Steps:
- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and extracts. Combine flour, baking soda and cream of tartar; gradually add to the creamed mixture and mix well. Chill for at least 1 hour or until easy to handle. , Divide dough into fourths. On a surface lightly sprinkled with confectioners' sugar, roll out 1 portion of dough to 1/8-in. thickness. Cut into desired shapes using 2-in. cookie cutters. Place on ungreased baking sheets. Repeat with remaining dough. Bake at 350° for 7-8 minutes or until the edges begin to brown. Remove to wire racks to cool.

Steps:
- Mix dry ingredients in separate bowl.
- Using stand mixer or hand mixer, beat butter and sugar until fluffy.
- Beat in eggs one at a time, scraping down bowl each time, then vanilla and/or almond extract.
- Add flour mixture gradually and mix at low speed until comes together.
- Turn out onto flat surface.
- Knead a couple of times just until smooth.
- Pat into a flat disk, wrap in plastic and chill until firm enough to roll, about one hour.
- Roll and cut as desired.
- Bake at 350 about 8-10 minutes on parchment-lined sheets.

- Wrap dough in plastic; chill for about 30 minutes.
- Preheat oven to 350 degrees F.

- Transfer to ungreased baking sheets; refrigerate until firm, 15 minutes.

- Mix powdered sugar, margarine, egg, vanilla.
- Stir in flour, baking soda, and cream of tartar.
- Cover and refrigerate at least 3 hours.
- Heat oven to 375 degrees F.
