Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Beat in molasses, egg and fresh ginger., Combine flours, ground ginger, baking soda, salt, nutmeg and cloves; gradually add to creamed mixture and mix well. Stir in crystallized ginger. Cover and refrigerate until easy to handle, about 1 hour., Preheat oven to 350°. In a small bowl, combine sugar and cinnamon. Shape dough into 1-in. balls; roll in sugar mixture. Place 3 in. apart on parchment-lined baking sheets. , Bake until set, 10-12 minutes. Cool 2 minutes before removing from pans to wire racks. Store in an airtight container.

1 teaspoon vanilla extract
¼ cup finely minced candied ginger

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  • Beat 1 1/2 cups sugar and butter together until light and fluffy. Add egg and vanilla extract and beat until smooth. Beat candied ginger, grated ginger, lemon zest, ground ginger, and cinnamon into butter mixture; stir in molasses.
  • Fold flour and baking soda into ginger-butter mixture until a stiff dough forms. Roll dough into 1-inch balls.
  • Pour remaining 1/2 cup sugar into a shallow bowl. Roll dough balls in the sugar and place balls 2 inches apart on prepared baking sheets.

I received this recipe from the Prescott Journal which actually called them "Nona's World Famous Ginger Snaps". I found some Molasses Krinkles recipes that had the same ingredients but different baking instructions. Since I won't be keeping the paper and do want to try this recipe I'm posting it here. (By the way 4 tablespoons is equal to 1/4 cup)

3/4 cup shortening
1 cup light brown sugar, firmly packed
1 egg
1/4 teaspoon salt
4 tablespoons molasses
2 1/4 cups flour
2 teaspoons baking soda

1 teaspoon ground cinnamon
1 teaspoon ground ginger

Steps:

  • Cream together shortening and brown sugar until well mixed, light, and fluffy.
  • Beat together well the egg, salt, molasses and then mix these into the above.
  • Sift together flour, baking soad, ground cloves, cinnamon and ginger.
  • Add dry ingredients to the wet mixture and combine well.
  • Chill in the refrigerator a few hours or overnight.
  • Preheat oven to 350 degrees.
  • After chilled, shape dough into balls about walnut-sized and place balls on a greased cookie sheet, allowing room for expansion. Flatten balls with a fork.
  • Bake in 350-degree oven 12 to 15 minutes. Do not let get too brown.
  • *Recipe also states: I like these cookies thin and crisp. Experiment and adapt to suit taste, size and desired consistancy. Mine are about 2-1/2" in diameter.

2/3 cup superfine sugar
2 eggs, separated
2/3 cup reduced fat buttermilk
1/2 tablespoon blood orange zest
1/2 tablespoon ruby grapefruit zest
1 tablespoon blood orange juice
1 tablespoon ruby grapefruit juice
1/4 cup all-purpose flour
1/4 teaspoon salt
16 round ginger snap cookies
pinch of salt
1/2 stick unsalted butter, room temperature
2 tablespoons molasses
1 large egg white
1/4 cup lightly packed light brown sugar
2 cups packed light brown sugar
1/2 stick unsalted butter
A double pinch of Kosher salt
1/3 cup heavy cream

Steps:

  • Pre-heat oven to 325 degrees F.
  • Butter and lightly sugar 4 ramekins (approximately 6-ounce size). In a mixer, combine yolks, buttermilk, juice and zest and beat until well combined. Reduce the speed to low and slowly add sifted flour, sugar and salt until just combined. Beat egg whites with a whisk attachment until you get stiff peaks then combine the two mixtures by gently folding them together, a little at a time. Divide evenly amongst ramekins then bake in a water bath - set ramekins in a roasting tray and fill with water halfway up the sides of the ramekins.
  • Bake in the oven for 60 minutes until the top springs back when gently pressed and the cakes have a nice light golden color. Allow to cool slightly, then carefully invert onto a plate.
  • Break up cookies into pieces and place in food processor. Pulse until you have a fine crumb, then add butter, salt, molasses, sugar and egg white. Pulse again until you have a smooth batter, then use an off-set spatula to smear out a thin layer on a cookie sheet (if you are not using a non-stick tray, grease it with butter or line with a silpat). Bake in a preheated 350 degree oven for 10 minutes. Allow to cool slightly before removing from the tray to cool on the bench top. Break up into individual sized pieces before serving.
  • Yield: make aprox 10 pieces
  • Add sugar, and butter to a sauce pot and set over medium heat. Reduce until thick and syrupy - about 7 minutes then remove from heat. Add cream (be careful as it will bubble up) then stir and season with salt.

