COFFEE MARINATED STEAK
Liven up your steak dinner with this easy and delicious coffee marinated steak. Easy and quick to cook and reverse seared for maximum flavor and tenderness. It's perfect to cook for date night or to enjoy as part of a big feast.

Steps:
- Add the coffee to the boiling water and stir to dissolve. Let the coffee cool to room temperature (you can place it in the fridge for a few minutes to quicken the process).
- Stir the oil, Worcestershire sauce, garlic and black pepper into the coffee.
- Place the steak in the coffee marinade with a few sprigs of fresh thyme. Cover and place in the fridge for at least 2 hours.
- Pre heat the oven to 275F / 135c.
- Place the steak in a small baking tin and place in the oven for 15 to 20 minutes. For medium rare, the steak should register at 90-95F / 32-35c. Once done, remove the steak from the oven.
- Add a tablespoon of oil to a pan with the butter and place on a high heat.
- Once hot, place the steak in the pan. Cook on one side for 2 minutes.
- Flip the steak over and cook for another 2 minutes whilst basting the top side of the steak with the fat in the pan.
- Remove the steak, let rest for 10 minutes before carving and serving.

COFFEE GROUNDS MARINADE

- Combine the coffee grounds, balsamic vinegar, garlic, shallots, some salt and pepper and 1/4 cup water in a bowl.
- Use as a marinade for steak. Marinate for 30 minutes to 4 hours, then cook the steak as desired.

- In a small skillet, toast sesame seeds in butter. Add onion and garlic; saute until tender. In a large bowl, combine the coffee, soy sauce, vinegar, Worcestershire sauce and sesame seed mixture.
- Pour all into a large resealable plastic bag; add steak. Seal bag and turn to coat; refrigerate for 8 hours or overnight, turning occasionally.
- Drain and discard marinade from steak. Grill steak, covered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°; medium, 160°; well-done, 170°). Enjoy the steak.
MY COFFEE-MARINATED POT ROAST
This is the roast my family loves. VERY tender and YumMY! I like to marinate it overnight, but it doesn't have to be. Two hours would be enough. Hope you enjoy as much as my sweet family does. :o)

- FOR MARINATING: place roast in ziploc bag. Pour marinade ingredients over it. Place in refrig. 8-24 hours, turning once. Remove roast from bag. Save marinade.
- Flour roast and heat in oil just til sides are brown.
- Place in large pan.
- Put cut carrots, potatoes, onions and celery around roast.
- Pour marinade over roast and vegs., reserving 1 cup.
- Add flour to 1 cup of marinade, stir til mixed well, and pour over roast. Cover with aluminum foil.
- bake at 325 for 2 1/2 - 3 hours. YUM!
- May serve with mashed potatoes, green beans, or salad.

- For marinade:
- Stir 4 cups water, coffee, 1/2 cup coarse salt, and sugar in large bowl until salt and sugar dissolve. Add syrup and next 3 ingredients; stir until ice melts. Add ribs. Place plate atop ribs to keep submerged. Cover and chill 4 to 6 hours. Drain ribs; discard marinade. DO AHEAD: Drained ribs can be made 2 days ahead. Cover and chill.
- For short ribs:
- Preheat oven to 325°F. Sauté bacon in heavy large wide ovenproof pot over medium heat until beginning to brown. Using slotted spoon, transfer bacon to plate. Increase heat to medium-high. Sprinkle ribs with salt and pepper. Working in batches, cook ribs until browned on all sides, about 7 minutes per batch. Transfer to large plate. Add onions, shallots, garlic, and jalapeño to pot. Reduce heat to medium, cover, and cook until vegetables are soft, stirring occasionally, about 10 minutes. Add coffee and broth; stir, scraping up browned bits. Add chili sauce and all remaining ingredients; bring to boil. Add bacon and ribs, cover, and transfer to oven. Braise until meat is tender, about 2 hours 15 minutes. DO AHEAD: Can be made 2 days ahead. Cool slightly. Chill uncovered until cold, then cover and keep chilled. Rewarm in 325°F oven until heated through, about 20 minutes, before continuing.
- Transfer ribs to plate; tent with foil to keep warm. Spoon fat from surface of sauce. Boil sauce until reduced to 2 cups, about 5 minutes. Pour sauce over ribs.

- Pour the coffee into a small bowl and stir in the remaining ingredients.
- Place the steaks of your choice in a large zipper-lock bag. Pour in the marinade, seal the bag, and turn to ensure the steaks are coated with the marinade. Marinate for 2 hours at room temperature or, better still, refrigerate overnight. (For a 2- to 3-inch-thick bone-in steak, it's best to marinate overnight.) COFFEE-MARINATED GRILLED PORK
Printed in Good Food Magazine. Recipe from '333 Belrose Bar & Grill' in Wayne, PA. This flavorful dish has a rich coffee flavor with hints of sweet molasses and spicy chili. Begin marinating the pork one or two days ahead for best results. The mirin can be found in the Asian foods section of some supermarkets or at Japanese markets.
