CREAMY ARTICHOKE PASTA



Creamy Artichoke Pasta image

Make a luscious pasta dish with no cheese, cream or butter? Absolutely! The canned artichoke hearts get blended into a creamy sauce that's mixed with roasted red peppers, olives, capers and fresh herbs for a colorful dinner. This is an out-of-the-box, unexpected vegan pasta dish that will delight your family and be easy on the budget.

Kosher salt and freshly ground black pepper
1 pound dried fettuccine (see Cook's Note)
Two 14-ounce cans artichoke hearts, rinsed and drained
2 tablespoons extra-virgin olive oil, plus more as needed
1 cup chopped roasted red peppers
1/2 cup kalamata olives, halved
3 tablespoons capers
1/2 teaspoon crushed red pepper flakes
4 cloves garlic, thinly sliced
1/4 cup chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions for al dente.
  • Meanwhile, blend the drained artichoke hearts, 1/4 cup water, 1/4 teaspoon salt and 1/4 teaspoon pepper in a high-powered blender until completely smooth. Set aside.
  • Heat the olive oil in a large high-sided skillet or braiser over medium heat. Add the roasted red peppers, olives, capers and red pepper flakes and sauté until warmed through, about 2 minutes. Stir in the garlic and a drizzle of oil if needed. Continue to cook, stirring frequently, until the garlic is slightly softened but not brown, about 1 minute. Stir in the blended artichoke hearts, then reduce the heat to low.
  • When the pasta is ready, reserve 1 cup of the pasta water, then drain the pasta and add it directly to the skillet with the artichoke sauce. Add about 1/2 cup of the reserved pasta water and toss together until the sauce and water become a cohesive creamy mixture, add more pasta water as needed. Turn off the heat. Add the basil and parsley, toss to combine and serve.

2 (9-ounce) packages frozen artichoke hearts (not thawed)
1/4 cup extra-virgin olive oil
1/2 stick (1/4 cup) unsalted butter
1 large onion, chopped (2 cups)
1 teaspoon salt
1/2 teaspoon black pepper
1/8 teaspoon dried hot red-pepper flakes
1 teaspoon finely grated fresh lemon zest
1 to 2 tablespoons fresh lemon juice
3/4 lb dried egg fettuccine
1/2 cup chopped fresh flat-leaf parsley
1/2 oz finely grated Parmigiano-Reggiano (1/4 cup) plus additional for serving

Steps:

  • Cook artichoke hearts in a 6- to 8-quart pot of boiling salted water until just tender, about 2 minutes. Transfer to a bowl with a slotted spoon. Return water to a boil.
  • Meanwhile, heat oil and butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then sauté onion, salt, pepper, red-pepper flakes, and zest, stirring occasionally, until onion is softened, about 8 minutes. Add artichokes and sauté, stirring occasionally, 3 minutes. Stir in lemon juice (to taste), then remove from heat and transfer mixture to a large heatproof bowl.
  • While artichokes are sautéing, cook pasta in boiling water until al dente. Reserve 1 cup pasta-cooking water, then drain pasta in a colander and add to artichoke mixture along with 1/2 cup reserved water. Add parsley and cheese and toss to combine. Season pasta with salt and thin with additional reserved cooking water if desired. Serve with additional cheese on the side.

Fettuccine con Carciofi: Fettuccine with Artichokes image

4 artichokes
1 lemon, halved
1 pound/450 g fettuccine pasta
4 tablespoons/60 ml extra-virgin olive oil
2 cloves garlic, chopped
2 dried chile peppers, crushed, optional
20 cherry tomatoes, halved
I cup/240 ml white wine
1 (25-ounce/750 ml) jar tomato puree
6 fresh mint leaves, chopped
Salt
2 tablespoons/30 ml unsalted butter
Generous sprinkle freshly grated Parmigiano cheese

Steps:

