My family loves this recipe because it's so tasty, fast and filling. I love the easy one-dish cleanup. Sometimes I add a can of drained corn for a complete meal. -Jane Porras, Plano, Texas

Number Of Ingredients 12

1-1/2 cups uncooked instant rice
1 pound ground beef
1 medium onion, chopped
1 garlic clove, minced
1 can (15 ounces) Ranch Style beans (pinto beans in seasoned tomato sauce)
1 cup beef broth
1 cup tomato sauce
2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1/2 cup shredded pepper jack cheese

Steps:

  • Cook rice according to package directions., Meanwhile, in a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the rice, beans, broth, tomato sauce, chili powder, salt, cumin and pepper; heat through. Sprinkle with cheese. Cover and cook for 1-2 minutes or until cheese is melted.

1 lb. extra-lean ground beef
1 can (14-1/2 oz.) fat-free reduced-sodium beef broth
1 can (10 oz.) diced tomatoes and green chiles, undrained
1 each large green and yellow pepper, cut lengthwise into thin strips, then crosswise in half
2 cups instant white rice, uncooked
1-1/2 cups KRAFT Mozzarella & Cheddar Cheese Deliciously Paired for Mac 'n Cheese

Steps:

  • Brown meat in large ovenproof skillet. Stir in broth and tomatoes; bring to boil.
  • Add peppers and rice; stir. Cover; simmer on low heat 5 min. or until rice is tender.
  • Heat broiler. Top rice mixture with cheese; broil, 6 inches from heat, 2 to 3 min. or until melted.

1 (14 1/2 ounce) can beef broth

Steps:

  • In skillet, cook beef, onions and peppers until beef is browned and vegetables are tender. Drain.
  • Stir in broth, tomato sauce, rice, chili powder and garlic powder. Heat to boiling. Cover; cook over low heat for 20 minutes or until rice is tender and liquid is absorbed; stir occasionally.
  • Serve with cheese and sour cream, if desired.

1 cup corn chips
