black pepper
3/4 to 1 cup chicken broth

Steps:

  • Cook the macaroni according to the package instructions until al dente. Drain and set aside.
  • Preheat the oven to 375 degrees F.
  • In a heavy-bottomed saucepan over medium heat, melt the butter. Add the flour, whisk until a paste is formed and cook for 1 minute. Slowly add 1/4 cup of the milk at a time, whisking constantly, until you've added 2 cups. Whisk in the soup base or bouillon, garlic powder and pepper.
  • Slowly add the Colby-Jack blend, cream cheese and 1 cup of the Cheddar cheese, making sure the cheese melts between each addition. When the cheese is completely melted, check for consistency; add up to an additional 1/2 cup milk if needed. Stir to completely combine.
  • In a large mixing bowl, combine the drained macaroni and 2 cups of the cheese sauce. Transfer the macaroni mixture to the chilled springform pan of Andouille Dressing, spreading and packing the contents evenly. Spread 1/2 cup of the cheese sauce over the top with the remaining 1 cup shredded Cheddar.
  • Bake until heated through, about 35 minutes. Turn the oven to broil and broil until the top is crisped, another 5 to 7 minutes. Let stand for 15 minutes before removing from the pan and serving.
  • Preheat the oven to 400 degrees F. Spray a 10-inch cast-iron skillet with cooking spray.
  • To make the cornbread, add the milk, butter and 1 of the eggs to a large mixing bowl and whisk together. Add the cornmeal, flour, sugar, baking powder and a pinch of salt and stir to combine; the batter should look lumpy. Transfer the batter to the greased skillet and bake until golden brown on top, 22 to 25 minutes. Let cool. Keep the oven at 400 degrees F.
  • Meanwhile, lightly grease two 9-inch springform pans with cooking spray.
  • Put a pan over medium-high heat and add just enough oil to coat the bottom. Add the sausage and cook until crisp around the edges, 5 to 7 minutes. Using a slotted spoon, transfer the sausage to a paper towel-lined plate to drain. To the same pan, add the onion, green pepper, celery and garlic and cook until the veggies are tender, 5 to 7 minutes.
  • Crumble the cooled cornbread into a large mixing bowl. Add the cooked veggies and sausage and mix together gently. Beat the remaining egg in a small bowl. Add it to the cornbread mixture with the sage, soup base or bouillon, pepper and 1/4 teaspoon salt; mix together gently. Add the broth 1/4 cup at a time until the dressing reaches the desired consistency. It should be loose but not runny--3/4 to 1 cup will be plenty.
  • Transfer the dressing to the prepared springform pans. Bake until cooked through, 25 to 30 minutes. Let cool completely.

Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoons in pan. , Drain macaroni; add macaroni to drippings. Stir in shredded cheeses and cream cheese; cook and stir over medium heat until cheese is melted, 2-3 minutes. Steps:

  • In a large pot, boil the pasta for about 7 minutes, until al dente. While pasta is cooking, assemble the sauce in a deep saucepan.
  • Place butter in the saucepan and let melt. Add flour and mustard to butter and cook, whisking constantly for about 5 minutes over medium-low heat. Add milk and dried spices. Simmer for about 10 minutes, whisking constantly until mixture thickens. Add 3/4 of the cheese and let it melt.
  • Add the pasta to the pan and mix thoroughly. Place mixture into a greased oven-safe 2- to 3-qt. casserole dish. Top with remaining cheese.
  • Crumble the cornbread muffins into small pieces resembling bread crumbs and mix with about 2 Tbsp. melted butter. Place buttered muffin crumbs on top of cheese.
  • Bake in a preheated 350-degree oven for 30-40 minutes or until bubbly and golden.

1 cup buttermilk
2 large eggs
1/2 cup 1/2-inch cubes Cheddar, plus 1 cup shredded

5 garlic cloves, minced
3 tablespoons flour (whole wheat flour works here)

4 cups grated cheese (cheddar, colby jack, mozzarella, etc ... a combination works best)
1 teaspoon seasoning salt

1 medium onion (chopped)
1 jar (14 ounces roasted red peppers, drained and chopped)
1 can (4 ounces fire-roasted chiles)
1 can (15 ounces diced tomatoes (with their liquid))
1 can (15 ounces whole kernel sweet corn, drained)
1 teaspoon ground cumin
2 tablespoons chili powder
2 teaspoons kosher salt
1 teaspoon black pepper
2 cups dried pasta (elbow mac or cavatappi)
3 cups beef broth or stock
1½ cups shredded cheddar cheese
2 boxes (8.5 ounces cornbread mix (made according to the package directions))
½ cup chopped scallions (garnish if desired)

Steps:

  • Preheat oven to 400-degrees.
  • In large bowl, prepare the cornbread mix according to the package directions. Set aside.
  • In a large stockpot or Dutch oven over medium-high heat, brown the ground beef until no longer pink.
  • Reduce the heat to medium and add the chopped onion, red peppers, fire-roasted chiles, canned corn, tomatoes (with their juice), cumin, chili powder, salt, and pepper.
  • Bring the mixture to a simmer, and cook, stirring occasionally for 3-5 minutes.

  • Spoon the waiting cornbread mixture evenly over the chili mac and cheese.
  • Bake in a preheated 400-degree oven for 30 minutes, or until the cornbread crust is golden and when a toothpick inserted in the center of the crust comes out clean.
  • Cool for 10 minutes before serving.
  • Garnish with chopped scallions if desired.

  • Finely chop the shallot and mince the garlic. In a large pot, melt the butter. Add the shallot and garlic and cook for just a minute or two. Whisk in the flour, this will become a paste. Season generously with salt and pepper. Then slowly whisk in the milk and stock so it incorporates well (you don't want a bunch of chunks of flour paste floating in the mixture). Then stir in 10 ounces of the shredded cheese. Once it begins to look melted, or mostly melted (sort of stringy on your mixing spoon), then stir in the noodles.
  • Add this mixture to a greased casserole pan (9x13 or close to that size if it's a different shape, like an oval). Sprinkle with salt and pepper, then top with the remaining cheese and stuffing topping. Cover with aluminum foil and bake at 350°F for 10 minutes. Then remove the aluminum foil from the top and bake another 15 minutes until golden brown and the edges begin to bubble.
