4 eggs
1 cup hot water
½ cup vegetable oil
1 (3 ounce) package instant lemon pudding mix
¼ cup poppy seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line muffin cups with paper liners.
  • Beat cake mix, eggs, hot water, vegetable oil, pudding mix, and poppy seeds together in a large bowl with an electric mixer on low until blended, about 4 minutes; pour into lined muffin cups to about 1/3 full.
  • Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes.

2 large eggs, separated
1 1/3 cups flour

1/2 cup buttermilk or 1/2 cup plain yogurt
2 tablespoons lemon juice
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F Coat muffin tin with nonstick cooking spray.
  • In a large bowl, cream the butter and sugar until fluffy.
  • Add the egg yolks, one at a time.
  • Beat well after each.
  • In a separate bowl, stir together the dry ingredients, poppy seeds, and lemon zest.
  • With the mixer on low speed, add the dry ingredients to the creamed mixture, alternating two times with the buttermilk, then lemon juice, and then vanilla.
  • Beat just until smooth.
  • In another bowl, beat the egg whites until soft peaks form.
  • Gently fold them into the muffin batter until blended.
  • Spoon the batter into the prepared pan, 3/4-full.
  • Bake at 350°F for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Cool for 5 minutes before removing to cool completely.
  • I sometimes sprinkle the muffin mixture with sugar prior to putting in the oven just to add a little extra sweetness.

1 3/4 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon coarse salt
1 cup sugar, plus more for sprinkling (optional)
2 large eggs, room temperature
1 1/2 teaspoons lemon zest plus 1/4 cup lemon juice
1/4 cup whole milk, room temperature
1 stick unsalted butter, melted and cooled
3 tablespoons poppy seeds, plus more for sprinkling (optional)

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a separate bowl, whisk together sugar, eggs, zest, juice, and milk. Whisk in butter. Stir wet ingredients into dry ingredients, until just combined. Stir poppy seeds into batter.

2 teaspoons poppy seeds
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder

1/2 cup vegetable oil
1/4 cup buttermilk or plain yogurt (not Greek)
1/2 teaspoon pure vanilla extract
2 large eggs
1 cup packed grated zucchini (about 1 zucchini)

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with paper liners. Using a vegetable peeler, remove the zest from the lemon in wide strips, being careful not to remove the white pith. Combine the lemon zest and sugar in a food processor and process until the zest is finely chopped, scraping the bowl halfway through, about 1 minute. Stir in the poppy seeds. Scoop out 3 tablespoons of the lemon-poppy seed sugar and set aside.
  • Whisk the flour, baking soda, baking powder and salt in a large bowl. Whisk the remaining lemon-poppy seed sugar, the vegetable oil, buttermilk, vanilla and eggs in a medium bowl; stir into the flour mixture until just combined. Stir in the zucchini.
  • Divide the batter among the muffin cups, filling them three-quarters of the way. Tap the bottom of the pan lightly on the counter to smooth out the batter. Sprinkle the tops of the muffins with the reserved lemon-poppy seed sugar. Bake until the muffins are golden brown around the edges and a toothpick inserted into the center comes out clean, 23 to 25 minutes. ¾ cup white sugar
¼ cup poppy seeds
2 teaspoons baking powder

2 eggs
1 cup lemon flavored yogurt
¼ cup vegetable oil
1 tablespoon grated lemon zest
⅓ cup lemon juice
3 tablespoons white sugar

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Lightly grease a muffin tin.
  • Combine the flour, 3/4 cup white sugar, poppy seeds, baking powder, baking soda and salt.
  • In a separate bowl mix the eggs, yogurt, vegetable oil and lemon zest. Blend well and pour over the flour mixture. Mix until just combined. Do no overmix!
  • Spoon batter evenly between the prepared muffin cups. Bake at 400 degrees F (205 degrees C) for 20 minutes.
  • Combine the lemon juice with the remaining 3 tablespoons white sugar. Stir into sugar dissolves.

Steps:

  • Preheat the oven to 375 degrees F. Lightly brush a 12-cup muffin tin with butter and set aside. Sift the flour, baking powder, and salt into a medium bowl and set aside.
  • In a standing mixer fitted with the paddle attachment, or with an electric hand-held mixer in a large bowl, cream the butter, zest, and 2/3 cup sugar until light and fluffy, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula. Add the eggs, one at a time, beating well after each addition. Remove the bowl from the mixer. Stir in the poppy seeds.

  • In a large liquid measuring cup, measure the milk and the oil.

The next time I make them, I'm going to try cutting the sugar back to 1/2 cup and using a 1/4 cup of unsweetened apple in place of the 2 Tbls. of butter to see if they would be moister that way. 1 muffin = 3 points as written. With the changes mentioned above, 1 muffin = 2 points.

