A friend just gave me this recipe and I made it up as an alternative for our workday morning coffee. Although it's recommended for iced coffee, it works equally well for hot coffee -- and it's EXTREMELY easy to put together in the morning, since you don't have to fuss with equipment or with cleaning. My husband's view (he's the coffee drinker in the family) was that it made very good hot coffee, but GREAT iced coffee.

1/3 cup ground coffee
1 1/2 cups water

Steps:

  • Stir together the coffee grounds and water.
  • Cover and let sit overnight.
  • Strain through cheesecloth or a fine mesh strainer. Strain 2-3 times to remove grounds and silt.
  • This creates a concentrate; to dilute to appropriate proportions, add one part water to one part coffee (i.e., use 1/2 cup coffee concentrate and 1/2 cup water). Add water or coffee concentrate to adjust to your personal tastes.
  • For hot coffee, put it in the microwave for 1-2 minutes.
  • For iced coffee, refrigerate and serve over ice.

Coffee brewed slowly in cold water is less acidic than hot brewed. You can use this concentrate straight over ice or microwave half a mug coffee and then add a half cup of boiling water for quick hot coffee. Develop your own ratio of coffee to water for your custom brew.

4 ½ cups cold water
cheesecloth
coffee filters

Steps:

  • Put coffee grounds in a large container. Slowly pour water over the grounds.
  • Cover bowl with plastic wrap and steep at room temperature for 18 to 24 hours.
  • Line a strainer with several layers of cheesecloth and place atop a pitcher; strain coffee through the cheesecloth into the pitcher. Discard the grounds. To get a clearer brew, strain coffee again through coffee filters. Store in refrigerator.

50g ground coffee (use coarsely ground for cafetières)
ice
sparkling water or still water to dilute

Steps:

  • Put 400ml cold water into a large jug or jar and add the coffee grounds, but do not stir the mixture. Cover and leave to steep for 24hrs.
  • Gently stir the mixture then pour it through a funnel or sieve lined with coffee filter paper (or a sheet of kitchen paper) into another large jug. This concentrate will keep in the fridge for 2-3 days.
  • To serve dilute 1 part cold brew with 2 parts still or sparkling water (or to your taste) and serve with lots of ice.

Feel free to play around with how you dilute this-you might prefer a stronger or weaker coffee than the one suggested here. And coffee-heads the world over agree: cold-brew is only as good as the beans it's made with.

12 ounces high-quality coffee beans (about 4 cups), coarsely ground
Milk (optional; for serving)
Special Equipment
A 12-cup (or larger) resealable container or stockpot with lid; a coffee filter or cheesecloth

Steps:

  • Place ground coffee in 12-cup container. Slowly pour 6 cups cool water over grounds. Stir very gently just until grounds are moistened. Seal container and chill 24 hours.
  • Strain coffee grounds through a fine-mesh sieve into a large measuring cup or bowl. Strain again through coffee filter into a large bowl or 3-cup (or larger) resealable container. (Alternately, skip the straining and use a thick filter, like for a Chemex.) To serve, pour over ice and dilute 1:1 with water or milk.
