- To make the dough: Mix and knead together all of the dough ingredients¬-by hand, mixer or bread machine-till you've created a smooth, very soft, fairly sticky dough. Don't over-knead the dough; it should hold together, but can still look fairly rough on the surface. Allow the dough to rise, covered, for 45 minutes; then refrigerate it for 4 hours (or up to 36 hours); this step will develop the crust's flavor. Make sure you have the dough in a large covered bowl, or put it into a large, lightly greased plastic bag; leave plenty of room for expansion. Remove the dough from the refrigerator, and allow it to rest and warm up a bit while you prepare the toppings. To assemble and bake the pizza: Gently stretch and pat the dough into the pan(s). You'll probably get about two-thirds of the way there before the dough starts shrinking back; walk away for 10 minutes. When you come back, you should be able to pat it all the way into the corners of the pan, or close to it. Allow the dough to rise for 30 minutes to an hour (or more, for thicker crust). Preheat the oven to 450°F. Spread the sauce in a thin film over the crust. Bake the pizza on the lower oven rack for 8 minutes. Remove it from the oven, and arrange your choice of toppings and cheese on top. Return to the oven, and bake on the upper oven rack for an additional 12 to 15 minutes, until the crust is nicely browned, both top and bottom. Check it midway through, and move it to the bottom rack if the top is browning too much, or the bottom not enough. Remove the pizza from the oven, and transfer it from the pan(s) to a rack to cool slightly before serving. For easiest serving, cut into squares with a pair of scissors. Yield: a dozen generous slices.
KING PAPAS (AKA COPYCAT QUE PAPAS)
My DH loves Pizza Hut's Que Papas, so we had to find a way to make our own. These are patties, rather than a "tater tot" shape, but really good, nonetheless. My DS thought we were saying "king" instead of "que", thus the name.

Steps:
- In a large bowl, mix together hash browns, eggs, jalapenos, and cheese.
- Add 1/4 cup of flour and mix well. If mixture is still too runny to hold together, gradually add more flour until it will (you should be able to form a patty with the mixture).
- Heat 1/2 inch of oil in a large skillet over medium heat.
- Take 1 heaping tablespoon of potato mixture and form into pattie. Place into a bowl of bread crumbs and turn to coat.
- Gently place patty into hot oil and fry until golden brown. Drain on brown paper bag and sprinkle with salt, if desired.
- Continue making patties as directed above until all mixture is used.

PIZZA HUT ORIGINAL PAN PIZZA

- Combine sauce ingredients and let sit for 1 hour.
- Put yeast, sugar, salt, and dry milk in a large bowl.
- Add water and stir to mix well.
- Let rest for two minutes.
- Add oil and stir again.
- Add flour and stir until dough forms and flour is absorbed.
- Turn out on to a flat floured surface and knead for about 10 minutes, adding more flour as needed, until elastic and no longer sticky.
- Divide dough into three balls.
- Put 3 ounces of oil in each of three 9-inch cake pans, making sure it is spread evenly.
- Using a rolling pin, roll out each dough ball to about a 9-inch circle.
- Place in cake pans.
- Spray the outer edge of dough with Pam and cover with a plate.
- Place in warm area and allow to rise for 1 to 1 1/2 hours.
- Preheat oven to 475°F.
- For each 9" pizza, spoon 1/3 cup sauce on dough and spread to within 1-inch of edge.
- Distribute 1 1/2 ounces shredded mozzarella cheese on sauce.
- Place toppings of your choice in this order: Pepperoni or ham, vegetables, meats (cooked ground sausage or beef) Top with 3 ounces mozzarella cheese.
- Cook until cheese is bubbling and outer crust is brown.
- Serve hot.
