CLASSIC COLLARD GREENS

Makes about 8 servings

Number Of Ingredients 8

2 tablespoons bacon drippings
2 cups chopped sweet onion
4 bunches collard greens, stemmed and chopped (about 32 cups)
1 smoked turkey leg
2 cups low-sodium chicken broth
2 teaspoons kosher salt
½ teaspoon crushed red pepper
¼ cup apple cider vinegar

Steps:

  • In a large Dutch oven, heat bacon drippings over medium-high heat. Add onion; cook, stirring occasionally, for 8 minutes or until onion is softened. Add collards in batches, stirring until wilted after each addition. Add turkey leg and next 3 ingredients; cover and cook for 25 minutes or until greens are tender. Stir in vinegar.

1 tablespoon olive oil
3 slices bacon
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon pepper
3 cups chicken broth
1 pinch red pepper flakes
1 pound fresh collard greens, cut into 2-inch pieces

Steps:

  • Heat oil in a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon from pan, crumble and return to the pan. Add onion, and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and fry until they start to wilt.
  • Pour in chicken broth, and season with salt, pepper, and red pepper flakes. Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.

3 lb. fresh collard greens
6 slices OSCAR MAYER Bacon, cut into 1-inch pieces
1 onion, chopped
1/2 cup chopped red peppers
2 cloves garlic, minced
1 can (14 oz.) fat-free reduced-sodium beef broth
1 Tbsp. HEINZ Apple Cider Vinegar

Steps:

  • Wash collard greens to remove all grit. Remove and discard hard stems. Place greens in bunches, then roll up; cut crosswise into strips.
  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
  • Add onions, peppers and garlic to drippings in skillet; cook 2 to 3 min. or until crisp-tender, stirring frequently. Stir in broth and vinegar. Add collard greens; mix lightly. Bring to boil, stirring occasionally; simmer on medium-low heat 45 min. to 1 hour or until collard greens are tender. Remove from heat. Stir in bacon.
