TLT (TOFU, LETTUCE & TOMATO SANDWICH)
A smoky, mustard-chipotle sauce gives this baked tofu enough character to please even the most avid bacon fan. Make it a meal: add some oven fries and a tall glass of minty iced tea. To make ahead, prepare through step 4. Wrap the baked tofu in plastic wrap and refrigerate for up to 3 days. Note: canned chipotle peppers (smoked jalapeños) add heat and smokiness to dishes: the adobo sauce alone adds a spicy zest without extra heat. Look for small cans in the Mexican food section in large supermarkets. Once opened they will keep for up to 2 weeks in refrigerator or 6 months in the freezer. (I always freeze what I don't use in a recipe.)

Steps:
- Preheat oven to 475°F; coat a baking sheet with cooking spray, or use release foil.
- Combine mustard, soy sauce and 1/2 teaspoon adobo sauce in a small bowl.
- Slice tofu crosswise into eight 1/2-inch pieces; pat dry with a paper towel and place on prepared baking sheet; using a spoon, spread half the mustard mixture on one side of the tofu; turn the slices over and spread the remaining mixture on the other side.
- Bake the tofu for 20 minutes.
- Combine mayonnaise with the remaining 1/2 teaspoon adobo sauce in a small bowl; Spread the mixture on the toasted bread.
- Divide the tofu, lettuce and tomato among 4 slices of toast and top with the remaining toast to make 4 sandwiches, cut in half to serve, enjoy.

SMOKY TOFU, LETTUCE, AND TOMATO SANDWICHES (VEGAN BLTS)
Tofu, quickly seared and seasoned, is the "meat" of this hearty, comforting sandwich. Of course, actual bacon can be subbed in for the meat-eaters in the house!

Steps:
- Set a large saute pan over medium-high heat. When hot, add the olive oil. When the olive oil is hot, add the tofu along with a pinch of salt. The tofu will hiss and jump around a bit, so watch out! Cook, flipping occasionally, until golden brown on both sides, 8-10 minutes. While the tofu cooks, mix the Tamari, pure maple syrup, and smoked paprika in a small bowl. When the tofu is done, reduce the heat to low and pour the Tamari mix over the top. Cook, flipping occasionally, until the sauce has reduced and thickened, about 1 minute. Transfer the smoky seared tofu to a plate.
- Toast the bread then smear each piece with mayonnaise, as little or as much as you like - 2 teaspoons to 2 tablespoons or so. Top four pieces of bread with tomatoes; sprinkle with a touch of salt and freshly ground black pepper. Add the tofu, then pile with the lettuce. Top with remaining slices of bread. Cut in half and serve.
TOFU "EGG" BREAKFAST SANDWICH RECIPE BY TASTY

- Remove tofu from package and drain. Wrap the tofu in paper towels and cover with a couple heavy books. Let sit for 10 to 15 minutes to remove excess water.
- Cut tofu in half, reserving one half for a future recipe. Slice into 4 rectangles.
- Add olive oil to pan over medium heat. Add the tofu rectangles, 1 tablespoon soy sauce, ¼ teaspoon garlic powder, and ⅛ teaspoon turmeric, and let brown for 3 to 4 minutes before flipping over. Repeat on other side with other half of seasonings.
- When both sides are browned, transfer tofu to plate.
- To make sauce, combine vegan mayo and ketchup in small bowl.
- Assemble sandwiches by coating ciabatta roll with sauce, then stack on 1 hashbrown, tofu "eggs" sliced tomato and sliced avocado. Repeat with remaining ingredients.
- Enjoy!
FOOD'S AMAZING CILANTRO TOFU SANDWICH
My friend Judy Ornstein has a popular neighborhood cafe on Pico Boulevard in Los Angeles called FOOD. I love all of the meals I've had there, but my absolute favorite signature dish that they make is a cilantro tofu sandwich. The tofu is dipped in a delicious cilantro-spiked marinade, briefly baked, then topped with a to-die-for roasted corn relish. Alayne Berman, FOOD's chef, shared the recipe with me. I've scaled the recipe down from 10 pounds of tofu to 1 pound, which will make four sandwiches. They are hearty, and I usually make a meal of half a sandwich, but the nutritional information is for a whole one.

- Heat the oven to 375 degrees. Pat the tofu dry with paper towels and cut laterally into 4 equal squares, approximately 1/3 inch wide. They should be just the right size for the sandwich bread.
- Line a sheet pan with parchment. In a large, wide bowl, whisk together all of the ingredients for the marinade. Pat each square of tofu with paper towels, then dip into the marinade, making sure to coat both sides. Transfer to the baking sheet.
- Bake the tofu for 7 to 10 minutes, until the edges are just beginning to color and the marinade sets on the surface of the tofu. Remove from the oven and allow to cool.
- Meanwhile, make the corn relish. Grill the corn until it colors lightly, and allow to cool. Remove the kernels from the cob. Peel, seed and dice the roasted peppers. Combine peppers, corn and remaining relish ingredients in a medium bowl. Salt and pepper to taste.
- For each sandwich, spread a thin coating of Vegenaise on each slice of bread. Top the bottom slice with a piece of baked marinated tofu. Fan thin slices of avocado over the tofu (the avocado helps the relish adhere to the sandwich). Top the avocado with 1/2 to 3/4 cup relish. Top the relish with slices of heirloom or good roma tomatoes and a handful of arugula. Top with the second slice of bread.
BAKED TOFU SANDWICH
I came up with recipe after reading all of the posts on baked tofu at www.vegweb.com, I had to try this stuff. This is one of my favorite sandwiches now! Easy delicious lunch.

- Wash the red bell pepper and cut in half horizontally.
- Dicard seeds.
- Place on foil lined baking sheet (skin side up) in a 500 degree oven.
- Bake until the pepper's skin in blakened, set aside until cool enough to handle.
- Peel off charred skin.
- Slather one piece of bread with nayonaise and other with spicy mustard.
- Layer the sandwich with tomato slices, salad blend, half bell pepper, and tofu slices.
- Bon apetit!

- Preheat your oven's broiler.
- Split the pita breads in half so that you have 4 round pieces. Spread mayonnaise on one half of each one, and tahini on the other half. Place tomato slices onto the mayonnaise halves, and sprinkle with a pinch of salt. Place 2 slices of tofu onto the tahini halves, and sprinkle a few drops of soy sauce over. Place the open sandwiches on a large baking sheet.
- Broil in the preheated oven until hot and bread is slightly toasted, about 4 minutes. Close the halves of each sandwich together, and cut into wedges to serve.
