1 carrot, finely grated (squeeze out all excess moisture with hands)
1 cup chopped apple
1/4-1/2 teaspoon celery seed
black pepper (to taste)
1 tablespoon sugar (or Splenda sugar substitute)
1/4 teaspoon salt
3 tablespoons cider vinegar
1 tablespoon vegetable oil

Steps:

  • In a medium bowl combine all slaw ingredients.
  • In a small bowl whisk together all dressing ingredients until well blended; pour over the cabbage mixture; toss well to combine.
  • Refrigerate for 2 hours or more before serving.

3/4 cup fat-free mayonnaise
3 teaspoons Sweet 'n Low
1 dash cayenne pepper

CITRUS ASIAN COLESLAW

Number Of Ingredients 11

16 oz bag coleslaw mix
1/4 cup chopped cilantro (+ more for garnish)
2 tbsp chopped green onion
2 oranges (sliced in small wedges)
6 tbsp rice wine vinegar
1 tbsp toasted sesame oil
2 tbsp 100% pure maple syrup
1/2 tsp kosher salt
1/8 tsp fresh ground black pepper
1/4 cup sunflower seeds (raw)
1/4 cup slivered almonds (raw)

Steps:

  • In a large mixing bowl with lid, add in coleslaw mix, cilantro, green onion and orange slices.
  • In a mason jar or container with an airtight lid combine vinegar, oil, maple syrup, salt, and pepper. Secure lid and shake up well. Pour over coleslaw and toss with tongs until all the cabbage is well coated. Cover slaw with a lid and store in refrigerator for at least 6 hours to allow flavors to combine.
  • Before serving, in a medium non-stick pan, toast sunflower seeds and almonds on medium heat until lightly brown and fragrant, about 3-4 minutes (shake pan every ~20 seconds to prevent burning). Garnish coleslaw with seeds, almonds and addition chopped cilantro.

1 cup jicama shredded
1/3 cup scallions chopped
3 tbsp mint, fresh, minced (optional)
2 med jalapeno - seeded and minced
2 tbsp orange marmalade or other sweet/tart (apricot)
4 tsp rice wine vinegar
2 tsp toasted sesame oil
1 tsp soy sauce
1/2 tsp table sauce
2 tbst sesame seeds toasted

Steps:

  • In large bowl combine all the veggies, mint and jalapenos. In small bowl combine marmalade, soy, vinegar, sesame oil and salt. Drizzle over slaw and toss well to combine. serve sprinkle with sesame seeds.

2 tablespoons reduced sodium soy sauce
2 tablespoons reduced-fat creamy peanut butter

1 tablespoon brown sugar, packed
1/2 head savoy cabbage, thinly sliced (about 5 cups)
1 red bell pepper, cut into thin strips
1 cup carrot (packaged matchstick-cut)
1/4 cup fresh cilantro, chopped
2 scallions, thinly sliced

Steps:

  • To make the dressing, combine the vinegar, soy sauce, peanut butter, ginger and brown sugar in a blender and puree. Toss together the remaining ingredients in a serving bowl. Drizzle the dressing and toss to coat evenly.

Another recipe from my Weight Watchers Mix & Match recipe book. This one is very novel, but give it a try - it's pretty darn nice for something fat free! This is core or 1.5ww points per serving.

14 ounces chickpeas (from a can, drained & rinsed)
3 eggs
1 ounce Splenda sugar substitute
1/2 teaspoon baking powder
1 orange, juice and zest of, grated
1 lemon, juice and zest of, 1 tbsp of juice
1/2 teaspoon mixed spice

Steps:

  • Pre-heat oven to Gas Mark 4 / 180c and line a loaf tin with grase-proof paper.
  • Blend the chickpeas in a food processor until smooth.
  • Add the eggs, splenda, baking powder and zests of the orange and lemon. Mix again.
  • Pour the mixture into the loaf tin and bake for thirty minutes until the cake is golden and a knife comes out clean.
  • Remove the cake from the oven and use a knife or skewer to make several holes in the top. Spoon a tablespoon of orange juice over the cake and leave to soak for 10 minutes.
  • Remove the cake from the tin and leave to cool on a wire rack.
  • Mix the remaining orange juice with the lemon juice.
  • Cut the cake into 12 slices and serve 2 slices per person, covered in more of the fruit juice and dusted with mixed spice and some extra Splenda.

1/4 cup apple cider vinegar

Steps:

  • In a large bowl, combine cabbage, noodles & almonds.
