LATE SUMMER CUCUMBER SOUP

Late Summer Cucumber Soup image

Serve this hot if the weather is less than summery or, on a hot day, it is equally good served very cold in chilled soup bowls.

Categories     Soups     Summer soup     Starters

Yield Serves 4

Number Of Ingredients 9

400g cucumber
4-5 good-size spring onions
1 medium potato (100g), peeled
1 round or cos lettuce
1 heaped tsp butter
850ml vegetable stock
sea salt and freshly ground black pepper
1 tbsp double cream or crème fraîche
a few snipped chives

Steps:

  • To prepare for this, chop the cucumber into chunks (thankfully no need to peel) and the same with the potato. Slice the spring onions (including the green part), while the lettuce leaves can just be separated and washed, and the leaves torn. Now in a medium-size saucepan melt the butter and add all the prepared vegetables, stirring them around a bit. Then, keeping the heat low, pop a lid on and let them sweat gently for 10 minutes. After that pour in the stock, season and, after a couple of stirs, bring it back to a gentle simmer. Put the lid back on so it can simmer gently for another 20 minutes. When the time is up, use a stick blender to purée the soup, making sure there are no escaped bits of cucumber that the blades didn't catch - it will finish up a magnificent fresh green colour, very pretty. Reheat gently and serve in warm soup bowls with some cream swirled into each one and a few chives sprinkled over.

Cucumber- 3 cups chopped. First remove the skin and then the seeds before chopping up your cucumbers.
Avocado- 1. Peel the avocado and remove the pit. Make sure that your avocado is somewhat soft (ripe is easier to work with.)
Yogurt- 1 1/4 cups. I like a fat-free plain (unflavored yogurt. Greek Yogurt may be a bit too thick for this recipe.)
Green Onion- 1 chopped.
Garlic- 1 clove minced. Lemon Juice- 1 tablespoon.
Dill- 2 tablespoons plus additional as needed for presentation.
Seasonings to taste. This can include Salt and/or Pepper.

Steps:

  • Prepare the cucumber as described above- skin and seeds removed and chopped.
  • Also, prepare the avocado by removing the pit and peel.

GREEK YOGURT-CUCUMBER SAUCE - GERMAN TSATSIKI

Greek Yogurt-Cucumber Sauce - German Tsatsiki image

A yogurt-cucumber sauce with lots of garlic and olive oil is a traditional Greek tzatziki recipe which is often made and served in Germany.

Provided by Jennifer McGavin

Categories     Appetizer     Dinner     Lunch     Sauce

Time 20m

Yield 10

Number Of Ingredients 7

1 cup Greek yogurt
1 cup shredded cucumber, from about 1/2 a cucumber)
1/2 teaspoon salt, or to taste
2 cloves garlic, minced
1 teaspoon lemon juice
2 teaspoons extra-virgin olive oil
Fresh dill, for garnish

Steps:

  • If you do not have Greek yogurt (very thick yogurt), line a colander with paper towels and place plain yogurt into it. Cover with more paper towels to drain excess liquid for 15 minutes or longer.
  • Shred half a cucumber, place in a colander, sprinkle with 1/2 teaspoon salt or to taste and let sit for 15 minutes. Press excess liquid out.
  • In a small bowl, mix together 1 cup Greek yogurt or yogurt cheese, shredded and pressed cucumber, 2 minced cloves garlic, 1 teaspoon lemon juice and 2 teaspoons olive oil. Refrigerate until ready to serve. The longer it sits, the more the garlic melds with the other ingredients. If the sauce looks runny, stir the liquid back in.
  • The German presentation is to garnish with sprigs of fresh dill or chopped fresh dill or drizzle with a little extra-virgin olive oil over the dish.

Start with 1 cup of milk then gradually continue adding more, whisking after each addition, till the yogurt takes on a soupy consistency. I stop adding milk when it reaches the texture of split pea soup. You can adjust the consistency according to your preference.
