CORNBREAD SAUSAGE CASSEROLE
All your breakfast favorites are baked together between layers of cornbread!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside.
- In a medium bowl, mix corn bread mix, cream style corn and water.
- Cover the bottom of the prepared baking dish with about 1/2 inch of the corn bread mixture. Layer mixture with sausage, followed by onion and jalapeno. Cover with cheese. Top with remaining corn bread mixture, using only as much as will fit in the baking dish.
- Cook 35 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Allow to cool slightly before serving.

- In a skillet, cook the sausage and onion over medium heat until meat is no longer pink and onion is tender; drain. In a bowl, combine cornmeal, flour, baking powder and salt. Add the corn, milk, eggs and oil. Pour half into a greased 10-in. ovenproof iron skillet. Sprinkle with the sausage mixture and cheese. Spread remaining cornmeal mixture on top. Bake at 425° for 45-50 minutes or until a toothpick inserted in the cornbread comes out clean.

GRANDMAS HAMBURGER PIE WITH CORNBREAD TOPPING
My grandma made this for us as kids all the time. She passed away two years ago and I recently came across a lot of her recipes and wanted to share them with the Zaar world. I hope you enjoy this as much as we did. It's a quick and easy one dish meal. I always fix up a salad to go with it. This recipe has lots of possibilities. You could add green beans and potatoes to the mixture as well.Addition: I have realized that I did leave out an ingredient in the topping. I found the recipe and looked and--sure enough, you need milk.

- Brown hamburger, onion and green peppers in pan.
- Drain the grease.
- Stir in corn and tomatoes and add salt and pepper to taste.
- Pour into a 9x13-inch pan.

- Preheat oven to 400 degrees F. Grease a 9-inch pie dish with cooking spray or butter; set aside.
- To make the taco beef, heat the oil in a medium skillet over medium heat, then add the beef and taco seasoning and stir to combine. Cook, stirring to break up the beef, until browned and cooked through, about 6-8 minutes. Remove from heat and set aside.
- To prepare the cheddar sweet corn, in a medium bowl, stir to combine the milk, egg, 1 cup corn kernels, shredded cheddar, shredded monterey jack, breadcrumbs and sliced scallions; set aside.
