- For the pound cake: Preheat the oven to 350 degrees F. Spray a baking pan with cooking spray. Arrange the pound cake in a single layer on the prepared pan. Brush with the melted butter and drizzle with honey. Bake for 7 to 8 minutes or until lightly golden. Set aside to cool for 10 minutes.
- For the citrus cream: In a medium bowl, using an electric hand mixer, beat all the ingredients together until stiff peaks form, about 1 minute.
- To assemble: Spoon the citrus-cream filling on the cooled pound cake slices. Top with orange segments and serve.

- Heat the cream in a small saucepan over medium-high heat and bring to a boil. Lower the heat and whisk in the sour cream. Heat gently just until warm; do not allow to boil. Remove from the heat and whisk in the lemon juice, salt, and pepper to taste.

- Add the oil in a heated small sauce pan. Add the shallots and sauté for one minute.
- Add the Orange juice and white wine and reduce by ¾.
- Reduce the heat to low and add the butter cubes one at a time while whisking the sauce to evenly incorporate the butter; do not allow the sauce to boil as it will break.
- Add the sugar, salt and pepper.
- Stir to combine then strain the sauce through fine mesh strainer.

- Combine orange and lemon juices in a bowl. Whisk together egg yolks and 2 tablespoons water in a heatproof bowl set over a pot of simmering water until mixture foams and begins to thicken, about 1 minute. Add half of citrus juices and cook, whisking constantly, until thickened slightly, 1 to 2 minutes more.
- Puree yolk mixture, remaining citrus juices, lemon zest, vinegar, 1/4 teaspoon salt, and cayenne in a blender until mixture thickens. With blender on low speed, add butter in a slow, steady stream until combined. Serve warm. Sauce can be stored in refrigerator in an airtight container up to 1 day. Gently warm before serving.

PENNE WITH CITRUS CREAM SAUCE

- In a 3-quart saucepan bring 2 quarts salted water to a boil for pasta.
- With a sharp knife cut peel and pith from grapefruit and oranges. Working over a bowl cut grapefruit and orange sections free from membranes, transferring sections to a plate, and halve them. Squeeze excess juice from membranes into juice in bowl and reserve 1/4 cup juice.
- In a 12-inch skillet combine reserved juice, and cream and heat sauce over moderate heat until butter is just melted. Keep cream sauce warm over very low heat.
- Add pasta to boiling water and cook until al dente. Drain pasta well in a colander. Add pasta, fruit, Parmesan, and parsley to sauce and toss with salt to taste until most of sauce is absorbed.

CREAMY CITRUS SAUCE PORK CHOPS
Boneless center cut pork chops cooking in a citrusy sauce. Suprizingly easy and done in under 45 minutes! I like this recipe because it is quick and the kids gobble it up. The sauce is really good and can be poured over rice as a side dish too. I found the base of this recipe 15 years ago when I first started to cook. I have added to it and made it my own. Makes great leftovers.

- Chop onion and set aside.
- Heat oil in large high sided pan over medium heat.
- Salt and pepper each chop, put in hot oil.
- Cook about 3 minutes on each side or until nicely browned.
- To the pan add the orange juice, zest, onion, and white wine.
- Reduce heat to low (simmer) cover and cook for 15 minutes.
- After 15 minutes remove pork chops from pan. Put them on a serving platter and cover with foil to keep warm.
- Add the cream of mushroom soup to the pan and whisk constantly over Medium heat until the sauce is thickened.
- Pour over chops.
