CIN'S VERSION OF PEPPERONI-CHEESE LOAF



Cin's Version of Pepperoni-Cheese Loaf image

This makes a huge long roll. Makes the whole house smell wonderful while baking...yummmmO. Next time I think I'll add some capers inside, I love the taste of capers. Would also be good to add chopped sauteed bell peppers, onions...etc. Possibilities are endless...make it with your own favorite ingredients. CinStraw

1 pound(s) loaf frozen white bread, thawed and at room temperature (your favorite dough, could even use honey-wheat)
- liquid garlic (i keep in a spritzer)
8 ounce(s) of sliced provolone cheese (approximate, you need enough to cover the dough)
8 ounce(s) of sliced pepperoni (approximately, enough to cover whole thing)
4 ounce(s) of shredded cheddar cheese (approximate, can use more)
4 ounce(s) finely-shredded 4-mexican cheese blend
- chives (up to your taste as to how many you use)
- for top:
1 - egg white (i use liquid egg white)
- garlic powder, white pepper and dill weed
- 3-cheese mix of parmesan, romano & asia cheese (enough to sprinkle on the top)
- optional dippers: pizza sauce, spaghetti sauce, alfredo sauce, cheese dip...etc.

Steps:

  • Preheat oven to 350dF.
  • Roll out thawed dough on a 13 x 11 inch oiled pan (cookie sheet or a jelly roll pan will do) and let it raise for about 20 minutes. After the bread was spread out into the pan (and risen for the 20min's) I sprayed liquid garlic over the dough, I did not use any sauce in-on this one.
  • Arrange Provolone cheese over entire surface of dough (after you spritz it with the garlic oil).
  • Next, start layering, first the pepperoni, then some of the shredded cheddar, then the 4-Mexican Cheese blend and end with the rest of the shredded Cheddar on top. (this time I used the provolone cheese, cheddar cheese and the 4-cheese Mexican mix cheeses...inside w he pepperoni).
  • Sprinkled chives on top of this before ''rolling-up''.
  • Roll the whole thing up jelly-roll style and pinch edges and ends to seal.
  • Brush the entire top with the egg white and sprinkled shredded 3-cheese mix of parmesan, romano & asiago over the top of the egg wash.
  • Then lightly sprinkle garlic powder, sea salt and dill weed on top.
  • Just before placing into over make slits slanted across top of loaf (to let out steam while baking).
  • Bake at 350 dF for 30 minutes (if dough is getting too brown, loosely cover wfoil).
  • Cool on cooling rack, then slice. Serve warm with a sauce for dipping (it doesn't really need to be dipped but if you like it that way...by all means do so).
  • Enjoy!!!

Instead of ordering pizza for your next party, wow your guests with these crispy, caramelized, pizza-flavored cheese chips! Since everybody agrees that the best parts of a pizza are those spots where the cheese sort of drips off and caramelizes onto the pan, getting crispy, crusty, and incredibly delicious, I took those cheesy drips and made chips! Serve as-is or top with a bit of baby arugula and fold in half to eat like tacos.

4 ounces low-moisture mozzarella cheese
4 ounces provolone cheese
2 ounces Parmigiano-Reggiano cheese
½ cup prepared pizza sauce
30 slices pepperoni

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a 13x18-inch, half-sheet pan with parchment paper.
  • Grate provolone and mozzarella cheeses with the larger side of a box grater into a large bowl. Use the smaller side and grate in Parmigiano-Reggiano cheese. Toss with your hands to combine.
  • Scoop tablespoonfuls of the cheese mixture into 12 circular piles on the prepared baking sheet, making sure you're getting all three cheeses in each scoop. Top each circle with about ¾ teaspoon pizza sauce, then place a slice of pepperoni on top.
  • Bake in the center of the preheated oven until melted and sizzling, 12 to 15 minutes.
  • Remove parchment paper and chips to a wire rack to cool. Line the baking sheet with a fresh sheet of parchment paper.
  • Repeat Steps 3 to 5 to bake remaining 18 chips.
  • Let chips cool to room temperature, 15 to 20 minutes. Remove from the parchment paper and serve.

This plain pie tastes anything but basic. Start with my homemade pizza dough and marinara sauce recipes, so you can make this plus many more pizzas. I put the cheese down first to protect the dough from getting soggy from the sauce.

All-purpose flour, for the surface
One 6-ounce ball pizza dough, at room temperature
3 to 4 ounces low-moisture mozzarella, sliced
1 tablespoon Sicilian (or regular dried) oregano (see Cook's Note)
1/2 cup marinara sauce, at room temperature
Olive oil, for topping, optional
Freshly grated Parmesan, for topping, optional

Steps:

  • Place a pizza stone in the center rack of the oven. Preheat the oven to 475 degrees F for 1 to 2 hours before you're ready to bake the pizza to get the stone nice and hot.
  • Generously sprinkle a flat work surface with flour. Use a rolling pin to stretch the dough into an 11-inch circle. Transfer the dough to a lightly floured pizza peel or unrimmed baking sheet so it can slide right onto the pizza stone in the oven. (I use the bottom of a baking sheet.)
  • Top with the mozzarella, sprinkle with the oregano, then gently spread the marinara sauce on top, leaving about a 1/2-inch border around the edges for the crust (my favorite part!).
  • Turn off the oven and turn on the broiler. Use the peel or baking sheet to slide the pizza onto the pizza stone. The heat from the stone will cook the bottom of the pizza and the boiler will char and cook the top, mimicking a Neapolitan pizza oven. Bake until the cheese is melted and the crust is evenly crisped, 5 to 6 minutes. Drizzle with olive oil and sprinkle with Parmesan if desired. Slice the hot pizza and serve immediately.

