1 onion, sliced and separated into rings

Steps:

  • Whisk water, vinegar, oil, sugar, salt, and pepper together in a large bowl until smooth; add cucumbers, tomatoes, and onion and stir to coat.

"Refreshing light summer salad." I like to make this salad in the Summer when my Tomatoes, and Basil are plentiful and Cucumbers are 3 for a dollar at the Grocery stores and farmers markets! A very pretty healthy salad. Try it I don't think you will be dissapointed!

2 large cucumbers, halved lengthwise, seeded and sliced
1/3 cup red wine vinegar
1 tablespoon white sugar
1 teaspoon salt
3 large tomatoes, seeded and coarsely chopped
2/3 cup coarsely chopped red onion
1/2 cup chopped fresh basil leaf
3 tablespoons extra virgin olive oil
salt and pepper

Steps:

  • In a large bowl, toss together the cucumbers, vinegar, sugar and salt. Let stand at room temperature for an hour, stirring occasionally.

Inspired by panzanella, the beloved Tuscan bread salad, this dish swaps out stale bread for pan-fried gnocchi. The plump, crusty dumplings do a surprisingly good job at soaking up the summery combination of tomatoes, balsamic vinegar and olive oil, while still maintaining their crisp edge. Shelf-stable gnocchi work best, as they are sturdier and crisp up well, but you could use frozen gnocchi, taking extra care not to move them around too much in the pan so they don't break apart. Top with a sharp cheese such as Parmesan, pecorino or ricotta salata, for a hit of saltiness, if you like. This meal is best eaten immediately while the gnocchi remains crispy, but it can sit for up to 30 minutes, giving the flavors time to mingle. (However, don't let it sit too long, as the gnocchi will turn mushy.)

1 (17-ounce) package shelf-stable (or frozen) potato gnocchi
1 1/2 pounds tomatoes (any variety)
1/2 red onion, thinly sliced
1 tablespoon balsamic vinegar
Kosher salt (such as Diamond Crystal) and black pepper
Handful of chopped parsley, plus more for serving
Handful of torn basil, plus more for serving

Steps:

  • Heat a large (about 12-inch), well-seasoned cast-iron or nonstick skillet over medium-high; add 2 tablespoons of olive oil. Add the gnocchi to the pan, breaking up any that are stuck together. Cook for 8 to 10 minutes, tossing every 1 ½ to 2 minutes so they get golden and crispy all over.
  • Meanwhile, prepare your tomatoes: If you are using small ones like cherry or grape varieties, simply slice them in half. For larger tomatoes, quarter them or slice into bite-size chunks. (It is good to have a mix of shapes and sizes.) Place the tomatoes and onions in a large serving bowl. Add the balsamic vinegar and 1 teaspoon salt; season with pepper and gently toss.
  • When the gnocchi are golden and crispy, add them to the tomatoes, along with 3 to 4 tablespoons of olive oil and a handful each of parsley and basil. Toss and taste, adding more salt or pepper as needed.
  • Top with more parsley and basil, and eat immediately or at room temperature.

Fresh summer ingredients, well year round with our Farmers Market in FL, but this can be made any time of the year for a nice change from a lettuce salad. Now I use Nakano Seasoned Rice Vinegar (Basil & Oregano), but you can use any brand. This is available on the web or at many grocery stores. All of our grocery stores in FL carry it, and It is well worth the purchase. Low fat, no oil needed, healthy and is great on seafood, salads, and vegetables. I use it all the time.

2 cups heirloom tomatoes, lightly seeded and rough chopped (I like to use a combination of heirlooms, purple, orange, red, yellow, whatever looks best)
1 large sweet onion, cut in quarters and thin sliced (I use a FL sweet, but you want a sweet onion)
2 English seedless cucumbers (cut lengthwise in half, and then again in half, and then seed and then thin slice)
1/3 cup seasoned rice vinegar, there are many other brands available (Nakano Seasoned Basil & Oregano)
1/2 cup crouton, crushed and broken up (Garlic cheese, or plain garlic)

pepper

Steps:

  • Salad -- The tomatoes should be lightly seeded and then rough chopped then added to a medium size bowl. Add the cucumbers, onion and toss lightly. Add the Nakano Rice vinegar, salt and pepper and toss lightly.
  • If you only have access to plain rice vinegar; 1/8 teaspoon dried oregano and dried basil can be added to 1/2 cup to plain rice wine vinegar to obtain the same flavor. But the Nakano is well worth purchasing even online. It can be used for so many dishes.
  • Croutons -- In a small baggie or ziplock bag, add the croutons. With a meat mallet, rolling pin, can, or just your hand, "crunch" up the croutons. Not to fine, just a rough texture.
  • Finishing -- Top the bowl with the croutons and lightly toss.
  • Serving -- I love to serve this on a lettuce leaf and a sprig of fresh basil for a elegant presentation. I usually serve a toasted baguette on the side. Or if it is just everyday, just serve it as is. It is a great simple salad!
