This sweet and tangy salad recipe is from Amy Faulstich, of Seattle.

1 cup shredded sweetened coconut
1/2 cup sliced almonds
2 tablespoons fresh tangerine juice
2 teaspoons red-wine vinegar
1/2 teaspoon chopped fresh thyme
Coarse salt and ground pepper
2 tablespoons olive oil
3 cups torn green-leaf lettuce, (1 medium head)
2 tangerines, peeled and thinly sliced
1 apple, thinly sliced

Steps:

  • Preheat oven to 350 degrees. Spread coconut and almonds in one layer on a rimmed baking sheet. Bake until golden, tossing once, 6 to 8 minutes. Set aside to cool.
  • In a small bowl, whisk together tangerine juice, vinegar, and thyme. Season with salt and pepper. Whisking constantly, add olive oil in a slow stream.
  • In a large bowl, combine lettuce with tangerines and apple. Add coconut and almonds; toss salad with vinaigrette as desired. Serve immediately.

1 clove garlic, minced
2 teaspoons balsamic vinegar
Salt and pepper
1/2 cup extra-virgin olive oil
1 bunch curly kale, stems removed, leaves torn
3 tangerines, separated into segments
3/4 cup walnuts
1/4 cup pomegranate seeds

Steps:

  • Whisk together the tangerine juice, garlic and balsamic vinegar in a bowl. Add salt and pepper to taste. Slowly stream in the olive oil while whisking.
  • In a large bowl, combine the kale, tangerine segments and walnuts. Toss with some dressing and season with salt.
  • Transfer the salad to a serving platter and sprinkle the pomegranate seeds over the top. Serve.

1/2 cup sliced almonds
3 tablespoons sugar, divided
2 medium tangerines or 1 navel orange
6 cups torn lettuce
3 green onions, chopped
2 tablespoons cider vinegar
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small skillet, cook and stir the almonds and 2 tablespoons sugar over medium-low heat for 25-30 minutes or until the sugar is melted and the almonds are toasted. Remove from the heat. Peel and section the tangerines, reserving 1 tablespoon juice., In a large bowl, combine the lettuce, onions, tangerines and almonds. In a small bowl, whisk the vinegar, oil, salt, pepper, reserved juice and remaining sugar. Pour over salad; toss to coat.

  • In a large bowl, combine the oranges, pineapple, whipped topping, coconut, marshmallows and milk.

Charred Octopus Salad with Tangerine Sauce image

1 bottle red wine, such as Merlot
2 heads garlic, halved
1/3 cup black peppercorns
One 2-pound octopus
4 bacon slices, cut into lardons
Tangerine Sauce, recipe follows
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 cup pink peppercorns, crushed
3 sprigs fresh oregano, leaves picked, for garnish
Bull's Blood microgreens, for garnish
Micro baby arugula, for garnish
Extra-virgin olive oil, for drizzling
2 cups tangerine juice
1 tablespoon honey
2 tablespoons red wine vinegar
1/2 tablespoon Dijon mustard
2 anchovies
1 half finger chile
Canola oil, for drizzling
Kosher salt and freshly ground black pepper

Steps:

  • Combine the red wine, garlic, black peppercorns and 2 quarts of water in a large pot and bring to a boil over high heat.
  • Dip the octopus in the boiling liquid for 10 seconds and lift it back out. Repeat the process 3 times. Finally, submerge the octopus in the liquid and reduce the heat to a simmer. Cover with a lid and allow the octopus to poach in the liquid until tender, about 90 minutes.
  • Heat a large saute pan over medium-high heat. Add the bacon and cook until crisp. Transfer the bacon to a paper towel-lined plate and reserve the fat in the pan.
  • Preheat the oven to 425 degrees F. Preheat a grill to high heat. Warm up half of the Tangerine Sauce in a saute pan on medium heat.
  • Remove the octopus from the poaching liquid and allow to cool before handling, about 10 minutes. Remove the head and discard. Cut off the tentacles from the body and reserve the body for another use. Dip the tentacles into the reserved bacon fat, and place on the hot grill to char very briefly. Season with salt and pepper. Transfer the tentacles to a large ovenproof saute pan, toss with the heated Tangerine Sauce and place in the oven for 5 minutes.
  • To serve, drizzle some of the remaining Tangerine Sauce on each plate. Sprinkle some of the crushed peppercorns and oregano leaves around each plate. Place a tentacle on each plate and sprinkle with some of the bacon. Garnish with the Bull¿s Blood microgreens and micro arugula. Finish with a drizzle of oil and some freshly ground black pepper.
  • Reduce the juice and honey in a saute pan over medium heat until syrupy. Allow to cool slightly. Combine in a food processor with the red wine vinegar, mustard, anchovies and chile and process until smooth. While processing, drizzle in enough canola oil to create an emulsified sauce. Season with salt and pepper.

  • Stir tangerine juice and lemon juice together in a saucepan. Whisk eggs and egg yolk into juice mixture until smooth.
  • Heat juice mixture over medium-low heat. Whisk in 3 tablespoons coconut oil until well-combined. Add remaining coconut oil and cook, whisking constantly, until curd begins to thicken, 5 to 10 minutes. Remove from heat. Spoon curd into small bowls or jars.
  • Cook and stir coconut flakes in a small skillet over medium heat until lightly golden and toasted, 2 to 5 minutes. Season with salt. Top curd with coconut flakes and refrigerate until set, about 1 hour.

4 teaspoons honey
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 garlic clove, minced finely
1/4 teaspoon ginger, minced finely
1/2 small jalapeno, diced very finely, if wanted to taste
1 scallion, thinly sliced
6 tangerines
1 Hass avocado, halved and thinly sliced crosswise
3 tablespoons roasted sunflower seeds

Steps:

  • In large bowl, whisk together lime juice, honey, vinegar, salt,garlic, ginger, cayenne and jalapeno.
  • With a vegetable peeler, remove 2 long strips of peel (orange part only) from 1 tangerine.
  • Cut strips into 1/8-inch zest matchsticks.
  • Peel tangerines and separate into segments.
  • Cut segments crosswise into 2 or 3 pieces.
  • Add avocado, zest, and tangerines to bowl, toss to combine.
  • Chill until serving time.
  • Sprinkle with sunflower seeds just before serving.

  • Tear the washed spinach into bite sized pieces. Slice the green onions. Peel and section the tangarines and cut each section in half. If you couldn't find "seedless tangarines" this is when you pop those little seeds out.
