Why should pineapples have all the fun? Bananas work perfectly in this boozy, caramelized version of an upside-down cake.

2/3 cup sugar
1 tablespoon unsalted butter, plus more for the pan
3 medium bananas, cut on a slight bias into 1/4-inch-thick slices
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 stick (8 tablespoons) unsalted butter, at room temperature
1 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
3/4 cup milk
1/4 cup sour cream
3 tablespoons dark rum

Steps:

  • Preheat the oven to 350 degrees F. Butter just the sides of a 9-inch round cake pan.
  • For the caramel topping: Stir the sugar and 1/3 cup water in a medium saucepan over medium heat until the sugar dissolves. Stop stirring, and gently swirl the saucepan occasionally until the mixture is the color of deep amber, 8 to 9 minutes. If needed, brush any sugar crystals off the side of the pan with a wet pastry brush. Remove the saucepan from the heat, and carefully whisk in the butter (take care: the mixture can bubble up considerably). Pour the caramel into the prepared cake pan, tilting the pan to cover most of the bottom (be careful: the pan will be very hot from the caramel). Arrange the bananas in a single, tight layer, then cover any gaps with the remaining slices.
  • For the cake: Whisk together the flour, baking powder, baking soda and salt in a medium bowl. Whisk together the milk and sour cream in a small bowl.
  • Beat the butter and sugar together with an electric mixer on medium-high speed in a large bowl until light and fluffy, about 4 minutes. Add the eggs 1 at a time, beating after each addition and scraping down the side of the bowl as needed, then beat in the vanilla. Reduce the mixer speed to low, and add the flour mixture in 3 batches, alternating with the milk-sour cream mixture, mixing until just incorporated.
  • Pour the batter over the bananas in the cake pan, and spread evenly. Bake the cake until it is golden brown and bounces back when pressed and a toothpick or cake tester comes out clean when inserted in the center, 50 to 60 minutes. Run a knife around the edge of the cake to separate it from the pan. Poke the cake all over with a skewer, and brush the cake with the rum. Let cool in the pan on a rack until just cool enough to handle, 20 to 30 minutes. Invert a serving platter over the cake pan and, while holding them together, quickly flip them over so the cake unmolds, banana-side up. Let cool completely. Cut into wedges, and serve.

1 cup diced peeled mango
Vanilla ice cream or macadamia brittle ice cream
Toasted sweetened coconut (optional)

Steps:

  • Melt butter in heavy large skillet over medium heat. Add brown sugar, nectar and rum; stir until sugar dissolves. Increase heat and boil until syrupy, about 4 minutes. Mix in ginger and nutmeg. Add pineapple, banana and mango and sauté just until heated through, about 1 minute. Let cool 2 minutes.
  • Scoop ice cream into bowls. Spoon warm sauce over ice cream. Sprinkle with coconut, if desired; serve immediately.

3 tablespoons unsalted butter
3 tablespoons packed brown sugar
2 bananas, peeled and halved lengthwise and crosswise
2 fluid ounces rum
1 fluid ounce banana liqueur
2 pinches ground cinnamon
2 scoops vanilla ice cream
2 small sprigs of mint

Steps:

  • Melt butter and brown sugar together in a skillet over medium-high heat until butter melts and mixture begins to bubble, 3 to 5 minutes.
  • Place bananas, cut-side down, in brown sugar mixture. Cook until just golden, about 30 seconds; flip and cook until golden on the other side, about 30 seconds.
  • Remove from heat. Pour rum and banana liqueur into skillet; return skillet to high heat. Cook until alcohol ignites and flames, 1 to 3 minutes; add cinnamon. When flames die, remove skillet from heat.
  • Scoop vanilla ice cream into 2 bowls. Divide bananas mixture between bowls and garnish with mint sprigs.

This is a delicious and easy tropical version of bananas foster that tastes great over ice cream. I don't flambe it, but if you would like to try, be my guest! Although I usually serve this over ice cream, I imagine it would be good on anything!

1/2 cup white sugar
3/4 cup light brown sugar
1/2 cup light corn syrup
1/2 cup salted butter
3/4 cup heavy cream
1 teaspoon vanilla extract
1/4 cup pineapple juice
1 cup Malibu rum or 1 cup other coconut rum
4 bananas, sliced

Steps:

  • Combine sugars and butter in pan and heat until butter is almost melted.
  • Add corn syrup and half the cream. Cook over medium heat, stirring constantly, until mixture is light brown in color.
  • Bring to a boil. When boiling, add remaining heavy cream, stirring constantly.
  • When mixture is at a steady boil, add pineapple juice and cook through.
  • Add the rum CAREFULLY and let alcohol boil out, stirring constantly.
  • Cook approximately five minutes or until mixture is a thick caramel.
  • Remove from heat and add vanilla.
  • Add sliced bananas and serve over ice cream or anything else!

1/4 cup banana liqueur
4 bananas, cut in half lengthwise then halved
1/4 cup white rum
4 scoops vanilla ice cream

Steps:

  • Combine the sugar, butter and cinnamon in a flambe pan or skillet. Place the pan over low heat either on an alcohol burner or on top of the stove and cook, stirring, until the sugar dissolves. Stir in the banana liqueur and then place the bananas in the pan. When the banana sections soften and begin to brown, carefully add the rum.
  • Continue to cook the sauce until the rum is hot and then tip the pan slightly to ignite the rum. When the flames subside, lift the bananas out of the pan and place four pieces over each portion of ice cream. Generously spoon warm sauce over the top of the ice cream and serve immediately.

2 tsp sugar
3 small bananas, thinly sliced
2 tsp rum
1 tsp banana liqueur
4 sheets phyllo dough
Canola oil

Steps:

  • Preheat oven to 400°F. In a small pan, melt butter over medium heat. Add sugar and dissolve. Add bananas and cook 1 minute. Add rum and liqueur and cook 1 minute more. Remove from heat. On a work surface lay 1 sheet of phyllo at a time with the narrow end toward you. Lightly spray or brush the sheet with oil. Fold sheet into thirds, lengthwise. Spray again with oil. Spoon 3 tbsp filling onto phyllo strip, about 1 1/2 inches from the bottom and slightly to the left. Fold up a 1 1/2-inch flap to cover filling. Fold lower left corner of phyllo diagonally to the right side of dough to cover filling. Continue folding flag-style until you reach the end of the sheet. Repeat with remaining phyllo sheets and filling. Place turnovers onto a baking sheet lightly coated with oil. Bake 15 minutes or until golden brown. Serve warm.
