Steamed tilapia with green chilli & coconut chutney image

Try something different by making a fragrant curry from tilapia fish fillets - it's ready in just 20 minutes

100g basmati rice
2 large tilapia fillets
2 tsp butter
150g pot fat-free yogurt , to serve
2 small naan bread , to serve
handful coriander , roughly chopped
½ green chilli , deseeded
25g desiccated coconut
1 lemon ½ juiced, ½ cut into wedges
1 tsp chopped ginger
½ tsp ground cumin

Steps:

  • To make the chutney, put the coriander, chilli, coconut, lemon juice, ginger and cumin in a food processor. Add good pinches of salt and sugar, then pulse until it has a rough salsa-like consistency.
  • Rinse the rice and place in a deep frying pan with 225ml water. Bring to the boil, then turn down low - it will take about 8 mins to cook.
  • After about 3 mins, place the fish fillets on top of the rice, then dot a tsp of butter on each and spread the fresh chutney over in a thick layer. Cover with a lid and cook over a low heat for about 5 mins until the fish and rice are cooked through.
  • Serve the fish and rice with the yogurt, warmed naan breads and the lemon wedges.

  • Start by preparing the coconut. Discard the outer cover and take out the flesh of the coconut. Grate it using the large hole of a box grater or scrape it using a coconut scraper. You can also chop it into small pieces instead of grating.
  • Add 1 cup of grated coconut, 2 tbsp roasted chana or Bengal gram, ½ tsp grated ginger, 3-4 cloves of garlic, 6-8 Kashmiri dry red chili (discard the stalk), ¼ tsp asafoetida, salt to taste, 2 tsp tamarind paste, and 1 tsp Kashmiri red chili powder in the jar of a high-speed blender. I normally use the small jar of my mixer grinder to make the chutney.

  • Simple red chutney. This is a simple one which I at times make when I do not have green chilies. It is different from the kerala style red coconut chutney.
  • Mint coconut chutney. One of the best chutney to start your day as it ignites the digestive fire and keeps the digestion good for the whole day. This chutney is great not only for breakfasts but tastes wonderful when accompanied with fried snacks like bonda, vada, kathi rolls, wraps and even sandwiches.
  • Dried coconut chutney. This recipe uses dried coconut known as Copra. It is a great alternate to fresh coconut. There are many places where fresh coconut is not available.

  • Kobbari capsicum chutney. I make this whenever I am left with a piece of capsicum after using it in other recipes. The coconut chutney seen in this picture is made with green capsicum and coconut.

Instructions. Heat vegetable oil in a pan. Once the oil is hot, add tomato and green chilli and cook for 8-10 minutes until tomatoes are charred and nicely cooked. Transfer the tomatoes and chillies in the jar of a blender. Add garlic, peanuts, salt and tamarind paste and grind to make a smooth chutney. Add little water if required.
