1/4 cup Soy sauce
1 cup Coca Cola
1/2 cup Dark brown sugar
2 tablespoons Dijon mustard
3 tablespoons Oil
2 tablespoons Worcestershire sauce
1/3 cup Ketchup
2 cloves Garlic minced
1 tablespoon Dry mustard
2 tablespoons Balsamic Vinegar
1 teaspoon Ginger
1 teaspoon Thyme crushed
5 pounds Pork loin roast boned and rolled
Glaze:
1 cup Brown sugar
1 tablespoon Corn starch
1/2 teaspoon Dry mustard
2 tablespoons Butter
1/3 cup Balsamic Vinegar
2/3 cup Coca Cola
Sea Salt
Fresh ground pepper

Steps:

  • Combine all the ingredients except for the meat to form a marinade. Place roast in plastic zip-lock bag, pour in marinade and seal. Place in a large bowl to keep marinade from spreading away from roast. Let stand for 24 hours, or overnight in refrigerator, patting and turning the bag every few hours. Preheat oven to 325 degrees. Remove roast from marinade; discard marinade. Place roast, fat side up, on rack in roasting pan. Insert meat thermometer into thickest part. Do not add water or cover. Roast in oven until temp is 175 degrees. Allow 30-40 minutes per pound for roasting, so five pounds would take 2 1/2 to 3 hours. During last half hour of cooking time, brush on the glaze. (see below) Remove from oven and pan onto a platter. Cover with a foil tent to seal steam and rest the meat 15 minutes before slicing. Alternately, you may roast at 250-275 for twice as long. The meat will be even more tender. Glaze: Mix together all ingredients in sauce pan; simmer and stir to thicken. Brush or spoon glaze on meat frequently during cooking. Serve remaining sauce with sliced pork.

18 ounces Coca-Cola
1/2 large onion, chopped
1/2 green bell pepper, chopped
1 tablespoon mccormick's Montreal roasted garlic chicken seasoning

Steps:

  • To make basting mixture, pour Coca Cola in a saucepan with chopped onions and peppers, and 1 tablespoon of Montreal Chicken Seasoning.
  • Bring your mixture to a boil. Stir gently while boiling for about 2 minutes.
  • Cover and simmer your basting mixture for about 30 minutes until it gets a bit syrupy.
  • When your basting mixture is ready, wash your pork loin, then sprinkle it with Montreal Chicken Seasoning, rubbing it on all sides.
  • Set your oven at 400 degrees. Layer the bottom of your roasting pan with tin foil to protect your pan's surface.
  • Place your pork loin on a rack over the tin foil in your roasting pan
  • Using a large stirring spoon, carefully pour some of your basting mixture with onions and peppers over your pork loin.
  • Allow your basting mixture to continue to simmer while basting your pork loin about every 15 minutes.
  • Roast your pork loin for about 75 minutes or until cooked to 160 degrees internally (use a meat thermometer to measure).
  • When done, remove your pork loin from the oven, place on a serving dish, and pour the remainder of your basting mixture over it.
  • Serve with vegetables of your choice. Try to be humble as your guests compliment you on the outstanding savory and juicy flavor of your pork loin.

1 tbsp garlic salt
1 pinch black pepper
1 tbsp Cajun spice
Olive oil
1 tbsp fine brown sugar
2 tbsp canola oil
3 tbsp diced jalapeno
2 tbsp diced garlic
3 cups ketchup
1/4 cup chicken stock
1 cup orange juice
1/2 cup molasses
1/4 cup Coca-Cola
1/2 cup brown sugar
1 tbsp liquid smoke
1 tsp garlic salt

Steps:

  • For the pork loin: Start by seasoning the pork really well all over with the garlic salt, Cajun spice, and the brown sugar. Then using your hand, pat the pork with the oil. On the grill or grill pan and medium heat cook for 8 to 12 minutes, rotating every couple of minutes. After the pork is five minutes from done, add the barbeque sauce and rotate so that the sauce sticks.
  • Remove and slice. Serve with Sauce.
  • For the sauce: In large sauce pan add the oil, heat the oil just a little and add the garlic, shallots, jalapeno; saute for 2 minutes, then add the remaining ingredients. Mix well and bring to a low simmer until sauce is combined. Check the flavor and adjust the sweetness if you like.

1 cup cider vinegar
1/2 cup sugar
2 tablespoons salt
1 (2 1/2 to 3-pound) pork loin
1/4 cup ground coffee beans
3 tablespoons dark brown sugar
2 tablespoons whole peppercorns
3 whole star anise
1 (1/2-inch) piece cinnamon stick broken into small pieces
3 tablespoons unsalted butter
3 tablespoons canola or vegetable oil
1/2 pound bacon, diced
2 cups demi-glace or 1 package demi-glace mix dissolved in 1 cup water
1 cup red wine
1 cup pineapple juice, from canned pineapple tidbits
1/2 cup pineapple tidbits
1 cup cola

Steps:

