Absolutely delicious take on pork chops. The chops really benefit from the bacon, making them moist and flavorful. You can also do on the grill if you prefer.

4 boneless pork chops (about 1 inch thick)
1/2 cup barbecue sauce
8 slices bacon
4 sprigs fresh rosemary
salt & freshly ground black pepper

Steps:

  • Preheat oven to 400°F.
  • On work surface layer slices of bacon side by side. Place each chop on 2 pieces of bacon (picture 2 slices of bacon as the upright part of an H, and the pork chop as the across section). Season with salt and pepper.
  • Slather the chops with barbeque sauce. Flip the chops and slather the other side as well, until barbeque sauce is used up.
  • Lay a sprig of rosemary on each chop (letting the ends hang over the edge, for easy removal before serving).
  • Wrap bacon slices tightly around each chop.
  • Prepare broiler pan (or any roasting pan with a rack), by spraying surface with cooking spray.
  • Bake for 30 to 35 minutes until a meat thermometer inserted in thickest part of the meat should register about 150°F
  • Turn oven to broil and broil on each side until bacon is crisp.
  • Let chops rest for a few minutes. Remove rosemary sprigs before serving.
  • If desired, serve with additional warmed barbeque sauce.
  • Note: To cook on grill, cook over direct heat for about 5 minutes per side, then transfer to indirect heat and continue cooking until internal temperature is 150°F (about 30 minutes).

4 6-7 ounce Smithfield Boneless Pork Loin Chops (1 1/4-inch thick)
1 teaspoon coarse salt
4 slices Thick-Cut Smithfield Bacon
4 tablespoons barbecue sauce
1/2 cup lager beer
1 teaspoon canola oil
1/2 cup chicken broth, reduced-sodium

Steps:

  • Season pork with salt. Wrap bacon around edges of pork and secure with wooden toothpick.
  • Mix together barbecue sauce and beer.
  • Heat oil in oven-proof large skillet over medium-high heat. Stand chops with bacon-wrapped edges down in skillet, leaning against side of pan if needed. Using tongs, rotate chops along edges to lightly brown bacon (allow about 45 seconds to brown each section).
  • Place chops flat side down in skillet and cook until underside is lightly browned, about one minute. Turn chops over. Spread equal amount of barbecue sauce mixture over each chop, letting excess run into skillet.
  • Place skillet with chops in oven and bake for 10 minutes. Transfer each chop to dinner plate and let stand.
  • Pour fat from skillet, leaving browned bits. Heat skillet over high heat until hot. Add broth and bring to a boil, scraping up browned bits with wooden spoon, and boil until reduced by half, about two minutes. Top each chop with spoonful of sauce and serve hot.

3 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon crushed red pepper
8 strips bacon
4 boneless center-cut pork loin chops, 3/4 inch thick (about 1 lb)
1 tablespoon chopped fresh thyme leaves
1/2 teaspoon finely chopped fresh rosemary leaves
1/4 teaspoon black pepper
1 teaspoon finely grated lemon peel

Steps:

  • Heat oven to 425°F. Spray bottom of 18x13-inch rimmed sheet pan with cooking spray.
  • In large bowl, toss cauliflower, 2 tablespoons of the olive oil, the salt and red pepper. Spread cauliflower mixture evenly in sheet pan. Roast 20 minutes; stir.
  • Meanwhile, place bacon on microwavable plate. Cover; microwave on High 3 to 4 minutes or just until edges begin to brown but are still soft and pliable.
  • Rub pork chops with remaining 1 tablespoon olive oil; sprinkle with thyme, rosemary and black pepper. Arrange 2 bacon pieces over top of each pork chop, and place in sheet pan with cauliflower, tucking ends of bacon underneath each pork chop.
  • Bake 9 to 11 minutes or until meat thermometer inserted in center of pork chop reads at least 145°F. Garnish cauliflower with lemon peel before serving.