  • Clean the artichokes by removing all the tough outer leaves until you get to a pale yellow center. Peel the outer tough skin of the artichoke stems with a paring knife. Trim 1/3 off the tops of each artichoke and rub with lemon. Squeeze the lemon juice into a bowl of cool water and place all the cleaned artichokes in to prevent them from browning.
  • Place the fettuccine in salted boiling water. Stir to prevent the strands from sticking together.
  • Add the olive oil, garlic and chile, if using, to a saucepan and saute until golden. Remove the artichokes from the water and roughly chop. Add the chopped artichokes, cherry tomatoes, and wine to the pan. Once the wine has reduced, add the tomato puree, mint, and salt, to taste. Allow to simmer for approximately 15 minutes.
  • About 2 minutes before the fettuccine is at the 'al dente' stage, drain the pasta, reserving approximately 1 cup of pasta water. Add the fettuccine and pasta water to the pan. Then add the butter and Parmigiano cheese and cook all together for an additional 30 seconds. Serve immediately.

1 ounce dried porcini mushrooms
1 cup warm water
1 pound artichoke hearts
1/4 cup olive oil
1 small onion, chopped
1 clove garlic, very finely chopped
2 tablespoons chopped fresh flat-leaf parsley
1 cup peeled, seeded, and chopped fresh tomato or drained and chopped canned imported Italian tomatoes
salt and freshly ground black pepper
1 pound dried fettuccini pasta
Extra-virgin olive oil

Steps:

  • 1 Put the mushrooms in the water and let soak 30 minutes. Lift the mushrooms from the water, reserving the liquid. Rinse the mushrooms under cold running water to remove any grit, paying special attention to the ends of the stems where soil collects. Chop the mushrooms coarsely. Strain the mushroom liquid into a bowl. Set aside. 2 With a large knife, trim off the top 1 inch of the artichokes. Rinse them well under cold water. Bend back and snap off the small leaves around the base. With scissors, trim the pointed tops off the remaining leaves. Peel off the tough outer skin of the stems and around the base. Cut the artichokes in half. Use a small knife to scrape out the fuzzy leaves in the center. Thinly slice the artichokes. 3 Pour the oil into a skillet large enough to hold the cooked pasta. Add the onion, mushrooms, parsley, and garlic and cook over medium heat for 10 minutes. Stir in the artichokes, tomatoes, and salt and pepper to taste. Cook 10 minutes. Add the mushroom liquid and cook 10 minutes more or until the artichokes are tender when tested with a knife. 4 Bring 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt, then the pasta. Stir well. Cook over high heat, stirring frequently, until the pasta is al dente, tender yet still firm to the bite. Set aside some of the cooking water. Drain the pasta. 5 Toss the pasta with the sauce and a little of the cooking water if needed. Drizzle with extra-virgin olive oil and serve immediately. From "1,000 Italian Recipes." 6 ounces rotini pasta
3 tablespoons olive oil
8 ounces mushrooms, sliced
2 garlic cloves, thinly sliced
1 teaspoon dried oregano
1 (9 ounce) package frozen artichoke hearts, thawed, thinly sliced
1 1/2 cups chicken stock or 1 1/2 cups canned low sodium chicken broth
2 teaspoons fresh lemon juice
1 teaspoon grated lemon peel
1/4 teaspoon dry crushed red pepper
5 tablespoons butter, room temp
1 teaspoon chopped parsley
1 cup asiago cheese, grated
salt and pepper

Steps:

  • Cook pasta in pot of salted boiling water until al dente.
  • Drain. Toss pasts with 1 Tbs oil.
  • Heat 2 Tbs oil in heavy large skillet over medium-high heat.
  • Add mushrooms, garlic and oregano; saute until golden, about 4 minutes.
  • Add artichokes; saute 3 minutes.
  • Add stock, lemon juice and peel and crushed red pepper and cook until slightly thickened, about 5 minutes.
  • Add butter; whisk until just melted.
  • Add pasta and parsley; toss until pasta is coated and heated through.
  • Add 3/4 cup cheese and toss to coat.
  • Season with Salt and Pepper.
  • Transfer to a large bowl to serve and top with remaining cheese.

