3/4 cup fresh orange juice
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
1/4 cup chicken stock
1 garlic clove, minced
2 tablespoons orange marmalade
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon light brown sugar
1 tablespoon butter
Pinch kosher salt and freshly cracked black pepper
Extra-virgin olive oil, for brushing
4 (6-ounce, 1-inch thick) salmon fillets
Kosher salt and freshly cracked black pepper

Steps:

  • Glaze: Bring all of the ingredients to a boil in a medium-sized saucepan over medium heat, stirring to melt the preserves and to keep the mixture from burning. Reduce the heat to a simmer and let the glaze reduce until syrupy, about 15 to 20 minutes. Adjust the seasonings with salt and freshly cracked pepper, to taste.
  • Salmon:
  • Heat a grill to medium-high heat.
  • Brush both sides of the fillets with olive oil just before grilling, then season with salt and pepper, to taste. Grill the salmon for about 4 minutes per side, brushing with the glaze during the final few minutes of cooking. Transfer the salmon to serving plates and brush them with the remaining glaze before serving.

We love to soak all our seafood in citrus marinades, but this combo of marinade and dry rub was a special treat! We used our indoor Foreman "infusion" grill, that unfortunately is no longer made but I'm sure any grilling application would produce similar delicious results.

2 -4 salmon fillets (8 oz per person is plenty)
1 cup orange juice
1 -2 lemon, juice and zest of (be sure to set some zest aside for dry rub as well.)
1/4 cup olive oil
lemon pepper ("Dash" makes a great product)
lime pepper
fresh coarse ground black pepper (black, white and pink)
chopped garlic

Steps:

  • This is not chemistry -- all ingredients can be adjusted to personal preference.
  • Generously sprinkle filets with various peppers and rub in, massaging gently.
  • Soak in marinaded with rubbed side up for approximately 1/2 hour.
  • Place filets on grill surface(same side up) and coat top with a bit more marinade, then "crust" with more peppers and the lemon zest.
  • This makes a wonderful light main dish, recommend serving with couscous, over a bed af steamed greens. Leftovers are fabulous the following day also, as a chilled lunch salad!

Olive oil
Pesto, recipe follows
1/2 to 3/4 cup very fine bread crumbs
1 teaspoon unsalted butter
2 oranges and 2 grapefruits, peeled and segmented
Citrus Soy Sauce, recipe follows
Steamed Spinach Leaves, recipe follows
2 tablespoons pine nuts
1/2 teaspoon chopped garlic
Salt and pepper, to taste
6 cups fresh basil, thoroughly washed and dried
1/2 cup olive oil
1/2 to 3/4 cup fresh bread crumbs
1 tablespoon olive oil
1/2 cup ginger, peeled and thinly sliced
1/4 cup shallots, peeled and thinly sliced
1/8 cup garlic, peeled and sliced
1 cup dry white wine
1/8 cup champagne vinegar
2 tablespoons soy sauce
1 1/2 tablespoons fish sauce
1 cups grapefruit juice
1 1/2 cups orange juice
1/4 cup fresh lemon juice
1 1/2 cups chicken stock, reduced to 1/2 cup
1 cup olive oil
2 pounds loose spinach leaves
2 large baking potatoes, like russets

Steps:

  • Preheat oven to 350 degrees F.
  • Heat a 12-inch non-stick saute pan over a high flame. Season the salmon fillets with salt and pepper. Add a small amount of oil to the pan and sear both sides of the salmon quickly, just a few seconds on each side, leaving the fish very rare. Remove the pan from the heat, and place the fish on a work surface. Wipe out the pan and reserve for later use.
  • Spread a 1/4-inch layer of pesto evenly over 1 side of the fillet. Sprinkle the top of the pesto with a light, thin dusting of fresh bread crumbs. Carefully invert each fillet into the pan and place it over a medium flame. Toast the bread coating, adding tiny bits of butter to the pan that will melt into the salmon underneath. Once the bread is toasted (after about 1 minute), place the pan in the oven for about 3 minutes, just to heat the fish through.
  • To serve, mound 1/6 of the spinach in the center of a warm dinner plate. Invert 1 salmon fillet onto the spinach, crust-side up, and ladle citrus soy sauce around the sides. Place 1 orange segment on top of 1 grapefruit segment in the sauce at 3 different points on the plate.
  • In the bowl of a food processor place, pine nuts, garlic, salt, and pepper. Add the basil and process again. With the motor running, add the oil in a stream slowly, scraping down the sides of the bowl occasionally. Add bread crumbs a little at a time, just enough to make pesto spreadable. Process and repeat until the pesto is the right consistency. Remove from food processor and set aside until ready to use.
  • In a non-reactive saucepan, saute the ginger in 1 tablespoon olive oil for 1 minute over medium heat. Add the shallot and garlic and continue cooking for 1 minute longer. Deglaze the pan with white wine, champagne vinegar, soy sauce, fish sauce, and all 3 fruit juices. Reduce the liquid volume down to 1 cup. Add the chicken stock, bring it to a boil, and cook another 3 minutes. Strain, pushing on the solids to extract as much liquid as possible, and place the liquid into a blender or food processor. With the motor running on low, add the remaining olive oil in a slow stream until all the oil is incorporated.
  • Wash spinach thoroughly and drain, leaving some of the water clinging to the leaves. In a 12-inch saute pan over medium heat, saute the spinach in a small amount of olive oil until it is wilted, 1 to 2 minutes. Drain excess moisture, season with salt and pepper.
  • Preheat oven at 350 degrees.
  • Peel potatoes and slice thin in a criss-cross cut on the zig-zag part of the mandolin. Lay out the slices on a baking sheet. Brush with clarified butter and bake until crisp, about 12 minutes.

