GRILLED PEACHES
This is a very simple, yet delicious end to a grilled meal. Peaches are grilled with a balsamic glaze, then served up with crumbled blue cheese. A sophisticated, yet extremely simple recipe. Perfect for summer entertaining!

Steps:
- In a saucepan over medium heat, stir together the white sugar, balsamic vinegar, and pepper. Simmer until liquid has reduced by one half. It should become slightly thicker. Remove from heat, and set aside.
- Preheat grill for medium-high heat.
- Lightly oil the grill grate. Place peaches on the prepared grill, cut side down. Cook for about 5 minutes, or until the flesh is caramelized. Turn peaches over. Brush the top sides with the balsamic glaze, and cook for another 2 to 3 minutes.
- Transfer the peach halves to individual serving dishes, and drizzle with remaining glaze. Sprinkle with crumbled blue cheese.

GRILLED PEACHES

- Cut the peaches in half and remove the pit. Slice each half in half and toss them in a bowl with the vanilla extract, almond extract, and brown sugar. Set aside for 15 minutes while you preheat a grill with a medium-high heat. Grill skin side down until skin is slightly charred, about 3 minutes. Turn and grill on the other 2 sides until you get nice grill marks, about 1 minute on each side.
- Divide the peaches among 4 bowls and serve with the frozen yogurt and toasted almonds, if desired.
GRILLED PEACHES WITH MASCARPONE CHEESE

- Place a grill pan over medium-high heat or prepare the barbecue (medium-high heat). Lightly brush the grill pan or rack with oil. Place the peaches on the grill pan and do not move the peaches, otherwise you will not have those great grill marks. It takes about 2 to 3 minutes per side to get those grill marks. Grill the peaches until the grill marks are formed, slightly softened and heated through, about 5 to 6 minutes total.
- Meanwhile, stir the sugar, brandy, and lemon juice in a medium bowl to blend. Set the brandy mixture aside.
- As the peaches are ready, remove them from the grill and place them in a shallow baking dish. Top them with the brandy mixture, and toss to coat. Set aside for 15 minutes and allow to marinate, tossing occasionally.
- Meanwhile, stir the mascarpone and vanilla in a small bowl to blend.
- Divide the grilled peach mixture equally among 6 coupe dishes. Pour the wine over the peaches. Dollop the mascarpone mixture atop the peaches, and serve.
ROASTED PEACHES WITH RICOTTA
This is a simple but refreshing end to any meal and it's a really good way to use any left-over ricotta cheese you may have on hand.

- Arrange peaches, cut side up, in glass baking dish.
- Sprinkle with sugar and dot with butter.
- Bake 30 minutes at 325 degrees.
- With slotted spoon, transfer peaches to individual plates.
- Reserve juices.
- In bowl, mix ricotta and honey.
- Stir in reserved juices.
- Pile ricotta mixture onto peaches and sprinkle with almonds.

- Preheat a grill for medium-high heat.
- Brush peaches with a light coating of oil. Place pit side down onto the grill. Grill for 5 minutes, or until the surfaces have nice grill marks. Turn the peaches over, and drizzle with a bit of honey. Place a dollop of the cream cheese spread in the place where the pit was. Grill for 2 to 3 more minutes, or until the filling is warm. GRILLED PEACH, TOFU RICOTTA AND ARUGULA TOAST
Steps:
- Make the tofu ricotta according to my Tofu Ricotta recipe. Refridgerate until ready to use.
- Heat a grill or a skillet on high heat. Toss the peach slices with olive oil. Once the grill or skillet is hot, place on the peach slices and grill for 4-5mins. Flip the peach slices and grill for another 4-5mins. Repeat this step if there is more peach slices to grill.
- Toast the pieces of bread if desired. Spread the tofu ricotta on each toast, divide the arugula and line 4-5 slices of grilled peach on each toast. Serve with freshly cracked black pepper and sea salt.

- Heat a charcoal or gas grill to medium high. Once hot, scrub the grates with a brush. Or heat a grill pan over medium high heat.
- Stir the ricotta and maple syrup together. You can use a blender, food processor, mini food processor or stick blender. If mixing by hand, first force the ricotta through a fine-mesh sieve and then stir in the maple syrup for a smooth, creamy texture. Taste and add more maple syrup if you like. Makes a scant 2 cups.
- Pour the chocolate chips into a microwave-safe bowl and nuke in 30-second intervals until they're mostly melted (should take approx. 1.5 minutes). Stir in the coconut milk and then the spices. Go easy on the black pepper at first as the ginger is also adding a bit of heat. Taste and adjust seasonings if necessary. Makes approx. 1.5 cups.
- Arrange the grilled fruit on a serving platter. Add bowls of the two sauces, a small bowl or pitcher of honey, piles of the nuts and fresh herbs and a small bowl of flaky sea salt, plus anything else you might like. Serve when the fruit is still warm or at room temperature. For the thyme, hold 1-2 springs over the fruit and strip off the leaves "against the grain," so to speak. If the chocolate sauce gets too thick as it sits, microwave for 30 seconds and stir.
