Nonstick cooking spray, for the pan
2 1/4 cups all-purpose flour
1 1/2 cups granulated sugar
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1 cup buttermilk
1 cup speculoos spread
1/2 cup canola oil or other neutral oil
1 tablespoon vanilla extract
2 large eggs
2 sticks (1 cup) unsalted butter, softened
1/2 cup speculoos spread
1 cup powdered sugar
1 teaspoon vanilla extract
1/8 teaspoon kosher salt
Brown gel food coloring, optional
Shredded coconut, fresh rosemary sprigs and mini candy canes, for decorating, optional

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking pan with nonstick cooking spray and line the bottom with parchment.
  • In a large bowl, whisk together the flour, granulated sugar, baking soda, baking powder and salt. In a separate medium bowl, whisk together the buttermilk, speculoos, oil, vanilla, eggs and 3/4 cup water. Add the wet ingredients to the dry ingredients and stir to combine.
  • Pour the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean. Begin checking for doneness at 28 minutes. Allow to cool completely.
  • For the frosting: In the bowl of a stand mixer fitted with a paddle attachment, mix together the butter and speculoos until creamy. Gradually add the powdered sugar and mix to combine. Mix in the vanilla and salt. Mix in the food coloring if desired until combined.
  • Use an offset spatula to frost the top of the cake in the pan. If desired, sprinkle the top of the cake with shredded coconut for snow, then decorate with rosemary sprigs for trees and mini candy canes.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Sift the flour together with the soda, salt, and cinnamon. Stir in the oats. Combine the other ingredients and add them to the flour mixture, stirring thoroughly.

1 cup chopped nuts
Confectioners' sugar icing, optional

Steps:

  • In a small saucepan, combine raisins and water; bring to a boil. Drain; reserve 1 cup liquid and set raisins aside. , In a bowl, cream shortening and sugar; add eggs. Add baking soda to raisin liquid. Sift together flour, nutmeg, cinnamon and salt; add alternately with raisin liquid to creamed mixture. Stir in raisins and nuts. Spread in a lightly greased 15x10x1-in. baking pan. , Bake at 350° for 25-30 minutes. If desired, glaze with confectioners' sugar icing while hot. Cut while warm.

1 cup water
1 cup butter, softened
1-1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
4 cups all-purpose flour

1/2 teaspoon ground cinnamon
1/2 cup chopped pecans

Steps:

  • In a small saucepan, combine the raisins and water. Bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes. Set aside to cool. In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda, baking powder, salt and cinnamon; gradually add to creamed mixture. Stir in pecans and raisins with liquid., Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 12-15 minutes or until lightly browned. Remove to wire racks to cool.

1 1/2 cups raisins
1 1/4 cups boiling water
1 cup butter or 1 cup margarine, softened
1 1/2 cups sugar
2 eggs
3 1/2 cups all-purpose flour
2 teaspoons ground cinnamon
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 1/2 cups confectioners' sugar
1 tablespoon butter or 1 tablespoon margarine, softened
3 -4 tablespoons milk

Steps:

  • In a small bowl, soak raisins in boiling water for 5 minutes.
  • Drain, reserving 1 cup liquid; set raisins and liquid aside.
  • In a large mixing bowl, cream butter and sugar.
  • Add eggs and mix well.
  • In another bowl, combine flour, cinnamon, baking soda and salt; add to creamed mixture alternately with the reserved raisin liquid.
  • Fold in raisins by hand.
  • Pour into a greased 15" x 10" x 1" pan.
  • Bake at 375F for 15-20 minutes, or until a toothpick comes out clean.
  • Cool for 5 minutes.
  • Meanwhile, combine glaze ingredients in a small bowl.
  • Pour over warm cake, and spread evenly.
  • When cool, cut into bars.