1 lemon, zested and juiced
1 orange, zested and juiced
1 cup chopped fresh parsley, plus more for serving

2 pounds salmon fillets, cut into 1-inch chunks
2 cups arugula

Steps:

  • Set the oven to broil. Line a half-sheet pan (13-by-18 inches) with foil.
  • Combine the citrus zests, juices, parsley, dill, paprika, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in a bowl. While stirring, add the olive oil until combined; set aside.
  • Add the salmon to a separate bowl. Pour half of the sauce mixture over the salmon, tossing to completely coat it. Thread the salmon onto four 15-inch metal skewers. Sprinkle lightly with salt.
  • Add the salmon skewers to the sheet pan crosswise, allowing the skewers to hang off the edges and keeping the salmon from touching the pan.
  • Broil until the edges of the salmon become golden and it is cooked through (no need to turn), 7 to 8 minutes. Transfer to a bed of arugula.
  • While the salmon rests, spread the Greek yogurt in a shallow bowl. Top with the remaining sauce mixture.
  • Garnish the salmon with more parsley and dill. Serve with the Greek yogurt on the side.

Now that I know how to cure salmon, I will never buy lox-style salmon again. This is great on a bagel or on brown bread with either cream cheese or creme fraiche and the usual garnishes of sliced tomato, red onion, and capers Served on a platter with additional grated citrus atop the cured salmon makes for an elegant presentation for serving a crowd. Please note, the format here does not want to accept singular "fillet" and is stating "fillets." However, a whole side of salmon fillet is used in one big piece, not several fillets. Happy Cooking!

1 cup kosher salt
1 cup sugar

Steps:

  • Wash and blot dry the salmon fillet, removing pin bones. Fillets can have skin either on or off, as the skin can be removed later.
  • Because lots of fluid will be drawn off the fish while curing, using a deep platter or baking dish (large enough to accommodate the salmon fillet) is essential. Line the platter/baking dish horizontally and vertically with two pieces of plastic wrap, long enough for wrapping the salmon and overlapping the edges.
  • Thoroughly combine citrus zests with salt and sugar.
  • Place salmon skin side down atop the plastic wrap in the serving platter.
  • Thoroughly massage the citrus/salt/sugar cure into fleshy side of fish.
  • Bringing sides of plastic up, tightly seal the salmon in the plastic wrap and refrigerate for 2--3 days. (Usually two days is enough) Due to the large amount of fluid drawn out of the fish, it will become very firm. Some recipes advise weighting it down, but I have not done so.
  • Once removed from the plastic wrap, thoroughly rinse cure from salmon and using a sharp knife, remove the skin.
  • Wrap in plastic film again and place in freezer for 12 hours.
  • Remove from freezer, unwrap from plastic film and slice thinly by holding a sharp knife almost parallel to counter, slicing on the diagonal of the fillet, almost shaving.
  • Enjoy in your favorite recipe using lox-style salmon. Toss with pasta in a cream sauce, top a pizza crust and add goat cheese, dill, and scallion. Serve in hearty scooped out cucumber cups with cream cream cheese and dill. Or just enjoy plain with brown bread, butter or mayo, slivered red onion, sliced tomato, and capers.

2 tablespoons olive oil

Steps:

  • In a sealable plastic bag combine well the soy sauce, the garlic, the lemon juice, and the sugar, add the salmon, coating it well, and let it marinate, sealed and chilled, for 30 minutes. Remove the salmon from the bag, discarding the marinade, pat it dry, and press 2 teaspoons of the pepper onto each piece of salmon, coating it thoroughly. In a heavy skillet heat the oil over moderately high heat until it is hot but not smoking and in it sauté the salmon for 2 minutes on each side, or until it just flakes.
  • Transfer the salmon with a slotted spatula to paper towels and let it drain for 30 seconds.

1 quart chicken stock
1/2 quart orange juice
1/2 quart grapefruit juice

  • Reduce heat to a very low simmer.

Steps:

  • Pulse jalapeños, garlic, and a pinch of salt in a food processor to a coarse paste (you can also smash with a mortar and pestle or finely chop jalapeños and garlic on a cutting board, sprinkle with a pinch of salt, and crush with the side of a chef's knife).
  • Transfer paste to a small bowl and add grapefruit zest, honey, and 2 Tbsp. oil; toss to combine. Set sauce aside.
  • Heat 2 Tbsp. oil in a large nonstick skillet over medium-high. Add broccolini and cook, tossing occasionally, until crisp-tender and charred in spots, about 5 minutes. Divide among plates.

1 pound skin-on, boneless salmon fillet, preferably wild king
1/2 teaspoon finely grated lemon zest

Steps:

  • Combine salt, granulated sugar, brown sugar, peppercorns, coriander seeds, fennel seeds, and red pepper flakes in a medium bowl.