parchment paper; a 2 1/2-inch round cookie cutter; a piping tip with a 1/4-inch plain round opening (if making cookies into ornaments); pastry bags or several small heavy-duty sealable plastic bags (optional)

Steps:

  • Make dough:
  • Whisk together flour, five-spice powder, baking soda, and salt in a small bowl.
  • Pulse ginger with 1/4 cup sugar in a food processor until finely ground.
  • Add syrup, butter, egg, and remaining 3/4 cup sugar to processor and blend until mixture is thick and creamy, about 3 minutes. Add flour mixture and pulse just until a dough forms. Form dough into a disk and chill, wrapped in plastic wrap, at least 8 hours to allow flavors to develop.
  • Bake and ice cookies:
  • Put oven rack in middle position and preheat oven to 325°F. Line 2 large baking sheets with parchment paper.
  • Quarter dough. Keeping remaining 3 pieces wrapped in plastic wrap and chilled, roll out 1 piece of dough on a lightly floured sheet of wax paper with a lightly floured rolling pin to 3/4 inch thick. (If dough becomes too soft to roll out, chill on wax paper until firm.) Cut out rounds with cutter and transfer to 1 lined baking sheet, arranging cookies about 2 inches apart.
  • Bake cookies until slightly puffed and a shade darker, 10 to 12 minutes. Cool 5 minutes on sheet. If desired, make holes with piping tip near edges to hang cookies, then transfer cookies (still on parchment) to a rack to cool completely. (Cookies will flatten slightly as they cool.)
  • While first batch is baking, roll out and cut another batch, arranging cookies on second lined sheet. Bake in same manner, then gather scraps and chill until dough is firm enough to reroll, 15 to 20 minutes. Make more cookies with scraps (reroll scraps only once) and remaining pieces of dough, cooling sheets and lining them with fresh parchment before using.
  • If using icing and coloring it, transfer small batches of icing to small bowls, 1 for each color, and tint with food coloring. Spoon each color of icing into a separate pastry bag, pressing out excess air. Twist bag firmly just above icing, then decoratively pipe icing onto cookies. Let icing dry completely (about 1 hour, depending on humidity) before serving or storing cookies.

1 1/2 cups granulated sugar
1 large egg
1/4 cup molasses
4 teaspoons ground ginger

Steps:

  • Preheat oven to 350 degrees.
  • On your mixer using the paddle attachment, beat the butter and sugar until light and creamy.
  • Add the egg and the molasses and beat until incorporated.
  • Scrape down the bowl, then add the remaining ingredients and mix on low speed until everything is combined.
  • Do not overmix.
  • Using about 1 tablespoon of dough per cookie, roll into balls and place them 2 inches apart on parchment lined pans.
  • Bake until flat and evenly browned, about 13 minutes.
  • Cool on the pan, the remove to a rack to finish cooling.
  • These cookies are best the day they are baked, but will keep for several days.
  • Note: You can make the dough ahead, roll into logs, freeze, then slice and bake when you need them.

Grandma's Ginger Snaps image

An old family favorite out of my grandmother's recipe book. I haven't made this recipe yet myself, but a reviewer suggests to add more spice :) they used 1.5 times the amount stated. Enjoy!

2 cups flour
1 teaspoon cinnamon
1 1/2 teaspoons ginger
2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup shortening (or a little less)
1 cup white sugar
1 egg
1 cup molasses

Steps:

  • Cream shortening, sugar together then egg.
  • Add molasses, stir.
  • Sift in dry ingredients (Double Spices if you like).
  • Roll into balls.
  • Drop in sugar.
  • Bake in 350 F oven for 10-12 minutes.
  • (no servings specified so I guessed).
