Steps:
- Preheat the oven to 350 degrees F. Butter an 8 by 12-inch baking dish and line it with parchment paper.
- Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ.
- Reduce the oven temperature to 300 degrees F.
- Place the butter, honey, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture. Add the dates, apricots, and cranberries and stir well.
- Pour the mixture into the prepared pan. Wet your fingers and lightly press the mixture evenly into the pan. Bake for 25 to 30 minutes, until light golden brown. Cool for at least 2 to 3 hours before cutting into squares. Serve at room temperature.
COCOA GRANOLA BARS
This is my variation on plain granola bars. I threw them together today for a camping trip and the kids loved them.

Steps:
- Combine cereal, oats,raisins and white chocolate chips in a big bowl.
- Warm honey, brown sugar, and light corn syrup in a saucepan on the stove top, stirring to combine.
- Add peanut butter and vanilla and stir to combine then take off heat.
- Pour mixture over cereal mixture and mix well.
- Press into a 9 x 13 ungreased pan.
- Be sure to press hard into pan all over so they don't fall apart.
- Put in refrigerator for an hour to cool which makes them easier to cut.
- Cut into 15 bars and enjoy.
- You may also wrap in wax paper and freeze.

I've been looking everywhere for a chewy, chocolaty, high-fiber granola bar, WITHOUT high fructose corn syrup, but to no avail. So I decided to make my own! This EASY 5 minute recipe uses Kashi Cocoa Beach granola cereal that contains coconut and almonds. Enjoy!

- Grease an 8x8-inch baking dish. Do NOT use wax paper -- trust me. ;-).
- Preheat oven to 300°F.
- Melt butter, honey, brown sugar, and cocoa powder together over medium heat, stirring gently.
- In large bowl, mix cereal and melted mixture together until everything is evenly coated.
- Press coated mixture int prepared 8x8-inch baking dish.
- Bake for 20 minutes.
- Remove from oven and cool for 1 hour.
- Cut into bars and put baking dish in fridge to chill until firmer.

GRANOLA BARS WITH CHOCOLATE
Most granola bars are too sweet for my taste, so I wasn't much of a fan until I made these. They're inspired by a recipe from "Good to the Grain," by Kim Boyce, but I've cut down on the honey and added chocolate.

Steps:
- Preheat the oven to 300 degrees. Generously butter or oil a 9-by-9-inch metal or glass baking pan.
- Melt the butter over medium heat in a wide saucepan. Add the flaked grains or oats. Stir over medium heat until the grains are lightly toasted, taking care not to let them burn. Stir until they are beginning to smell toasty and have slightly darkened, six to seven minutes. Remove from the heat, and transfer to a bowl. Add the flaxseed meal, the cinnamon and the salt. Wipe the pan clean.
- Combine the honey, vanilla and brown sugar in the pan in which you toasted the oats. Bring to a boil over medium heat. Boil five minutes. Pour over the oat mixture, and stir until it is evenly distributed over the mixture. Allow to cool for five minutes, then stir in the chocolate pieces.
- Scrape into the pan, and spread evenly. Place in the oven for 20 minutes. Do not allow to brown or the bars will be hard instead of chewy. Remove from the heat, and allow to cool. Cut into 16 to 20 pieces, and store in an airtight container.

- Heat the oven to 300 degrees. In a large bowl, use a fork to stir together the maple syrup, oil, cocoa powder and salt until smooth. Add the oats, nuts and seeds, and stir until combined.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
- Spread rolled oats, flax seed meal, sliced almonds, shredded coconut, and chia seeds onto a baking sheet.
- Toast oats mixture in preheated oven, stirring every 5 minutes, until lightly toasted, about 15 minutes.
- Reduce oven heat to 300 degrees F (150 degrees C).
