GRILLED BACON AND PROSCIUTTO SANDWICH
A flavorful twist on a classic dish; the Grilled Cheese. I use Cabot Extra Sharp Cheddar Cheese, though feel free to experiment with your favorite cheeses. Because of the richness of the Bacon and Prosciutto, I don't feel the need for as much cheese as I typically would on a sandwich. The bread can vary also, I enjoy some sort of Italian style, such as a Tuscan Loaf. The better the bread, the better the sandwich! This is a fairly foolproof recipe, as long as you don't burn anything during cooking, you should feel free to adjust the ingredients to taste. These are just my personal preferences for level of spice and flavor.

Steps:
- The Bacon and Prosciutto needs to be grilled, so start your grill to a Medium-High Heat.
- Take your garlic and rub it over the bread, trying to squeeze the juice onto it. Spread the butter on both pieces of bread.
- Mince the Garlic and Parsley, and spread just a tad of the finely minced garlic onto the buttered side of the bread. Leave some to use later.
- Take your cheese and place it on a non-buttered side of bread. Take your remaining garlic and parsley and season to taste.
- Place a frying pan on the stove and turn it to Medium Heat.
- When your grill is hot, start by placing the bacon over the flames. I do about a 1.5 minutes on one side then maybe a minute on the other. Just grill it to the crispyness you prefer. When you bacon is nearly done, place your prosciutto over the flames. This does not need to be for long! It is just to crisp the Prosciutto slightly.
- When done place the Bacon and Prosciutto on the cheese. Place your other slice of bread over it and set in frying pan to cook. (Buttered sides of bread should be out) Cover pan for 2 minutes. Flip with Spatula, side should be slightly crispy and brown. Cook on remaining side for another 1.5-2 minutes covered.
- Remove and enjoy!

PROSCIUTTO/FONTINO GRILLED SANDWICHES
I got this recipe off of the Foodtv show "Everything Italian". Best with bread from a Crusty type whole loaf, but could be made with bought sliced bread, as long as it is a large slice bread.

- Preheat grill pan on Med-low on top of stove.
- Drizzle one side of two slices of the bread with 1 1/2 teaspoons olive oil for each slice.
- Place the olive oil side down and on top of the plain side of the bread layer as follows.
- 1st.
- layer- 2 slices cheese 2nd.
- layer- paper thin slices of red onion 3rd.
- layer- 6 spinach leaves 4th.
- layer- Prosciutto 5th.
- layer- 2 slices cheese Top with remaining 2 slices of bread Drizzle the tops of the bread with the balance of the olive oil.
- Place sandwiches on the grill pan and press with grill press until as flat as possible.
- Cook until browned and crisp, about 4 min.
- per side.
- Serve fresh off the grill.
- This can also be grilled in a George Foreman type grill.

- Preheat oven to 375 degrees. Lay bacon in a single layer on a rimmed baking sheet and cook until crisp, about 15 to 20 minutes. Drain on paper towels. Cool and rinse the pan.
- Line the baking sheet with foil. Trim the root ends of the scallions, halve lengthwise, and chop into about 1-inch pieces.
- Lay out the bread on a work surface and butter 1 side of each piece. Put 4 slices of the bread, buttered side down, on the prepared baking sheet. Layer half of the cheese slices on the bread. Layer the bacon and scallions on top of the cheese and cover with the remaining cheese. Top with the remaining slices of bread buttered side up and bake until each bottom pieces of bread is golden brown, about 10 minutes. Flip the sandwiches and bake until the other side is golden brown and the cheese has melted, about 8 to 10 minutes more.

This is a great variation of the classic grilled cheese sandwich. It also goes well with tomato soup.

- Mix the cheese, mayonnaise, and pimentos.
- Divide the mix and spread onto two of the bread slices.

- First, clarify the butter: Melt the butter in a small, heavy saucepan over very low heat, watching carefully so it does not burn. Remove from the heat and let stand briefly.
- Using a spoon, skim off and discard the foam from the surface.
- Carefully pour off the clear yellow liquid into a bowl.
- Discard the milky solids left behind in the pan.
- Lay 6 slices of the bread on a work surface and top evenly with the cheese, 1 slice of prosciutto and the pear slices. Top with the remaining bread.
- Brush a wide sauté pan or stovetop grill pan generously with the clarified butter and warm over medium heat.
- When it is hot, place as many sandwiches as will fit in the pan without crowding and weight them down with a pan lid.
- Cook until the bottoms are golden brown, about 4 minutes.
- Adding more butter as needed, carefully flip the sandwiches, replace the lid, and cook on the other side until golden brown, about 4 minutes more. The cheese will have melted.
- Remove the sandwiches from the pan and keep warm.
- Repeat with the remaining sandwiches.
- Cut each sandwich in half and serve warm.

- Cook bacon until crisp, drain on paper towel.
- Spread one side of each of the two pieces on bread with 1 tsp butter each.
- Place bread, butter side down in a non-stick pan on medium heat.
- Spread the cheddar cheese evenly on one of the pieces of bread, top with the bacon slices.
- Place the thin tomato slices evenly over the other piece of bread.
