2 packages Tyson Grilled and Ready Breast Fillets
1/2 cup diced oil-packed sundried tomatoes
1/2 cup halved, pitted Kalamata olives
1/3 cup chopped fresh basil
2 tablespoons fresh lemon juice
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
Pinch salt and ground black pepper

Steps:

  • 1. Cook orzo pasta according to package directions. Drain and transfer to a large bowl.
  • 2. Fold in chicken, sundried tomatoes, olives, basil, lemon juice, olive oil and Parmesan cheese.
  • 3. Season to taste with salt and ground black pepper.

1 1/2 cups reduced-sodium chicken broth
2/3 cup orzo, preferably whole wheat
1 lemon, peeled and cut into chunks
1 tsp dried oregano
40 pitted kalamata olives, chopped (about 1 1/3 cups)
2 cups baby spinach
1 tomato, seeded and chopped
1/2 cup sliced roasted red pepper
1/4 cup crumbled feta cheese

Steps:

  • 1.) heat a nonstick skillet coated with cooking spray over medium heat. Add the chicken and cook, turning once, for 6 minutes or until browned. Remove to a plate. 2.) Add the broth and bring to a boil over high heat. Stir in the orzo, lemon, and oregano. return the chicken to the skillet. reduce the heat to med-low, cover, and simmer for 10 minutes or until the orzo is tender and a thermometer inserted in the thickest portion of the chicken registers 165 degree F. 3.) Stir in the olives, spinach, tomato, and pepper. Cook for 2 minutes, stirring, to heat through. Sprinkle with the cheese.

2 cups reduced-sodium chicken broth
2 medium tomatoes, finely chopped

1 small red onion, finely chopped
1 tablespoon grated lemon zest
3 tablespoons lemon juice

6 boneless chicken thighs (skin removed)
250 g orzo
1 stick celery (diced)
1 carrot (diced)
1 tsp salt
1 onion (diced)
1.5 tsp paprika
4 mushrooms (roughly sliced)
6 cloves garlic (left whole)
1 handful cherry tomatoes
1 lemon (juice only)
500 ml chicken stock (made with 1 chicken stock cube and boiling water)
1 handful flat-leaf parsley leaves (roughly chopped)
1.5 tsp ground allspice
0.5 tsp ground turmeric
low calorie cooking spray

Steps:

  • Coat the chicken thighs in the paprika, ground allspice, turmeric and salt and leave for 10 mins. In the meantime chop the vegetables.
  • Spray a large pan with some low calorie cooking spray and heat gently.
  • Cook the chicken thighs until they start to brown. Turn them over and brown the other sides.
  • Set the chicken aside.
  • Add a few more sprays of low calorie cooking spray to the pan, then fry off the onion, carrot, celery, garlic and mushrooms until the onion is soft.
  • Add the tomatoes, lemon juice and 100ml of the chicken stock. Return the chicken back to the pan and place in the oven with a lid on (or covered with foil) for 30 mins at 180°C.
  • Carefully remove the pan from the oven, add the orzo, parsley and the rest of the stock, stir, and return to the oven for 20 mins with the lid off

6 bone-in skinless chicken thighs (2-1/4 lb.)
1 jar (24 oz.) CLASSICO Florentine Spinach & Cheese Pasta Sauce
1 can (14.5 oz.) fat-free reduced-sodium chicken broth
1 cup orzo pasta, uncooked
2 cloves garlic, minced
1/2 tsp. dried oregano leaves
12 pitted Kalamata olives, halved
1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese

Steps:

  • Cook and stir bacon in Dutch oven or large deep skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon, reserving 2 Tbsp. drippings in Dutch oven. Drain bacon on paper towels.
  • Add chicken to reserved drippings; cook 5 min. on each side or until lightly browned. Drain fat. Add pasta sauce, broth, pasta, garlic and oregano; mix well. Bring to boil; cover.
  • Cook on low heat 25 to 30 min. or until chicken is done (165°F) and orzo is tender. Stir in reserved bacon and olives. Serve sprinkled with cheese.

1 tbsp olive oil
1 tbsp freshly squeezed lemon juice
1 tsp dried oregano
1 clove garlic, minced
1/2 tsp salt
1/4 tsp freshly ground black pepper
YOGURT CHEESE
1 1/4 cups fat-free Greek-style yogurt
1/2 cup shredded cucumber
1 tsp chopped fresh dill
2 cloves garlic minced
1/2 cup shelled pistachios coarsely chopped, divided

Steps:

  • 1.) To prepare the chicken: Place a breast shiny side up with the tip facing you and the thinner side opposite your cutting hand. Place your hand on top of the breast. Hold the knife parallel to the table and carefully insert it into the thickest part of the breast, drawing it almost all the way through. Take care to keep the breast attached on 1 side. Spread the 2 halves as if opening a book and press lightly in the center to flatten. Repeat with the other 3 breast halves. 2.) Combine the chicken, oil lemon juice, oregano, and garlic in a bowl and refrigerate for 1 to 2 hours, turning occasionally. 3.) To prepare the yogurt cheese: Meanwhile, place the yogurt in a coffee strainer over a bowl and set in the refrigerator for 1 to 2 hours. combine the yogurt, cucumber, dill, garlic and 1/4 cup of the pistachios. 4.) Set up the grill for med-hot direct-heat grilling. Remove the chicken from the marinade. Sprinkle with the salt and pepper and set on a grill rack that has been coated with oil. Grill for 2 to 3 minutes per side or until the chicken is well marked and cooked through. Place each breast on a serving plate, top with the yogurt cheese, and sprinkle with the remaining 1/4 cup pistachios.