  • Preheat your oven to 350 degrees F.
  • Combine 1 cup of warm water with the vinegar, sugar and salt in a medium bowl, whisking until the sugar and salt are dissolved. Transfer to a large resealable gallon-sized plastic bag. Add 1 cup of cold water and the pork loin, seal, and refrigerate overnight.
  • Pulse the coffee, brown sugar, peppercorns, star anise and cinnamon stick in a coffee or spice grinder until they become a fine powder. Remove the pork loin from the brine and pat dry with paper towels. Rub with the spice mix, transfer the pork to a baking sheet and set it aside at room temperature.
  • In a large skillet melt the butter with the oil over medium-high heat. Add the pork loin and brown for 5 minutes, turning to brown all sides. Transfer the pork to a baking sheet and roast until the temperature reads 160 degrees F on an instant-read thermometer, about 1 hour. Remove the roast from the oven, cover loosely with aluminum foil, and let it rest for 10 minutes before slicing.
  • In a medium saucepan over medium heat, cook the diced bacon until crispy. Remove any excess fat from the pan and add the demi-glace, red wine, cola, pineapple juice and pineapple tidbits. Bring back to a simmer over medium-high heat for 10 minutes, until the sauce has reduced by half. Slice the pork loin and serve with the sauce on the side.

Set the plastic bag in a serving bowl large enough to steady the roast and keep the marinade ingredients from spreading away from the roast. Let stand for 24 hours or overnight in the refrigerator, patting and turning the bag every few hours to ensure the meat marinates evenly. This helps the roast absorb the marinating liquids and creates a tender, juicy and flavorful roast. Remove roast from marinade and discard the marinade. Place roast, fat side up, on rack in roasting pan. Insert roast meat thermometer so the bulb is centered in the thickest part. Do not add water. Do not cover. Roast in a slow 325 degree preheated oven until the thermometer registers to 175 degrees. Allow 30 to 40 minutes per pound for roasting, so for a 5 pound loin roast, you would be roasting for about 2-1/2 to 3 hours. During last 1/2 hour of cooking time, brush on the glaze. If you prefer, you can just as easily cook on the grill or in the smoker. Remove from the oven and out of the pan onto a platter; cover with foil tent to seal steam and rest the meat 15 minutes before slicing and this results in a much juicier roast. NOTE: Alternatively, you can slow-roast. Instead of roasting at 325, use a slow oven at 250 - 275 degrees, and allow almost twice as long. The meat will be even more tender. Use your meat thermometer or whatever means you like to achieve desired doneness. Coca-Cola Sauce 1 cup brown sugar 1 tablespoon cornstarch 1/2 teaspoon dry mustard 2 tablespoons butter 1/3 cup balsamic vinegar 2/3 cup Coca-Cola Sea salt and fresh ground pepper Mix together all ingredients in sauce pan; simmer and stir to thicken. This is a modified version of a friend's recipe for pulled pork. Hers is always a hit at potlucks. The only revisions I made to her original recipe were to suit my family's taste. This is the easiest, tastiest pulled pork. Set the Crock Pot before you leave the house for work and return home to a wonderful aroma and a main dish that is ready when you are. It turns out slightly sweet and smokey with a hint of heat. The Coca-Cola makes the meat fall-off-the-bone tender. I could make my own barbecue sauce but choose to use Famous Dave's Rich & Sassy sauce instead. It's easier, and my family loves it! Use your favorite brand of barbecue sauce if Famous Dave's brand is unavailable in your area. Serve on a burger bun or on its own and enjoy!

2 teaspoons garlic, minced, dehydrated

1 liter Coca-Cola (or other brand of cola)
1 (20 ounce) bottle barbecue sauce (I use Famous Dave's Rich & Sassy)

Steps:

  • Place roast in a 5 quart crock pot. Season with garlic, onion, black pepper and cayenne pepper. Add liquid smoke and pour in Coca-Cola until it reaches nearly the top of the roast (or covers it depending on the cut of meat).
  • Set Crock Pot on low heat and cook for 8-10 hours.
  • When ready to serve, remove roast from Crock Pot to a platter. Remove any bones and trim all fat. With a fork, begin "pulling" pork apart into thin shreds. Add barbecue sauce and fold into meat.
  • Serve pulled pork on a burger bun or on its own.
  • Note: If preparing this dish for a potluck, pour 1 cup of Crock Pot liquid into a measuring cup and discard the remainder. Then return pulled pork to Crock Pot, set on warm or low heat setting, add 1/2 cup of reserved liquid (to keep the meat from drying out) and cover until ready to serve. If the meat is in the Crock Pot for more than one hour, add more liquid as needed for moisture.

Yield 1 roast with lots 'o gravy

Number Of Ingredients 4

3 -4 lbs roast (I used boneless pork shoulder tonight)
1 (1 1/4 ounce) package onion soup mix
1 cup Coca-Cola Classic (caffeine-free will do in a pinch, but diet is horrible!)
salt and pepper

Steps:

  • Rub the roast with salt and pepper then place it in the crockpot.
  • Add soup mix and coke.
  • Cook on low 8 hours or high for 4.
  • Before serving dump liquid from crockpot into a pot.
  • Skim fat.
  • To the remaining juices add salt and pepper to taste and a dash of Kitchen Bouquet.
  • Bring mixture to a boil.
  • Remove a cup of the liquid and add corn starch to thicken.
  • Add corn starch mixture to the rest of the juices.
  • Cook until it reaches desired consistency.
  • WONDERFUL GRAVY!