  • Heat oven to 450°F. Spray 15x10x1-inch pan with cooking spray, or line with cooking parchment paper.
  • In thick side of each pork chop, cut a slit about 2 inches deep and 3 inches long to form a pocket (do not cut in half.) In small bowl, mix cheese, bacon and 4 teaspoons of the barbecue sauce. Spoon generous tablespoonfuls cheese mixture into each pocket; pinch edges of pork together, and secure with toothpick.
  • Sprinkle both sides of pork with salt and pepper. In 12-inch nonstick skillet, heat oil over medium-high heat. Cook pork chops in oil 1 to 2 minutes, turning once, just until lightly browned. Place pork chops apart on pan.
  • Bake 8 to 10 minutes or until meat thermometer inserted in thickest part of pork reads 145°F. In small microwavable bowl, microwave remaining barbecue sauce covered on High 45 to 60 seconds or until heated through.
  • Before serving, remove toothpicks from pork chops. Brush chops with warm barbecue sauce; garnish with green onion. Serve with mashed potatoes.

1 (12 ounce) bottle tomato-based chili sauce

16 ounces 80% lean ground beef
3 slices bacon, chopped
¼ cup minced onion
salt and freshly ground black pepper to taste
3 tablespoons dill pickle relish
3 tablespoons yellow mustard
3 tablespoons BBQ sauce
1 teaspoon garlic powder
1 (16.3 ounce) package refrigerated biscuit dough (such as Pillsbury Grands!®)
5 ounces Cheddar cheese
2 teaspoons sesame seeds
⅓ cup ketchup

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat 16 cups of 2 muffin pans with cooking spray.
  • Heat a large skillet over medium heat. Add ground beef, bacon, onion, salt, and pepper and cook, stirring, until beef is browned, about 6 minutes. Drain fat, and stir in dill pickle relish, mustard, BBQ sauce, and garlic powder. Set filling aside to cool.
  • Separate each biscuit dough portion in half to get 16 biscuits, stretching and pulling each into a circle about 1/4 inch thick. Spoon about 2 tablespoons of the ground beef mixture into the center of each dough circle. Cut cheese into 16 cubes and insert each cube into the ground beef mixture. Wrap dough around the filling in the shape of a ball and pinch edges on the bottom together so biscuits are sealed around the filling.
  • Set each biscuit seam side down in a muffin cup. Lightly spray the biscuit tops with cooking spray and sprinkle with sesame seeds.
  • Bake in the preheated oven until golden brown, 15 to 20 minutes. Serve with ketchup for dipping on the side.

Tired of the same old pork chops, I thought I would do them on the grill, bacon wrapped. I used a mixture of charcoal briquettes and charcoal. The briquettes last longer and the charcoal adds that campfire flavor, while the bacon added the taste of smoked hickory. Marinating them for 2 days in the Orange Juice Brine provided the hint of orange flavor, and helped to create a real moist chop. 4 lbs whole pork loin
4 large oranges, zest and juice
1/4 cup cider vinegar
1 large lemon, zest and juice
4 garlic cloves, grated
1/4 cup kosher salt, coarse
butcher's kitchen twine
8 slices thick-sliced bacon
vegetable oil, as needed
cajun seasoning, Butt Kickin' Blacken, Original Recipe, as needed
coarse kosher salt, as needed

Steps:

  • 1. Trim the fat and silver skin from the pork loin, then cut it into 8 equal pieces. Each chop should be 1 1/4" - 1 1/2" thick. If your pork loin isn't large enough, you may get only 6 pieces out of it. The thick chops, will end up more tender and moist after they've been cooked on the grill.
  • 2. Mix up the ingredients for the marinade. Then, place the pork chops, and the marinade into a plastic bag. Set this in the refrigerator for at least 24 hours, but you could leave it as long as 48 hours without harming the chops.
  • 3. Cut the butcher's twine into lengths that will go around each chop, with a bunch additional length. Make sure you cut a couple of extra strings, because you might drop one or two on the floor like I usually do.
  • 4. Wrap the bacon around each chop, then tie with the twine.
  • 5. Set them on a platter, drizzle with the oil, put a heavy dusting of blacken and a little Kosher Salt on each chop, and rub it in well. Turn them over, and do the other side.
  • Ron' Note:.
  • If you notice that the seasoning isn't pasty after you've applied it to the chops, just add a little more oil.
  • 6. Cook over a fairly low fire, on the grill. Mine was on for about 50 minutes this time. Cook to an internal temperature of 140 - 145 degrees, with an instant read meat thermometer. When each is done, place on a platter and cover with aluminum foil to rest. I found that I took 4 off the first go-round, then gave it another five minutes. As they cook, you'll feel them begin to firm up. If they're still squishy, they probably aren't done yet.