This elevated recipe takes everything you know and love about garlic bread and pizza, and combines it into a grilled cheese sandwich unlike any other. We slather the outside of the bread with an assertive garlic Parmesan butter to create a delicious golden brown, crispy exterior. Layers of melted mozzarella and pepperoni make up the inside.

1 stick softened butter
1/2 cup grated Parmesan cheese
1 clove garlic, grated
1 tablespoon minced fresh parsley
Kosher salt and freshly ground pepper
8 slices white bread
12 slices low-moisture mozzarella cheese
24 slices pepperoni

Steps:

  • Mash the butter with the Parmesan, garlic, parsley and a pinch each of salt and pepper.
  • On a work surface, lay out 4 slices bread. Top each piece of bread with 2 slices mozzarella, 6 slices pepperoni, 1 more slice mozzarella and another slice of bread. Spread some of the herb butter on each sandwich.
  • In a large nonstick skillet, cook the sandwiches in batches as needed over medium-low heat until browned and crisp, 3 to 4 minutes per side. Season with salt.

BASIC PEPPERONI PIZZA AND FOUR CHEESE PIZZA



Basic Pepperoni Pizza and Four Cheese Pizza image

1 teaspoon active dry yeast
4 cups all-purpose flour
1 teaspoon kosher salt
1/3 cup olive oil, plus more for oiling bowl
1/2 to 3/4 cup store-bought or homemade Pizza Sauce, recipe follows
12 ounces fresh mozzarella, sliced thin
1 cup pepperoni pieces
2 tablespoons olive oil
Salt and pepper
One 3.5-ounce jar pesto
12 ounces fresh mozzarella, sliced thin
4 ounces fontina, grated
4 ounces goat cheese, crumbled
1/4 cup grated Pecorino Romano
1/4 cup olive oil
5 cloves garlic, finely minced
1 pint red grape tomatoes, halved lengthwise
1 pint yellow grape tomatoes, halved lengthwise
1 tablespoon balsamic vinegar
16 fresh basil leaves, chiffonade, plus more if needed
Salt and pepper
1 to 2 tablespoons olive oil
3 cloves garlic, minced
1 medium onion, chopped finely
1/2 cup chicken broth
Three 15-ounce cans crushed tomatoes

8 to 10 fresh basil leaves, chopped

Steps:

  • For the pizza dough: Sprinkle the active dry yeast over 1 1/2 cups of warm--not lukewarm--water.
  • In a mixer with a paddle attachment, combine the flour and salt. With the mixer running on low speed, drizzle in the olive oil and mix until combined. Pour in the yeast mixture and mix until combined.
  • Coat a separate mixing bowl with a light drizzle of olive oil and tip the dough in. Form a ball and toss to coat the dough ball in the olive oil. Cover tightly with plastic wrap and allow to rise for at least 1 hour, or up to 3 or 4 days refrigerated.
  • Preheat the oven to 500 degrees F.
  • To prepare the dough for the pizza assembly: Divide the dough into two equal parts. Roll out one part as thinly as possible and place on a baking sheet. Repeat with the second piece of dough.
  • For the basic pepperoni pizza: Spread the sauce over the pizza base. Top with the sliced mozzarella and pepperoni.
  • For the four cheese pizza: Drizzle on the olive oil and sprinkle on some salt and pepper. Pour the jar of pesto onto the dough and spread evenly. Add the mozzarella, fontina, goat cheese and Pecorino Romano.
  • Bake both pizzas until the crusts are golden and the cheese is bubbly, 12 to 15 minutes.
  • For the tomato basil salad: While the pizzas are baking, heat the olive oil over medium-high heat in a small skillet. Add the garlic and stir, lightly frying for about a minute and removing it from the heat before the garlic gets too brown (it can be golden). Pour it into a mixing bowl and allow to cool slightly. Add the tomatoes, balsamic, basil and some salt and pepper to the bowl. Toss to combine, and then taste and add more basil if needed, and more salt if needed. Set aside.
  • Top the four cheese pizza with the tomato basil salad. Cut the pizzas into slices and serve.
  • Add a tablespoon or so of olive oil into a hot pan over medium-high heat. Throw in the garlic and chopped onions and give them a stir. Cook until the onions are soft, 4 to 5 minutes. Add the chicken broth, whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Add the dried oregano and basil. Reduce the heat to low and simmer for 30 minutes.

  • place tomato slices over the cheeses, spaced about 1 inch apart - do not overlap.
  • top the tomatoes with the pieces of buffalo mozzarella followed by the shaved romano.
  • transfer pizza to preheated oven, bake till crust is crisp and golden and center is bubbly, about 15 minutes.
  • remove pizza from oven, sprinkle with basil.
  • slice and serve.

8 ounces grated swiss cheese (I grate my own and domestic works fine)
1 (6 ounce) package hormel pepperoni slices, chopped
1/2 small onion, finely minced
mayonnaise, enough to bind (I have never measured this - I add mayo to the mixture until it holds together, it's hard to mess th)

Steps:

  • Preheat oven to 375 degrees.
  • Line baking sheet with foil.
  • Mix all ingredients (except for bread) together.
