EASY CHORIZO CASSOULET
This easy chorizo cassoulet slow bakes with white beans and canned tomatoes for a seriously hearty meal, worthy of all the hype! Sprinkle with homemade breadcrumbs for an extra crunchy topping!

- Preheat oven to 325F. Heat 1 Tbsp oil over medium heat, then add pancetta and cook until crispy on all sides, about 5 minutes. Use a slotted spoon to transfer pancetta to a paper-towel lined plate or bowl.
- Increase heat to medium-high, then add onion and shallot. Cook 2 minutes, until translucent, then add garlic. Cook 1 minute more.
- Add anchovy paste, then use a wooden spoon to break up and dissolve. Next, add tomatoes, beans, cooked pancetta, thyme, and bay leaf, then toss gently to combine. Season with 1 tsp kosher salt and ¼ tsp freshly ground black pepper.
- Nestle uncooked chorizo into sauce, then add ½ cup chicken stock.
- Meanwhile, make breadcrumbs. Combine 3 cups fresh bread crumbs with 6 Tbsp melted unsalted butter, ½ tsp kosher salt, and lemon zest, then toss to evenly coat. Sprinkle half the breadcrumb mixture evenly on top of chorizo and sauce, then bake for 1 hour. Sprinkle on remaining breadcrumbs directly on top of cassoulet, then bake an additional hour. Sprinkle with parsley, then serve immediately.

Steps:
- Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
- Add 1 finely chopped onion and cook gently for 5 minutes.
- Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
- Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
- Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
- Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
- Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
- Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
- Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

- Place beans in a large pot and cover with water by 3 inches. Bring to a boil; boil for 2 minutes. Remove from heat, cover, and let stand for 1 hour.
- Drain beans. Add fresh water to cover by 3 inches. Bring to a boil; reduce heat to medium and simmer, uncovered, until beans are just tender but not mushy, 1 1/2–2 hours (time will vary depending on size and age of beans). Drain, reserving 1 cup bean broth.
- Preheat oven to 450°. Heat 2 Tbsp. oil in a large heavy pot over medium heat. Add chorizo and cook, turning occasionally, until golden all over, 7–8 minutes. Transfer chorizo to a plate and set aside.
- Place 2 Tbsp. oil, leek, and onion in same pot. Season with salt and pepper; cook, stirring occasionally, until vegetables are softened and light golden, about 5 minutes. Add garlic and anchovies; stir 1 minute to break down anchovies. Add tomato paste and paprika; stir constantly until paste is caramelized, about 2 minutes. Add reserved 1 cup bean broth, beans, chicken broth, and next 4 ingredients; bring to a boil.
