BEEF & BROCCOLI STIR-FRIED NOODLES
There are many variations of beef and broccoli--it can be served with just about any type of sauce. This version is ready quickly and can be made in a skillet instead of a wok. Just be sure to prep all the elements in advance-once you start cooking, there's no time for chopping or slicing! It's kept simple with minimal ingredients and also utilizes ones you may already have in your pantry, like dried ramen noodles. You can swap the NY strip steak for rib eye or sirloin.

- Bring a pot of water to a boil and season generously with salt. It should be as salty as the sea. Prepare an ice bath and season generously with salt. Add the broccoli florets to the boiling water and cook for 2 to 3 minutes until bright green and tender, but still slightly crisp. Remove the broccoli and immediately plunge into the ice bath and set aside, but reserve the boiling water for the noodles later.
- Heat 2 tablespoons of the canola oil in a large saute pan over medium-high heat until it shimmers. Season the steak with salt. Add the steak in batches to the pan and cook, turning occasionally, until brown and crispy, 2 to 3 minutes. Remove the steak from the pan and set aside. Repeat with remaining steak.
- To the same pan, add the remaining 2 tablespoons canola oil. Add the scallion whites, garlic, ginger, onions and rice wine vinegar. Saute for 1 to 2 minutes. Add the oyster sauce, chicken stock and chili paste and stir to combine.
- To the same pot of boiling water, add the noodles and cook according to package directions. Using tongs, remove the noodles and add directly into the saute pan with veggies. Add the broccoli florets and steak and toss to combine, ensuring the noodles, steak and broccoli are fully coated in the sauce. Mix in the broccoli stems. Plate and garnish with reserved scallion greens.
BEEF AND BROCCOLI
Steps:
- Microwave the broccoli in a glass bowl covered with plastic wrap (holes poked for ventilation), about 1 to 2 minutes.
- In a small bowl, whisk together the soy sauce, sesame oil, 1 teaspoon cornstarch and baking soda. Slice the beef against the grain into thin strips and add it to your marinade. Let it sit for at least 20 minutes, or as long as overnight in the refrigerator.
- In a separate small bowl, stir together the stock, rice wine, oyster sauce and remaining 1 teaspoon cornstarch until the cornstarch is fully dissolved.
- Heat a wok or large skillet on high heat and add the oil. When a wisp of white smoke appears, toss the marinated beef and garlic into the pan. Cook for about 1 minute, continually moving the beef so it browns on all sides but is still rare. Once the beef is seared, add the broccoli and cook for an additional minute. Stir in the sauce and keep it all moving. Don't be afraid to scrape any bits off the bottom of the pan before they start to burn. Once the sauce has turned into a nice thick glaze, about 1 minute, serve immediately.

- 1. Heat oil in large nonstick skillet over medium-high heat and cook steak, stirring frequently, 6 minutes or until almost done. Remove steak; keep warm.
- 2. Add Recipe Ready Broccoli Stir Fry and continue cooking, stirring frequently, 4 minutes or until vegetables are tender. Add back steak and stir-fry sauce and cook, stirring frequently, 2 minutes or until heated through.**
- 3. Serve over prepared rice and sprinkle, if desired, with chopped peanuts.

- **Cook steak to an internal temperature of 145°F as measured with a food thermometer; let rest 3 minutes.
BEEF AND BROCCOLI STIR FRY OVER NOODLES
Any leftovers cooked vegetables will work in this simple recipe, but broccoli is a classic.Ready cooked stir fry noodles make the dish extra quick to parepare; look for them in the produce section of your supermarket, usually near the Asian vegetables. Or you can substitute 2 cups cooked Chinese wheat noodles, spaghetti, or brown rice instead. This recipe is a 5 point value. I found this recipe in Weight Watchers magazine. I have not tried this recipe, but I'm posting it for safe keeping.

- Combine the teriyaki and hoisin sauces and the crushed pepper in a large zip-close plastic bag. Add the steak; squeeze out the air, seal the bag and turn to coat the meat. Refrigerate, turning the bag occasionally, at least 20 minutes or up to 2 hours.
- Rinse the noodles in a colander under warm water to loosen; set aside.
- Heat the oil in a nonstick wok or large skillet. Add the scallions, bell pepper, and garlic. Stir fry until tender, about 8 minutes. Add the noodles and water and cook, stirring, 1 minute. Stir in the beef with it's marinade and the broccoli; bring to just below boiling and simmer 2 minutes. Serve at once.

THE BEST EASY BEEF AND BROCCOLI STIR-FRY
I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

Steps:
- In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
- Add beef and toss.
- In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
- Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
- Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
- Cook and stir for 2 minutes.
- Serve over rice and garnish with toasted sesame seeds (optional).

- In a mixing bowl, mix together soy sauce, pepper, Sambal Oelek, sesame oil and corn starch.
- Add sliced beef, coat well and let marinate for 15 minutes.
- In a WOK, heat 2 tablespoons of peanut oil until smoke begins to rise.
- Add broccoli florets and salt, stir well.
- Now add 1/2 cup of water, cover with a lid and cook on high heat for 3 - 4 minutes or until steam starts to escape from the edge of the lid.
- Remove broccoli and any liquid to a bowl.
- Reheat WOK to high heat, add the remainder 2 tablespoons of peanut oil.
- When hot, add garlic and brown for 1 minute, stirring often.
- Add sliced beef and marinade and stir-fry until the color of meat changes, about 1 minute.
- Return broccoli and liquid to the Wok and mix; stir-fry for 30 seconds.
- Serve hot.
