An easy waffle recipe that results in a nice crisp outside, and tender middle waffle. I love the results this gives while not having to separate the eggs and take time to whip egg whites! These will also reheat in the toaster for a quick work day breakfast.

2 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
2 cups low-fat buttermilk
⅓ cup melted butter
2 large eggs, lightly beaten
1 teaspoon vanilla extract

Steps:

  • Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl until evenly combined. Whisk buttermilk and butter together in a separate bowl; add eggs. Stir buttermilk mixture into flour mixture until just combined and batter is slightly lumpy; add vanilla extract.
  • Preheat a waffle iron according to manufacturer's instructions.
  • Pour enough batter into the preheated waffle iron to reach 1/2 inch from the edge. Cook according to manufacturer's instructions.

1 tablespoon baking powder
½ teaspoon salt
2 tablespoons sugar
2 eggs (divided)
1 ⅔ cup milk
⅓ cup melted butter (or oil)

Steps:

  • Preheat the waffle iron according to the manufacturer's directions.
  • Place flour, baking powder, sugar, and salt in a bowl. Whisk to combine.
  • In a small bowl, mix egg yolks, milk, and butter. Set aside.
  • In a separate bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note
  • Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites.
  • Drop by large spoonfuls onto greased waffle iron, close the lid and cook about 3-5 minutes.

2 tablespoons sugar
1 teaspoon baking powder

Maple syrup and butter, as desired, for serving

Steps:

  • Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
  • In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
  • Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.

  • 1. Melt butter either on the stove or in the microwave. Set aside. 2. In a large bowl, whisk together flour, sugar, baking powder, salt, and baking soda. In a separate bowl, whisk together yogurt, milk, melted butter, and eggs. Fold wet ingredients into dry ingredients. 3. Preheat a waffle iron and, using a pastry brush or paper towel, lightly coat with butter. Cook waffles (using about 1/2 cup batter per waffle) until golden and crisp. Butter the iron in between batches as needed. Serve waffles immediately as they are ready, or keep them warm in a 200 degree oven until ready to serve. Pure maple syrup, soft unsalted butter, confectioners' sugar or fruit preserves, for topping

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the flour, sugar, baking powder and salt in a large bowl. Whisk together the milk, butter, shortening and eggs in another bowl. Pour the milk mixture into the flour mixture and gently stir until just incorporated (it's okay if there are some lumps).
  • Lightly brush the top and bottom of the waffle iron with butter. Fill the waffle iron about three-quarters of the way full (some waffle iron should still be showing). Close the lid gently and cook until the waffles are golden brown and crisp, 6 to 7 minutes. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles.
  • Serve with maple syrup, butter, sugar or fruit preserves.
