End a savory winter meal on a refreshing note by combining citrus with a hint of spice. Tangerines or mandarin oranges can be used instead of clementines.

Steps:
- Bring water, sugar, and cinnamon to a simmer in a small saucepan. Cook until sugar dissolves, about 1 minute.
- Arrange clementines in a large bowl. Pour warm syrup over top, and let stand for at least 30 minutes.
- Divide clementines and syrup among 4 bowls.
SPICED CLEMENTINE SYRUP

- In a large pan with a heavy bottom, combine clementine juice with other ingredients by stirring gently. Bring to a boil, then reduce heat to low and simmer for 20 minutes. Remove from heat, strain the liquid (discard the solids) and allow to cool before making the punch.

- Loosen segments of each clementine from the top without detaching from the stem end. Place in a bowl. Sprinkle on liqueur. Cover; refrigerate 30 minutes. To start the sauce, bring 1/3 cup sugar, lemon juice and 1/3 cup water to a boil in a small saucepan over medium heat. Simmer, stirring, until liquid is clear. Remove from heat; set aside. Line baking sheet with foil. To make the shards, stir remaining 2/3 cup sugar and 1/4 cup water in a medium saucepan over medium heat until sugar is moistened. Bring to a boil, washing down sides of pan with a brush dipped in cold water, until syrup turns a golden caramel color. Remove from heat. Pour half the caramel onto baking sheet; set aside about 30 minutes to harden. To finish the sauce, add sugar-lemon syrup to remaining caramel in pan. Simmer, stirring often, until caramel dissolves. Transfer to a bowl; cool 15 minutes. Pour over clementines. Cover; refrigerate at least 2 hours. Break hardened caramel into shards; store in an airtight container until ready to serve. Before serving, garnish fruit with caramel shards and pomegranate seeds.

- Remove from heat and let steep, covered, 15 minutes. Strain syrup through a sieve into a bowl, discarding solids. Chill, covered, until cold, at least 2 hours.
- Cut peel from clementines, including all white pith, with a sharp knife, then cut fruit into 1/4-inch-thick rounds and put in a serving bowl. Add syrup and chill, covered, at least 1 hour. Just before serving, sprinkle with pomegranate seeds (if using).
CLEMENTINES IN GINGER SYRUP, ALGERIAN
Like cinnamon in this country, cardamom plays a starring role in Algerian sweets. Paired with star anise in a gingery syrup, it gives clementine, or any small oranges, slices an irresistible aroma, but the syrup would be just as wonderful over any kind of sliced fruit.

CLEMENTINE COSMOS
I was watching a Claire Robinson holiday show; she does the "5 Ingredients or Less" show on the food channel. I had just purchased a crate of clementines at the store that day and happened to stumble on this episode where she mentioned the crates of clementines available during the holidays. I never associated them with the holidays before and now I'm so glad I know since I come across a lot of clementine recipes on 'Zaar and haven't always been able to find them. In case you're counting, this does have 5 ingredients if you ignore the water and garnish! Happy holidays! Cheers!

- Chill 6-8 martini glasses by filling with ice and water. Set aside while you prepare the beverage.
- To make simple syrup, add sugar and water to medium saucepan. Juice the clementine quarters into the pan by squeezing them and then drop the spent rinds into the pan. Simmer until thickened, about 10 minutes. Strain into a glass measuring cup and set aside to cool.
- To make the cosmos, place the cooled clementine simple syrup into a cocktail pitcher. Add the cranberry juice, lime juice, and vanilla vodka. Cover the pitcher and shake vigorously to blend or stir vigorously. Pour into empty chilled martini glasses.
- Garnish with a slice of clementine and serve.