FETTUCCINE WITH PORCINI



Fettuccine With Porcini image

2 ounces dried porcini
5 tablespoons extra virgin olive oil
1 1/2 ounces pancetta, finely diced
2 cloves garlic, sliced
Salt and freshly ground black pepper
1 pound fresh fettuccine
4 eggs at room temperature, beaten
1 1/2 tablespoons minced flat-leaf parsley leaves
Grated Parmigiano-Reggiano for serving

Steps:

  • Place porcini in a bowl, cover with about 1 cup warm water, and soak 30 minutes. Drain well, straining liquid into large measuring cup. Place porcini on several thicknesses of paper towel, cover with paper towel and press to remove moisture. Cut very large pieces in half.
  • Meanwhile, heat 3 tablespoons oil in a skillet large enough to hold pasta for 4 servings. Add pancetta and sauté until barely beginning to brown. Add garlic and sauté a minute or so.
  • Add porcini and cook until heated through and beginning to brown. Remove from heat. Season with salt and pepper. Warm 4 plates.
  • Bring a pot of salted water to a boil for pasta. Cook pasta about 3 minutes and drain well. Transfer to skillet, add remaining oil, and cook over low heat to incorporate and heat ingredients. Gradually add 3/4 cup porcini liquid. When some has been absorbed, remove pan from heat. Add eggs and fold together quickly, to warm eggs without scrambling them. Add a little more liquid if needed. Immediately divide among plates and garnish with parsley. Serve at once with cheese alongside.

To Die For Fettuccine Alfredo image

This is a recipe that I created by modifying my mother's recipe. My boyfriend is a fettuccine Alfredo connoisseur and he scrapes the pan every time! I get nothing but rave reviews when I make this dish. I must warn you, this recipe is not for the health conscious. Enjoy!

24 ounces dry fettuccini pasta
1 cup butter
¾ pint heavy cream
salt and pepper to taste
1 dash garlic salt
¾ cup grated Romano cheese
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
  • Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

8 ounces fettuccine
1/2 cup coarsely chopped walnuts
1 6-ounce jar marinated quartered artichoke hearts, drained, marinade reserved
1/2 cup dry white wine
1/4 cup regular or reduced-fat sour cream
1/2 cup chopped drained oil-packed sun-dried tomatoes (about 2 ounces)
1/3 cup plus 2 tablespoons finely chopped chives or green onion tops

Steps:

  • Cook fettuccine in medium pot of boiling water until just tender but still firm to bite, stirring occasionally. Drain, reserving 1/4 cup cooking liquid.
  • Meanwhile, stir walnuts in heavy large skillet over medium-high heat until lightly toasted, about 2 minutes. Transfer nuts to small plate. Pour artichoke marinade and wine into same skillet. Boil until reduced to 3/4 cup, about 2 minutes. Whisk in sour cream and remove from heat (do not boil). Mix in artichokes, tomatoes and 1/3 cup chives.
  • Add pasta to sauce. Toss to blend well, adding reserved pasta cooking liquid by tablespoonfuls if pasta is dry. Season to taste with salt and pepper. Divide pasta between 2 plates. Sprinkle with walnuts and remaining 2 tablespoons chives and serve.

  • Bring a large pot of generously salted water to a boil over high. Drain artichokes over a small bowl; reserve 1 tablespoon drained marinade. Roughly chop artichokes; set aside. Cook fettuccine in boiling water, stirring occasionally, until just tender and floating, 1 to 2 minutes (fettuccine rolled and cut by hand will take 2 to 3 minutes). Ladle 1½ cups cooking water into a heatproof measuring cup or bowl. Drain fettuccine; set aside.
  • Melt 4 tablespoons butter in a large nonstick skillet over medium-high until sizzling. Stir in chopped artichokes and reserved 1 tablespoon marinade. Spread artichokes in an even layer and cook, undisturbed, until lightly golden in spots, 6 to 8 minutes. Stir in lemon zest, pepper, and 1¼ cups reserved cooking water. Bring to a simmer.
  • Add cooked fettuccine and remaining 2 tablespoons butter; toss with tongs to loosen fettuccine. Reduce heat to low. Add ½ cup cheese, stirring and tossing until melted, about 30 seconds. Add salt and remaining ½ cup cheese; cook, stirring and tossing, until sauce is silky and coats fettuccine, 1 to 2 minutes. Add remaining ¼ cup cooking water if needed to loosen sauce. Remove from heat; sprinkle with parsley. Serve immediately.