1 tablespoon lemon juice (I usually omit the lemon juice or peel since my son doesn't like lemon. Instead, I add 1 teaspoon of)

  • Heat oven to 400 degrees .
  • Line 12 muffin cups with baking cups or lightly grease bottoms only.
  • Mix streusel and set aside(I pulse the topping in a mini food processor. I like how the topping comes out this way).
  • Muffin: Combine dry ingredients and mix well. Add liquids and mix just until dry ingredients are moist.
  • Fill muffin cups.
  • Sprinkle streusel over muffins and pat gently.
  • Bake 18-20 minutes.

1 Tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 cup sour cream or plain yogurt
1/4 cup milk

2 tsp. almond extract
2 eggs (room temperature)
1/2 cup butter, melted and cooled slightly
1/2 cup powdered sugar
2 Tbsp. milk or water
1/2 tsp. almond extract

Steps:

  • Preheat oven to 400 degrees and line muffins tins with liners or grease the wells.
  • In a medium bowl, whisk together flour, sugar, poppy seeds, baking powder, baking soda and salt. Set aside.
  • In a small bowl, whisk to combine sour cream, milk, vanilla, almond, eggs, and melted butter.
  • Add wet ingredients to dry and stir just until combined. Batter will be thick. Fill muffin tins completely full with batter and place in over. TURN DOWN the temperature to 375 degrees and bake for 18-22 minutes or util an inserted toothpick comes out clean.
  • While muffins are baking, make your glaze by whisking together ingredients. If you want a thicker glaze, add more powdered sugar. Brush onto muffins when they come out of the oven and sprinkle with coarse sugar if desired. Let cool (or don't let cool) and enjoy!

  • measure out the ingredients (If you desire then change the poppy seeds and lemon juice for whatever you want, I recommend dark chocolate and banana)

1/2 tsp. baking soda
1/2 tsp. kosher sea salt
1 c. full-fat sour cream or full-fat lemon Greek yogurt
1/4 c. powdered sugar
1/4 c. fresh lemon juice

Steps:

  • Preheat oven to 425 degrees. Line a standard size muffin tin with liners OR spray the wells generously with non-stick baking spray.
  • In the bowl of a stand mixer, beat butter on medium speed until light and fluffy, about 2 minutes. Add sugar and lemon zest, beat on medium-high for 4 minutes, scraping down the sides as needed. Add vanilla extract, mix to combine. Add eggs one at a time, mixing well after each addition.
  • In a medium mixing bowl, whisk together the flour, poppy seeds, baking powder, baking soda, and salt.
  • With mixing speed on low, alternate adding 1/3 of the dry ingredients and the sour cream at a time until everything has been added. Mix just until combined, do not overmix. Let the batter sit for 10 minutes.

These are the best muffins I have ever made. They are not low-fat but I don't worry. (I can watch other stuff - these are too good) I make them in the jumbo muffin pans but they will work in the normal size - just adjust the baking time.

3 eggs
2 ½ cups white sugar
1 ⅛ cups vegetable oil
1 ½ cups milk
1 ½ teaspoons salt
1 ½ teaspoons baking powder
1 ½ tablespoons poppy seeds
1 ½ teaspoons vanilla extract
1 ½ teaspoons almond extract
3 cups all-purpose flour
¾ cup white sugar
¼ cup orange juice
½ teaspoon vanilla extract
½ teaspoon almond extract
2 teaspoons butter, melted

Steps:

  • Beat together the eggs, 2 1/2 cups white sugar and vegetable oil. Add in milk, salt, baking powder, poppy seeds, vanilla, almond flavoring, and flour. Mix well.
  • Bake in paper lined muffin cups (filled 3/4 full or 3 small greased loaf pans) at 350 degrees F (175 degrees C) for 15-20 minutes for muffins and 50-60 minutes for loaves. The tops should be browned and a toothpick inserted in the center should come out clean.
  • Remove muffins as soon as you can while still warm/hot and dunk tops into glaze. Turn right side up and cool on a cookie rack. With loaves just pour the glaze evenly over the three loaves while still in pans. Let cool to a warm temp. and remove from pans. Yes, it is a little messy but it is really good.
  • To Make Glaze: In a saucepan over low heat, combine 3/4 cup sugar, orange juice, 1/2 teaspoon vanilla, 1/2 teaspoon almond flavoring and 2 teaspoons melted butter. Warm in pan until the sugar is dissolved. Pour over loaf pans or dunk muffin tops into glaze when cooled to room temperature. (Omit the glaze altogether if you don't like the mess.)
