This is a dish that's big on flavour as well as texture with a crunchy topping to succulent white fish and crisp potato to go with it, a healthy dinner for one

1 large baking potato
1 cod fillet (about 180g)
1 slice bread (preferably seeded)
zest ½ orange
½ small pack dill , roughly chopped
1 small garlic clove , crushed
drizzle olive oil
2 tbsp crème fraîche , to serve
steamed vegetables , to serve (optional)

Steps:

  • Heat oven to 220C/200C fan/gas 7. Sit the potato on a large spoon and cut slits across it every 0.5cm (the edges of the spoon will stop the knife cutting all the way through the potato). Microwave for 10-12 mins until starting to soften (alternatively, bake in the oven for 1 hr 10 mins).
  • Meanwhile, prepare the topping for the fish. Blitz the bread in a food processor into breadcrumbs (or grate it). Combine the breadcrumbs with the orange zest, dill, garlic and seasoning. Season the cod, put it on a baking tray and top with the crumb.
  • Put the potato on the same tray, drizzle with oil and sprinkle with salt flakes. Bake for 12-15 mins until the fish is cooked and the potato is tender but crispy. Serve with cr ème fraîche and steamed vegetables, if you like.

4 cod fillets (4 ounces each)
2 tablespoons butter
1/2 cup chopped onion
1 garlic clove, minced
1 teaspoon grated orange zest
1/3 cup orange juice
1 tablespoon lemon juice
1/8 teaspoon pepper
1 tablespoon minced fresh parsley

Steps:

  • Preheat oven to 375°. Place fillets in an 11x7-in. baking dish coated with cooking spray. , In a skillet, heat butter over medium-high heat; saute onion and garlic until tender. Spoon over fish. Mix orange zest and citrus juices; drizzle over fish. , Bake, uncovered, until fish just begins to flake easily with a fork, 15-20 minutes. Sprinkle with pepper and parsley.

It's a Friday night fish fry - with a twist. This 30 minute cod is baked, not fried, but still has a satisfyingly crispy, crunchy crust. Try baked white potatoes or sweet potatoes, cooked in the microwave to save time, on the side.

2 tablespoons unsalted butter
1 garlic clove, minced
1/2 cup panko breadcrumbs or 1/2 cup regular breadcrumbs
2 tablespoons minced fresh parsley
1 teaspoon finely grated lemon zest
1 tablespoon Dijon mustard
1 tablespoon reduced-fat mayonnaise
4 (6 ounce) skinless cod fish fillets (1 1/2-inch thick)
salt, to taste

Steps:

  • Preheat oven to 350°F In a small skillet over medium-low heat, melt butter. Add garlic and cook, stirring, until fragrant, 30 seconds. Add bread crumbs, stir to coat with butter, then cook, stirring frequently, until light golden brown, about 5 minutes. Remove from heat and stir in parsley and lemon zest. Let cool. Combine mustard and mayonnaise in a small bowl.
  • Rinse fish and pat dry. Sprinkle each fillet lightly with salt, then place on a rimmed, foil-lined baking sheet and brush with mustard mixture. Press 1/4 of crumbs onto each fillet.
  • Transfer baking sheet to oen and bake until fish is no longer translucent (cut to test) and flakes easily, 10 to 15 minutes. If crumbs aren't sufficiently browned, broil fish 2 inches from heating element until crumbs are crisp and dark golden brown (watching carefully to prevent burning), 2 minutes longer. Serve immediately.

24 Ritz crackers, broken into crumbs about the size of peas
2 tablespoons herbs, fresh, minced (parsley, dill or basil, or a combination, divided use)
3 tablespoons mayonnaise
2 garlic cloves, minced
1 teaspoon lemon zest, finely grated
1 tablespoon lemon juice, fresh
2 lbs skinless cod fish fillets, 1/2 inch thick, pin bones removed, patted dry
salt & freshly ground black pepper
lemon wedge, for serving

Steps:

  • Adjust an oven rack to the middle position and preheat the oven to 450°F
  • Lightly grease a rimmed baking sheet with nonstick cooking spray; set aside.
  • In a medium bowl, combine the cracker crumbs and 1 tablespoon of the parsley, dill or basil; Set aside.
  • In a separate small bowl, combine the remaining 1 tablespoon parsley, dill or basil with the mayonnaise, garlic, and lemon zest and juice; Set aside.
  • Season the fish fillets with salt and pepper to taste.
  • Place on the baking sheet, spacing the pieces about ½ inch apart.
  • Brush the tops and sides of the fish with the mayonnaise mixture, then press the cracker crumbs into the mayonnaise.
  • Bake for 8 to 15 minutes, or until the crumbs are golden brown and the fish flakes apart when gently prodded with a paring knife.
  • If the cracker crumbs brown before the fish is cooked, cover the fish with aluminum foil.
  • Serve hot with the lemon wedges.
