1 lb. dry pasta, such as elbow, bow tie, or rotini
1 15-oz. can corn kernels
1 15-oz. can black beans
1 c. shredded Cheddar
1 c. halved cherry tomatoes
2 avocados, diced
1/3 c. Chopped cilantro
For The Dressing
1 c. Greek yogurt
1/3 c. extra-virgin olive oil
1 tbsp. honey
1 tbsp. apple cider vinegar
2 cloves garlic, minced
2 Limes, juiced
1/2 jalapeño, chopped
1 1/2 tbsp. Taco Seasoning
kosher salt

Steps:

  • In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and and cool, 5 minutes.
  • Meanwhile, make dressing: Whisk all ingredients together. Taste and add salt as desired.
  • Stir corn, black beans, cheese, tomatoes, avocados and cilantro in with pasta. Toss with dressing. Cover tightly and refrigerate 1 hour before serving.

1/2 cup fresh lime juice
1/4 cup olive oil
2 teaspoons ground cumin
2 garlic cloves, minced
1 tablespoon salsa
1 tablespoon white wine vinegar
3/4 teaspoon cayenne pepper
1/2 teaspoon salt
1 package (16 ounces) uncooked spiral or cavatappi pasta
1-1/2 cups fresh or frozen whole kernel corn, thawed
1 can (15 ounces) black beans, rinsed and drained
1 cup cherry tomatoes, halved
2 cans (2-1/4 ounces each) sliced ripe olives, drained
1 small green pepper, finely chopped
1 small sweet red pepper, finely chopped
1 small red onion, finely chopped
1/2 cup coarsely chopped fresh cilantro, divided
1 medium ripe avocado, peeled and sliced

Steps:

  • In a small bowl, whisk the first 8 ingredients until blended. Cook pasta according to package directions. Drain pasta; rinse with cold water., In a large bowl, mix pasta, corn, beans, tomatoes, olives, peppers, onion and 1/4 cup cilantro. Pour dressing over salad; toss to coat. Refrigerate until serving., Just before serving, top with avocado and the remaining cilantro.

1 pound orecchiette, cooked al dente
2 yellow peppers, grilled and julienned
1 red onion, finely sliced
6 tomatillos, quartered
1 cup fresh corn kernels
1 cup frozen baby lima beans, thawed
1/4 cup white wine vinegar
1 canned chipotle pepper
1/2 cup olive oil
Salt and freshly ground pepper
1/4 cup cilantro, finely chopped

Steps:

  • Place cooked pasta in a large bowl, add peppers, onions, tomatillo, corn and lima beans. Place vinegar and chipotle peppers in a blender and blend until smooth. Slowly add olive oil until emulsified and season with salt and pepper to taste. Toss the salad with the dressing and add cilantro.

8 ounces whole wheat pasta (bow tie, elbow, or similar)
1 (15-ounce) can corn
1 (15-ounce) can reduced sodium black beans (drained and rinsed)
2 cups halved cherry tomatoes
2 large avocados (peeled, pitted, and diced)
3 whole green onions (thinly sliced)
1 large jalapeno (cored, seeded, and diced)
1/3 cup chopped cilantro
1/4 cup crumbled feta cheese
3/4 cup nonfat plain Greek yogurt
2 tablespoons extra-virgin olive oil
Zest of 2 limes (plus 2 tablespoons freshly squeezed lime juice)
1 teaspoon Tabasco (or similar hot sauce)
1/2 teaspoon kosher salt
1/2 teaspoon chili powder
1/4 teaspoon smoked paprika

Steps:

  • Cook the pasta to al dente according to package instructions. Rinse with cool water, drain, and place in a large serving bowl. Add the corn, black beans, cherry tomatoes, avocados, green onions, jalapeno, and cilantro.
  • To make the dressing, in a small bowl or large measuring cup, stir together the Greek yogurt, olive oil, lime zest and juice, hot sauce, salt, chili powder, and smoked paprika. Taste and add additional salt or spices as desired. Pour over the pasta mixture. Toss to coat, then sprinkle the feta over the top. If time allows, chill for 2 hours prior to serving or enjoy immediately.
