Our simple baked Brazilian pineapple recipe combines juicy fresh pineapple, cinnamon and sugar and then cooks it in the oven or on the grill until caramelized into a delicious dessert.

1 large pineapple (peeled, cored and cut into spears)
1 cup brown sugar (packed)
1-3 tsp cinnamon, ground (more or less to taste)
2-4 tblsp butter (COLD, cubed)
cooking spray
disposable or metal pan to hold your pineapple (if desired for best results)
extra butter (or cooking spray to grease pan)
vegetable oil ( for your grill)

  • Decide how you want to cut your pineapple; sliced, spears or chunks.

1/2 of a pineapple, cut into spears
1/ c brown sugar
1 tsp cinnamon

Steps:

  • 1. Combine brown sugar and cinnamon in a large ziplock bag. Add the pineapple spears, close the bag tightly, and shake it so that the cinnamon and brown sugar coats the spears. Place the pineapple in the refrigerator for at least 30 minutes.
  • 2. Pre-heat your grill to medium heat, around 350-400 degrees.
  • 3. Place the pineapple spears on the grill and turn them every few minutes.
  • 4. Grill the pineapple until it is cooked to your liking.
  • 5. Enjoy!:)

2 teaspoons ground cinnamon
1 pineapple - peeled, cored, and cut into 6 wedges

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk brown sugar and cinnamon together in a bowl. Pour sugar mixture into a large resealable plastic bag. Place pineapple wedges in bag and shake to coat each wedge.
  • Grill pineapple wedges on the preheated grill until heated through, 3 to 5 minutes per side.

1 (1 1/2 kg) fresh pineapple (about 1.5 kg or 3 lbs)
330 g superfine sugar (about 1 1/2 cups)
2 teaspoons finely grated lime rind
2 teaspoons ground cinnamon
125 g unsalted butter, melted

Steps:

  • Lightly oil a barbecue plate and heat on high.
  • Peel pineapple and slice into even lengths. Combine sugar, lime rind and cinnamon in a shallow dish. Pour melted butter into a seprarate shallow dish. Dip a slice of pineapple into melted butter, then coat with sugar mixture, shaking off excess.
  • Cook pineapple on barbecue for 2-3 minutes each side, until golden brown.

zest and juice 1 lime
2 tbsp clear honey
2 pinches ground cinnamon
few gratings whole nutmeg
2 tsp icing sugar , sifted
200g very low-fat fromage frais
2 tsp butter
1 fresh pineapple , cut into 8 long wedges, skin and core removed

Steps:

  • Mix the lime juice and half the lime zest with 1 tbsp honey, a pinch of cinnamon and nutmeg. Set this sauce aside. Stir the icing sugar and a pinch of cinnamon into the fromage frais.
  • Heat the butter and remaining honey in a non-stick frying pan until melted. Add the pineapple and cook over a high heat for 8 mins, turning regularly until caramelised. Pour in the spiced lime sauce and bubble for a few secs, tossing the pineapple to glaze in the sauce.
  • Serve immediately, sprinkled with the remaining lime zest and accompanied by a dollop of the cinnamon fromage frais

200g unsalted butter , softened
125g soft brown sugar
1 tsp ground cinnamon
1 ½ tsp vanilla bean paste
1 pineapple , peeled, cut into quarters, core removed, then cut into 2cm slices
140g golden caster sugar
2 large eggs , plus 1 egg white, beaten
1 ½ tsp baking powder
200g plain flour
75ml whole milk
crème fraîche , to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put 4 tbsp of the butter into a 22cm springform cake tin and place in the oven to melt. Remove and stir in the brown sugar, cinnamon and ½ tsp of the vanilla paste. Arrange the pineapple in the buttery sugar mixture, tossing a little to coat. Try to fill all the gaps, so you can't see much of the base.
  • In a mixing bowl, beat the caster sugar and remaining butter using an electric hand whisk for 2-3 mins until light and fluffy. Add the eggs and egg white, one at a time, and the remaining vanilla. Add the baking powder and a pinch of salt, then the flour and milk, beating until they are both incorporated. Beat for 1 min more until smooth.
  • Spoon the batter into the pan over the pineapple. Bake for 1 hr, covering with foil if it starts to brown. Leave to rest for 5 mins, then turn out onto a platter and serve warm as a pudding, with crème fraîche, if you like. Alternatively, leave to cool completely in the tin and serve as a cake.
