APPLESAUCE OAT MUFFINS
My family loves these easy and delicious Applesauce Oat Muffins. They make the perfect healthy snack and they're freezer-friendly, too!

Steps:
- Preheat oven to 375 degrees F. Line a 12-cup muffin tin with liners or grease with non-stick cooking spray. Set aside.
- In a medium bowl, stir together the oats, applesauce, milk, egg, vanilla, butter and sugar.
- In a large bowl, mix the flour, baking powder, baking soda, cinnamon, salt and cranberries or raisins.
- Make a well in the center of the dry ingredients and pour in the applesauce mixture. Stir just until combined (don't overmix!)
- Spoon the batter evenly into the muffin cups. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Don't over-bake or the muffins will be dry. Remove them to a cooling rack. Cool completely before freezing in a ziplock freezer bag.

- Combine the oats and the milk in a small bowl. Let it sit for an hour.
- Heat the oven to 400ºF.
- Prepare a 12-cup muffin pan by spraying with nonstick cooking spray.
- In a large bowl, combine the applesauce, egg and vanilla extract. Stir in the oat mixture.
- Add the melted butter and stir to combine.
- Add the flour, brown sugar, baking powder, cinnamon, baking soda and salt. Stir just until combined.
- Divide the mixture evenly between 12 cups, about 2/3 full.
- Sprinkle the 1 teaspoon of sugar over the tops of the the muffins.
- Bake until the muffins are cooked through and a toothpick inserted in the top comes out clean, about 14 minutes.

- Preheat the oven to 425°F.Prepare a muffin pan by spraying with nonstick spray.
- In a large bowl, whisk the egg. milk, melted butter, applesauce, and vanilla, then stir in the oats.
- In a medium bowl, mix the flour, baking soda, baking powder, sugar, cinnamon and salt.
- Combine the wet ingredients, dry ingredients chocolate chips and raisins until just mixed.
- Evenly distribute the batter in the prepared muffin pan.
- Top the batter with a sprinkle of sugar on each muffin.
- Bake at 425°F for 5 minutes, then lower the temperature to 350°F. Continue baking for about 15 minutes or until a toothpick inserted into the center of the muffin comes out completely dry.
- Cool in the pan for 5 minutes, before transferring to a wire rack to finish cooling.

- Mix all topping ingredients together by rubbing with fingers, set aside. (I got a little lazy and melted the butter, as a shortcut from having to soften my rock hard butter!) In a large bowl, mix your flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together your eggs, applesauce, oil, and vanilla. Mix it well. Add applesauce mixture to flour mixture, stir till wet. With an ice cream scoop, fill each each muffin well about 2/3 full. (You an also bake as a cake, or as smaller muffins). Sprinkle topping over batter. Bake at 350°F for approximately 25 minutes.

- Line 12 medium muffin tins with paper cups(optional)(spray muffin tin with cooking spray w/o paper cups).

BLUEBERRY OATMEAL APPLESAUCE MUFFINS
These muffins are not only delicious, but very low in fat and heart-healthy. The oats and flaxseed meal add fiber and whole grains for a filling and delicious breakfast or snack, while the applesauce takes the place of egg, butter, or cream that you might find in other muffin recipes. You can make this recipe vegan by omitting the egg and using soymilk as a substitute for milk (I use Lactaid milk to make it dairy-free). To make it sugar-free, substituting Splenda for the small amount of sugar is just as good! A pecan half on top of the muffin adds a visually-appetizing touch while adding a slight crunch to a moist and filling muffin!

- Remove pan from the oven and allow to cool for 5 minutes before removing muffin-tops to wire rack to cool.

- Preheat an oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper muffin liners. Whisk together 1 1/2 cups oatmeal, the flour, baking powder, baking soda, and 1/8 teaspoon of cinnamon in a mixing bowl; set aside.
- Whisk 1/2 cup brown sugar, egg white, applesauce, and milk together in a mixing bowl until smooth. Stir in the flour mixture until evenly moistened; it's ok if small, dry lumps remain. Pour the batter into the prepared muffin tin. Stir the 1/4 cup oatmeal, 1/4 cup brown sugar, 1 tablespoon cinnamon, and the melted butter in a small bowl; sprinkle this mixture over the muffins.
