1 oz. white creme de cacao
8 oz. hot chocolate
Whipped cream
1 fresh raspberry (optional)

Steps:

  • Pour raspberry liqueur and white creme de cacao in a cappuccino mug. Add hot chocolate and stir. Top with a dollop of whipped cream. Drizzle teaspoon of Chambord on top of the whipped cream. Top with a fresh raspberry.

2 cups old-fashioned oatmeal
1 cup sliced almonds
1 cup shredded coconut, loosely packed
1/2 cup toasted wheat germ
3 tablespoons unsalted butter
2/3 cup honey
1/4 cup light brown sugar, lightly packed
1 1/2 teaspoons pure vanilla extract
1/4 teaspoon kosher salt
1/2 cup chopped pitted dates
1/2 cup chopped dried apricots
1/2 cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8 by 12-inch baking dish and line it with parchment paper.
  • Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ.
  • Reduce the oven temperature to 300 degrees F.
  • Place the butter, honey, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture. Add the dates, apricots, and cranberries and stir well.
  • Pour the mixture into the prepared pan. Wet your fingers and lightly press the mixture evenly into the pan. Bake for 25 to 30 minutes, until light golden brown. Cool for at least 2 to 3 hours before cutting into squares. Serve at room temperature.

This is my variation on plain granola bars. I threw them together today for a camping trip and the kids loved them.

2 1/2 cups COCOA KRISPIES® cereal
2 cups quick-cooking oats
1/2 cup raisins
2/3 cup white chocolate chips
1/3 cup honey
1/2 cup brown sugar
1/2 cup light corn syrup
1/2 cup peanut butter
1 teaspoon vanilla

Steps:

  • Combine cereal, oats,raisins and white chocolate chips in a big bowl.
  • Warm honey, brown sugar, and light corn syrup in a saucepan on the stove top, stirring to combine.
  • Add peanut butter and vanilla and stir to combine then take off heat.
  • Pour mixture over cereal mixture and mix well.
  • Press into a 9 x 13 ungreased pan.
  • Be sure to press hard into pan all over so they don't fall apart.
  • Put in refrigerator for an hour to cool which makes them easier to cut.
  • Cut into 15 bars and enjoy.
  • You may also wrap in wax paper and freeze.

I've been looking everywhere for a chewy, chocolaty, high-fiber granola bar, WITHOUT high fructose corn syrup, but to no avail. So I decided to make my own! This EASY 5 minute recipe uses Kashi Cocoa Beach granola cereal that contains coconut and almonds. Enjoy!

14 ounces granola cereal (I use a box of Kashi brand "Cocoa Beach")
1/4 cup honey
1/4 cup cocoa powder (I use Hershey's)
1/4 cup brown sugar
6 tablespoons butter

Steps:

  • Grease an 8x8-inch baking dish. Do NOT use wax paper -- trust me. ;-).
  • Preheat oven to 300°F.
  • Melt butter, honey, brown sugar, and cocoa powder together over medium heat, stirring gently.
  • In large bowl, mix cereal and melted mixture together until everything is evenly coated.
  • Press coated mixture int prepared 8x8-inch baking dish.
  • Bake for 20 minutes.
  • Remove from oven and cool for 1 hour.
  • Cut into bars and put baking dish in fridge to chill until firmer.

Most granola bars are too sweet for my taste, so I wasn't much of a fan until I made these. They're inspired by a recipe from "Good to the Grain," by Kim Boyce, but I've cut down on the honey and added chocolate.

Number Of Ingredients 9

3 tablespoons unsalted butter or canola oil, plus additional for the pan and for your hands
2 cups mixed flaked grain cereal or rolled oats
1/2 cup flaxseed meal
1/2 teaspoon cinnamon
1/4 teaspoon salt (optional)
1/3 cup honey or agave syrup
2 tablespoons brown sugar
1 teaspoon vanilla
1/2 cup chopped bittersweet chocolate or chocolate chips

Steps:

  • Preheat the oven to 300 degrees. Generously butter or oil a 9-by-9-inch metal or glass baking pan.
  • Melt the butter over medium heat in a wide saucepan. Add the flaked grains or oats. Stir over medium heat until the grains are lightly toasted, taking care not to let them burn. Stir until they are beginning to smell toasty and have slightly darkened, six to seven minutes. Remove from the heat, and transfer to a bowl. Add the flaxseed meal, the cinnamon and the salt. Wipe the pan clean.
  • Combine the honey, vanilla and brown sugar in the pan in which you toasted the oats. Bring to a boil over medium heat. Boil five minutes. Pour over the oat mixture, and stir until it is evenly distributed over the mixture. Allow to cool for five minutes, then stir in the chocolate pieces.
  • Scrape into the pan, and spread evenly. Place in the oven for 20 minutes. Do not allow to brown or the bars will be hard instead of chewy. Remove from the heat, and allow to cool. Cut into 16 to 20 pieces, and store in an airtight container.

Eat this granola with berries and yogurt for breakfast, by the handful for an afternoon pick-me-up, or with peanut butter ice cream after dinner. (And yes, if you eat it with milk like cereal, it makes chocolate milk!) If you like your granola on the sweet side, stir in milk chocolate chips or a chocolate cereal like Cocoa Puffs once the granola is cool. Alternatively, lean into its bitterness by adding cacao nibs or chocolate-covered espresso beans.

1/3 cup unsweetened cocoa powder
1 teaspoon kosher salt (Diamond Crystal)
3 cups rolled, old-fashioned oats
1 1/2 cups raw or roasted unsalted nuts, such as pecans, almonds, hazelnuts or a mix, roughly chopped
1/2 cup raw seeds, such as pumpkin, sesame, millet, quinoa, sunflower, flax, chia or a mix
1 cup dried fruit, such as cherries, figs, dates or apricots, roughly chopped (optional)

Steps:

  • Heat the oven to 300 degrees. In a large bowl, use a fork to stir together the maple syrup, oil, cocoa powder and salt until smooth. Add the oats, nuts and seeds, and stir until combined.
  • Spread the mixture out on a parchment-lined sheet pan. Bake, without stirring, until fragrant and dry to the touch, 35 to 40 minutes.
  • Sprinkle the dried fruit over the granola (if using), then turn off the oven. Leave the granola in the oven to cool completely, 30 minutes to an hour, then break into clumps. Store in an airtight container at room temperature for up to 2 weeks.

½ cup flax seed meal
½ cup sliced almonds

1 teaspoon ground cinnamon

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
  • Spread rolled oats, flax seed meal, sliced almonds, shredded coconut, and chia seeds onto a baking sheet.

  • Reduce oven heat to 300 degrees F (150 degrees C).
