The rice in this dish is cooked in a mixture of both coconut milk and water which gives it that slightly sweet and nutty flavor. Coconut milk is also jam-packed with nutrients and can help to lower cholesterol.

Steps:

  • Saute 2 tablespoons minced ginger in a saucepan with butter. Add 1 cup rinsed basmati rice, 1 cup coconut milk, 1 cup water and a pinch of salt. Bring to a boil, then reduce heat; cover and simmer until the liquid is absorbed, 15 minutes. Let stand 10 minutes off the heat; fluff with a fork. Garnish with cilantro and cashews.

1 stalk fresh lemongrass, outer leaves peeled, 3-inch-long piece cut from root end and sliced in half lengthwise
2 cups unsweetened coconut milk
1 cup water
2 to 4 fresh or frozen kaffir lime leaves
2 teaspoons coarse salt
1 1/2 cups long-grain rice
1/4 cup slivered almonds, toasted
1/2 cup lightly packed fresh cilantro leaves, coarsely chopped, plus several sprigs for garnish
Freshly ground pepper

Steps:

  • In a medium saucepan, combine the lemongrass, 1 3/4 cups coconut milk, the water, kaffir lime leaves, and salt. Heat over medium-high heat until milk just begins to simmer. Stir in rice, and reduce heat to a simmer. Cover; cook until rice is tender, 20 to 25 minutes.
  • Stir in nuts, cilantro, and remaining 1/4 cup coconut milk; season with pepper. Discard lemongrass. Serve immediately, garnished with cilantro sprigs.

3 onions, finely chopped
1 tbsp sunflower oil
1 tbsp butter
1kg bag basmati rice
2 x 400ml cans coconut milk

Steps:

  • In a big saucepan or casserole with a lid, gently soften the onions in the oil and butter.
  • When really soft, add the rice and cook, stirring, for a couple of mins. Tip in the coconut milk with 2 cans water. Bring to a gentle simmer, stirring, then cover, lower the heat to the lowest setting and cook for 10-15 mins, scraping the bottom regularly with a wooden spoon to stop it sticking. Check the rice: it should be sticky and creamy but not watery, and not quite cooked - still a bit crunchy. Tip into a big bowl that will fit in a microwave and cover with cling film. Chill until ready to serve, for up to a day.
  • To serve, poke a hole in the cling film and microwave for 8 mins on High, stirring halfway, until piping hot and cooked through. Add some salt and stir through with a fork to break up the grains.

6 cups Rice Krispies, lightly toasted
1 cup sweetened flaked coconut
1/4 cup chopped almonds
4 tablespoons butter, plus
extra butter, for greasing dish and spoon
1 (8 ounce) box almond paste, grated
1 (10 1/2 ounce) bag mini marshmallows

Steps:

  • Butter a 9" x 9" baking pan or casserole dish.
  • In a large bowl, measure rice krispy cereal and set aside.
  • In a large non-stick frying pan, add coconut flakes and almonds and dry roast over medium-high heat, stirring frequently, until the coconut and almonds start to turn golden; about 4 minutes.
  • Immediately pour into the bowl with the cereal and mix well.
  • In the same frying pan melt butter over low heat.
  • Add the grated almond paste and marshmallows.
  • Cook over low heat until all ingredients are melted and smooth; about 5 minutes.
  • Immediately pour almond-marsmallow mixture into the bowl of cereal.
  • Butter a large spoon and mix contents thoroughly until well incorporated.
  • Press krispy treat mixture into the buttered dish.
  • Cool until firm enough to cut into 1 1/2 inch squares.

water
light coconut milk
1 tablespoon canola oil
1 lb medium shrimp, shelled and deveined
1/3 cup chili sauce, Thai-style
1/2 cup slivered almonds, toasted
green onion, chopped (for garnish)

Steps:

  • Prepare rice according to the package directions, but replace half the water called for with coconut milk.
  • Heat the oil in a large skillet. Add shrimp and cook 3-4 minutes until pink.
  • Add chili sauce and stir until heated through.
  • Stir almonds into cooked rice and top with shrimp mixture.
  • Garnish with onions.

Once boiling, lower heat to a simmer and cover. Ensure it’s simmering and not boiling or the rice can cook too quickly.
  • Simmer until water is completely absorbed and rice is tender — about 10-25 minutes (will depend on type, size, and freshness of rice). Drain off excess water if there is any (there shouldn’t be).
  • I like to turn off the heat, remove the lid, fluff with a fork, put the lid back on, and let rest for 10 minutes so the moisture redistributes to prevent mushy rice. Taste test and add additional salt if desired. This rice is delicious alongside curries, soups, bowls, and more! Option to garnish with cilantro and lightly toasted coconut flakes.
  • Store cooled leftovers covered in the refrigerator up to 5-6 days, or in the freezer up to 1 month. Reheat in the microwave or on the stovetop with a little oil or water until warm.
