1 cup packed brown sugar
1 ¼ cups water
⅓ cup shortening
¼ teaspoon ground cloves
½ teaspoon ground nutmeg
2 teaspoons ground cinnamon
2 cups raisins
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • In a saucepan, combine brown sugar, water, shortening, cloves, nutmeg, cinnamon and raisins. Bring to a boil, and continue boiling for 3 minutes. Remove from heat and allow to cool.
  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour an 8x4 inch loaf pan. Sift together flour, baking powder, baking soda and salt.
  • In a large bowl, combine the raisin mixture with the flour mixture. Pour into prepared pan.
  • Bake at 325 degrees F (165 degrees C) for 55 minutes, or until toothpick inserted into cake comes out clean.

1 large egg

Steps:

  • Place the raisins in a bowl; cover with boiling water. Let stand for 5 minutes; drain and set aside., In a small bowl, cream butter and brown sugar. Add egg and vanilla; beat just until blended. Combine the flour, baking powder and salt; add to creamed mixture. Stir in raisins. , Pour into an 8x4-in. loaf pan coated with cooking spray. Combine sugar and cinnamon; sprinkle over batter. Bake at 325° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

1/2 cup shortening
2 tablespoons molasses
2 cups all-purpose flour
1 teaspoon baking soda

Steps:

  • In a bowl, cream the sugar and shortening. Beat in molasses until blended; set aside. Sift together flour, baking soda, cinnamon, cloves and salt; add to creamed mixture alternately with applesauce, beating well after each addition. Stir in raisins., Pour into a greased and floured 10-in. tube pan. Bake at 350° until a toothpick comes out clean, about 45 minutes. Cake will not rise to top of pan. After 10 minutes, remove cake from pan and cool on a wire rack.

Beat in eggs and vanilla until well blended. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. This recipe was in a box of loose recipes I'd cut out of magazines and newspapers. I'm posting it here so it won't get lost. See NOTE at bottom of recipe if you don't have pastry flour. UPDATE-- Made this today. It didn't rise much, maybe it's not supposed too. I did use pastry flour. The flavor is wonderful. I dropped the salt down to 1/2 teaspoon, and used butter instead of shortening. There's less than 1/2 left it was so tasty.

1/2 cup shortening
1 teaspoon salt

  • NOTE--It can be a challenge to find pastry flour. Even well-stocked supermarkets seldom carry more varieties than cake flour, all-purpose flour (9% to 12% protein), and bread flour. If you can't find pastry flour, you can mix your own by combining cake flour and all-purpose flour in a ratio somewhere between two parts cake flour to one part all-purpose and one part cake flour to one part all-purpose.

ALMOND RAISIN CAKE WITH SHERRY

250g raisin
200ml medium or sweet sherry (try using Amontillado or Pedro Ximénez)
150ml thick natural yogurt
150ml vegetable oil
3 eggs
140g plain flour
100g ground almond
2 tsp baking powder
100g light muscovado sugar
icing sugar , to serve

Steps:

  • Tip the raisins into a bowl, pour over the sherry, then leave for at least 30 mins to soften. Meanwhile, heat oven to 180C/ fan 160C/gas 4. Lightly grease a deep 20cm round cake tin, then line the bottom with a circle of greaseproof paper.
  • Mix together the yogurt, oil and eggs. Put the remaining dry ingredients into a large bowl, pour in the yogurt mixture, then stir together until smooth. Scoop half the raisins out of the sherry, then stir into the batter. Spoon into the prepared tin and smooth the surface with a spoon. Cook in the oven for 50-55 mins until the top springs back when pressed lightly and a skewer inserted into the middle of the cake comes out clean.
  • Take a skewer and prick all over the cake. Pour over 5 tbsp of the soaking sherry and let it soak in. You can make up to this point 3 days in advance and store in an airtight container. Serve warm or leave to cool, then dust with icing sugar. Warm the rest of the soaked raisins and sherry, then serve alongside the cake with some vanilla ice cream.

My mom always made this cake at Christmas time. She would cut it in bar size pieces and put it with the Christmas cookies. It was always one of my favorites, and my dad's as well. Don't over bake and make sure you keep it in a air tight container until you are ready to eat. Measurements for the frosting are approximates. Only add enough water to make the glaze easily spreadable. These can be frozen for a couple weeks.

Meanwhile, heat the oven to 350 degrees, and grease the pan. Put the flour, baking soda, cinnamon, and nutmeg into a large bowl. Stir to mix well. Stir the eggs into the oat mixture. Add the flour mixture, and stir just until moistened. RAISIN BAR SHEET CAKE

This is my mother's recipe from when we were kids, and the first recipe I prepared solo as a child. My mother's old cookbook still bears the traces of a cooking mishap. I had a little problem with the hot water and a metal bowl. Needless to say, don't pick up a metal bowl with boiling water in it -- it's HOT. Icing the cake while slightly warm is essential, the icing goes on much easier and forms a nice glaze. It's very moist cross between a bar and a cake.

