1 package white cake mix (regular size)
1 cup strong brewed coffee, room temperature
4 large egg whites
4 Heath candy bars (1.4 ounces each), chopped
FROSTING:
4 ounces cream cheese, softened
2/3 cup sugar
1/3 cup chocolate syrup
2 teaspoons vanilla extract
2 cups heavy whipping cream
6 tablespoons strong brewed coffee, room temperature
1 Heath candy bar (1.4 ounces), chopped

Steps:

  • Line two greased 9-in. round baking pans with waxed paper and grease the paper; set aside. In a large bowl, combine the cake mix, coffee and egg whites; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fold in chopped candy bars. , Pour into prepared pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing to wire racks to cool. , For frosting, in a large bowl, beat cream cheese and sugar until smooth. Beat in chocolate syrup and vanilla. Add the whipping cream. Beat on high speed until light and fluffy, about 5 minutes., Cut each cake horizontally into two layers. Place bottom layer on a serving plate; drizzle with 2 tablespoons coffee. Spread with 3/4 cup frosting. Repeat layers twice. Top with the remaining cake layer. Frost top and sides of cake with remaining frosting. Refrigerate overnight. Garnish with chopped candy bar.

Cool 10 minutes before removing from pans to wire racks to cool completely., For topping, dissolve coffee in water in a large bowl; cool. Add cream and brown sugar. Beat until stiff peaks form. 6 ounces best-quality bittersweet chocolate or 6 ounces semisweet chocolate, chopped
3/4 cup sugar, plus
2 tablespoons sugar
6 large egg yolks
1/3 cup water
3 tablespoons instant espresso powder
1/2 teaspoon ground nutmeg
2 1/2 cups chilled whipping cream
2 tablespoons coffee liqueur
1 teaspoon vanilla extract

Steps:

  • For crust: Preheat oven to 350°F Grind nuts with ground cookies and toffee in processor.

  • Beat 2 ½ cups cream, liqueur and vanilla in another large bowl until stiff peaks form.

This is a dangerous, and show-stopping, confection--with a taste like no other:) It is very tedious and consumes a full day of preparation; I have never made this myself. Instead, it was presented to my husband and me on the eve of our wedding by my baker father-in-law--a gift in itself. I actually think this got more attention than we did!! And after eating just a few bites, I knew that my wedding dress would probably pop at the seams (but thankfully it didn't)!! Good luck with this--it would be great as a special celebration or holiday dessert.

1/2 cup sugar
1/4 teaspoon salt
1/2 cup butter, melted

Steps:

  • MAKE THE PECAN LAYER: Preheat oven to 350*F.
  • Lightly grease the bottom and sides of a 10" springform pan; line the bottom with a circle of waxed paper and grease the paper.
  • In a food processor, process the pecans, sugar, and salt until finely chopped.
  • In a medium bowl, combine the pecan mixture and melted butter; press firmly and evenly into the prepared pan.
  • Freeze for 10 minutes, or until very cold.
  • Bake for 15 minutes, or until the edges begin to brown.
  • Cool completely on a wire rack.

  • Remove plastic wrap from the fudge layer; evenly spread the toffee mixture over the fudge.
  • Cover the surface with plastic wrap and freeze 1-2 hours, or until very firm.
  • MAKE THE FROSTING: In a small saucepan over low heat, warm 1/3 cup of the heavy cream with the instant coffee, stirring until the coffee has dissloved.
  • Transfer the cream to a small bowl; set in a larger bowl filled with ice water and stir until it is very cold.
  • In a chilled bowl, beat the remaining cream with the coffee-cream mixture and powdered sugar until stiff and holds its shape when cut into with a knife.
  • ASSEMBLE THE TORTE: Remove the torte from the freezer; uncover it.
  • Loosen edges from sides of pan; remove sides.
  • Rest the frozen torte on its side; using a sharp knife, separate torte from the bottom of the pan; peel off the waxed paper.
  • Place the torte, pecan-layer down, on an inverted 10" round cake pan.
  • Reserve 3/4 cup of the whipped cream mixture for garnish.

It takes about an hour to an hour and a half to complete from start to finish. Be sure to bring all the cold ingredients up to room temperature as failure to do so will effect the end result.

If you are not planning to use it all at one time (party or large family) I would recommend replacing the whipped cream frosting with one that will be stable for a longer time but do still add the 1/2 tsp of instant coffee to it. Prep time includes making and assembeling the cake.

8 1/2 ounces english toffee-flavored candy bars, COARSELY CHOPPED
1 quart coffee ice cream, SOFTENED
2 tablespoons light rum
10 3/4 ounces poundcake, CUT INTO 1/2 INCH SLICES
4 ounces bittersweet chocolate
1/3 cup slivered almonds, TOASTED
1 quart premium chocolate ice cream, SOFTENED
2 tablespoons Creme de Cacao or 2 tablespoons irish cream

Steps:

  • Reserve half of chopped candy; bars for topping. Sprinkle remaining chopped candy bars in bottom of an ungreased 10 inch springform pan; set aside.
  • Combine coffee ice cram and rum; spread ice cream mixture over candy bar layer. Cover and freeze until firm.
  • Arrange pound cake slices over frozen ice cream layer; cover and freeze until firm.
  • Place chocolate in top of double boiler; bring water to a boil. Reduce heat to low: cook until chocolate melts, stirring occasionally. Remove from heat, and stir in almonds. Spread mixture over frozen pound cake layer; cover and freeze until firm.
  • Combine chocolate ice cream and creme de cacao; spread over frozen chocolate layer. Sprinkle with half of reserved chopped candy bars; cover and freeze until firm.
  • Let stand at room temperature 5 minutes before serving . Carefully remove sides of springform pan. Gently pat remaining chopped candy bars onto sides of torte. Serve immediately.

For crust and filling
1 1/2 cups finely ground or crushed chocolate wafer cookie crumbs (about 7 ounces)
1/2 teaspoon ground cinnamon
1/4 cup (1/2 stick) unsalted butter, melted
1/2 cup coarsely chopped chocolate-covered English toffee bars (such as Skor or Heath; about 4 ounces)
1 1/2 pints coffee ice cream, slightly softened
For topping
1/3 cup whipping cream
1 tablespoon unsalted butter
6 ounces good-quality white chocolate (such as Lindt or Baker's), chopped
1 teaspoon vanilla extract

Steps:

  • Make crust and filling:
  • Preheat oven to 325°F. Butter 9-inch-diameter tart pan with removable bottom. Mix cookie crumbs and cinnamon in medium bowl. Add melted butter and stir until crumbs are evenly moistened. Press crumb mixture firmly onto bottom and up sides of prepared pan. Bake until crust is set, about 9 minutes. Cool completely.
  • Sprinkle 2 tablespoons chopped toffee over cooled crust. Spread ice cream evenly in crust. Freeze until firm, at least 4 hours or overnight.
  • Make topping:
  • Combine cream and butter in medium saucepan. Bring to simmer. Remove from heat. Add white chocolate; let stand 1 minute. Stir until chocolate is melted and smooth. Mix in vanilla. Let topping stand until cool and slightly thickened but still pourable, about 15 minutes.
  • Pour white chocolate topping over ice cream tart; tilt pan to cover top of tart completely. Freeze until topping is firm, about 1 hour. Sprinkle remaining toffee over. Freeze until tart is firm, about 4 hours. (Can be prepared 5 days ahead. Cover tightly and keep frozen.)
  • Using small knife, carefully loosen crust from pan sides. Gently push up tart bottom to release tart and serve.