Mixed Spice:
1 tablespoon coriander seeds
1 two-inch cinnamon stick, crushed
1 teaspoon whole cloves
1 teaspoon allspice berries
1 tablespoon ground nutmeg
2 teaspoons ground ginger
2 1/4 cups water
3 cups raisins
8 tablespoons (1 stick) cold butter, cut into small pieces
1 cup sugar
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 egg, beaten

Steps:

  • The day before baking, make the mixed spice: In a spice grinder, combine the coriander seeds, cinnamon, cloves, and allspice. Grind until powdery. Pour into an airtight container. Add nutmeg and ginger and mix well. Measure out 1 level tablespoon and store the remainder in a cool place for later use.
  • Combine the mixed spice with the water, raisins, butter, and sugar in a medium saucepan. Bring to a boil, then reduce heat and simmer for 20 minutes. Remove from heat and let cool completely. Cover and refrigerate overnight.
  • The next day, let the raisin mixture sit at room temperature for 1 hour. Preheat the oven to 350°F. Generously grease a 9-inch round cake pan.
  • Sift the flour, baking soda, and salt together into a large bowl. Stir in the raisin mixture and blend well. Stir in the egg. Pour into the prepared pan. Place on the center rack of the oven with a pan of water. Bake until the cake is lightly browned and a skewer inserted into the center comes out clean, about 1 1/4 hours.

BOILED RAISIN CAKE (CANADIAN WAR CAKE)

This is called War Cake because it was made in Canada during WW2 and was shipped out to the troops serving overseas. My grandmother used to make this cake and let it sit for at least a week before slicing into it. But, this recipe I found in a local fundraising cookbook, calls for it sitting for only one day before slicing it up. Just as yummy as grandmas.

  • Bake at 350 degrees Fahrenheit for 1 hour.
  • Allow cake to cool in pan for 10 minutes.

2 1/2 cups jumbo raisins (15 ounces)
2 cups dried currants (10 ounces)
2/3 cup chopped candied orange peel* (4 ounces)
3/4 cup packed dark brown sugar
3/4 cup granulated sugar
1 teaspoon freshly grated nutmeg
1/2 stick (1/4 cup) unsalted butter plus additional for greasing
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/8 teaspoon salt
Special Equipment
a 10-inch tube pan (4 1/2 inches high; without a removable bottom)

Steps:

  • Gently boil coffee, raisins, currants, orange peel, sugars, nutmeg, and butter over moderate heat, uncovered, in a 3-quart heavy saucepan, stirring occasionally, 5 minutes. Cool mixture to room temperature, stirring occasionally, about 1 hour.
  • Put a small roasting pan filled halfway with hot water on rack in lowest position in oven (to provide moisture during baking). Put remaining oven rack in middle position and preheat oven to 350°F. Generously butter tube pan.
  • Whisk together flour, baking powder, baking soda, and salt in a bowl, then stir into raisin mixture until combined well. Spoon batter into tube pan and smooth top. Bake in middle of oven until a wooden pick or skewer inserted in center of cake comes out clean, about 1 1/2 hours.
  • Cool cake completely in pan on a rack, about 2 1/2 hours, then turn out onto a serving plate.

Cake with a difference. You do not have to cream butter and sugar or beat the eggs. This involves boiling raisins, margarine and sugar together and adding flour to it. Simple and tasty. Just the way I love it.

1 cup turbinado sugar
1 cup raisins
1 cup unsalted butter
1 cup water
1 ½ cups whole wheat flour
1 pinch ground cinnamon
1 teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 7x7 inch square baking pan.
  • Boil sugar, raisins, butter, and the water until the raisins absorb most of the water and are quite soggy and mushy. Set aside and let cool completely.
  • Sift the flour, cinnamon, and the baking powder together. Stir the flour mixture into the raisin mixture and mix until just combined. Spread the batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 40 to 45 minutes or until cake springs back upon the touch. Immediately put on a wire rack to cool. This is a very soft cake, liable to break easily. Take care when you cut the cake.

This is a great fall cake because of all the spices. I used to make this everyear for my dads birthday in October. If I'm not mistaken, this is a Hellman's Mayonnaise recipe.

2 cups sugar
1 cup mayonnaise
1/3 cup milk
2 eggs
2 teaspoons baking soda
1 1/2 teaspoons cinnamon

1/4 teaspoon clove
3 cups apples, peeled and chopped
1 cup raisins
1/2 cup walnuts
2 cups Cool Whip

Steps:

  • Grease& flour 2 (9") round pans.
  • In a large bowl with mixer at low speed, beat first 10 ingredients for 2 minutes.
  • Stir in apples, raisins& nuts by hand.
  • It will be very stiff.
  • Pour into pans.
  • Bake at 350 for 45 minutes.
  • Let cool (if you don't the cool whip will run).
  • Frost with cool whip.

  • Spray a 9 x 5 loaf pan with cooking spray and bake in preheated 350 degree oven for 50 to 55 minutes until center tests done. Can add your favorite frosting or a glaze. I usually just sprinkle on some powdered sugar. Keeps well in an airtight container for several day. I don't refrigerate. Can be reheated in oven or microwave. Makes 1 loaf
